I love cheese and I enjoy reading about food and I never thought reading about them could be so boring. The book is exhaustively researched but that is part of the problem. The authors want to include everything and often jump back and forth. Instead of writing about the joy of cheese they often get bogged down in the chemistry and often repeat themselves. This is not a quick read and it will not appeal to the casual reader.
