I am not Vegan but want to introduce a bit more meat free options into our diet. This was an interesting recipe book as I have never thought of pressure cooking before. The recipes are a bit of a mixed bag but please keep in mind I am a meat eater so not really aimed to please my palate.

I've had an Instant Pot for a while now, but I don't use it as much as I should. So this book was ideal to get me started.

I'm not vegan but I wanted to cook more vegan food for health and animal welfare reasons, so this book seemed to offer me a good introduction.

There is a great table of how long to cook all your different beans and grains - in the past I've tended to guess, and ended up with either mush or not-quite-cooked. I've tried some of the recipes using the table as a guide, and every time it's turned out just right.

There are 6 sections in the book:
Beans and Grains
Soups and Stews
One-Pot Meals
Meal helpers and Veggie Sides
Sauces and Dips
Sweet Treats

I would never think to make the last two of those in the Instant Pot, so that was a revelation!

I've already cooked several recipes and have all turned out well. I have booked quite a few more to try in the near future.

If you have a pressure cooker or Instant Pot that you would like to use more to create healthy food in a short length of time, this is a book you should consider.

I originally requested this cookbook to review through Net Galley, but they archive their books pretty quickly and with my busy life and all the books I read, I didn't get a chance to read it before it was deleted. I ended up ordering it through the library since I regularly cook in my Instant Pot and stovetop pressure cookers and cook vegetarian and I was still intrigued by it.

I like this cookbook much better than "Vegan Under Pressure," which I bought after reading a lot of rave reviews and ending up hating. This cookbook is much more simple and relatable in the recipes. As a comparison, VUP has a black bean soup that includes peanut butter, cacao nibs and raisins. This one has a black bean soup that's basically black beans, broth, salsa, carrots, seasoning and celery. My own recipe for black bean soup is even simpler (black beans, chopped tomatoes and onion, garlic, salt, pepper, water and an obscene amount of cumin, blended with an immersion blender and served with crumbled tortilla chips and guacamole on top). Fields' recipe is far more similar to mine than the peanut butter, chocolate, raisin one.

Like that cookbook, this one includes a fair amount of gluten. There's seitan, bulgar, pasta and various gluten grains. Oats also feature heavily, and even GF oats are not safe for a lot of GF people. It also calls for some processed ingredients like TVP, which we avoid.

Most of the recipes are simple and seem like they'd please a variety of folks. It calls for pretty normal ingredients, though many of the beans are pretty rare. You can easily substitute, though.

Some of the recipes won't work in some pressure cookers, or will need to be adjusted. There are some yogurt recipes for folks whose instant pot has a yogurt setting, but mine does not. Likewise, there are recipes that call for low pressure setting, which mine doesn't have (you can do it with the stovetop models though).

There is a chart for cooking times in the beginning but it didn't have many of the things I usually pressure cook, such as spaghetti squash, artichokes and sorghum. Later in the book, there's a recipe for artichokes but I disagree with the time on it. She calls for around 8 minutes and I generally have to pressure cook mine for 10-12 minutes (instant release), depending on the size. Otherwise the leaves towards the inside are not tender enough and the heart is still rather hard. I also was not eager to try her dipping sauce (I think it was vegan margarine, horseradish and lemon, or something like that).

There are color photos for about a third of the recipes, but I would have liked to have one for each recipe. There is no nutritional information provided. Most of the recipes seem very healthy and look like they might lean towards rather bland. Very little salt is added and often few seasonings, but there are good ingredients that add extra flavor like onions that are sauteed at the start that will impart deeper flavors.

I'm not sure if I'll try any of the recipes before returning it, but there were a few that intrigued me. If I were going to buy a vegan/vegetarian pressure cooking cookbook, I would definitely pick this one over the others I've seen.

I'm obsessed with my Instant Pot, so I'm always looking for new recipes to try. I attend several monthly potlucks, and I can't wait to test out some of these recipes on the attendees!

I have been on a binge in requesting to read the ARCs of cookbooks, hoping they might trigger some form of interesting cooking spree. I may have bitten off more than I can chew ( see what I did there?) but I persevere. 

This is one of the books I wanted to check out because of its intriguing use of something as simple as pressure cooking ( as a side note, most Indian households are very familiar with the use of a pressure cooker and probably need it in their kitchen even if used infrequently!). This book consists of basic instructions for those unfamiliar with the concept, so it would be a good addition to your shelf if you have not tried it out despite being curious. It provides the standard recipes which are not flamboyant and would be something that people could maintain the habit of preparing on a daily basis. I was not wowed by any of them, but they did get me thinking. I might just try a little something different the next time I cook.
I am not really a Vegan but since most vegetarian cookbooks do not come with too many recipes I can use, I tend to try out more of the Vegan cookbooks. So far, they continue to give me interesting ideas that I am yet to implement!

This is a great title that catered to both those interested in a vegan diet and using a pressure cooker. Recommended for any public library.

Great recipes included in this book. Especially for someone who is a pretty picky eater. I found plenty of recipes I can't wait to try.

I think this is an excellent book for someone who is vegan or wanting to explore veganism. I am not vegan, but I love my Instant Pot and was hoping for some good veggie heavy recipes. What I found were carb heavy recipes, which makes sense because vegans need to get their protein from grains. I think there were some excellent recipes in the book, just not many that would work for my grain free lifestyle. There were a few though that I will definitely be giving a try. I definitely recommend this book to anyone who follows a vegan or vegetarian lifestyle or who just want more varied recipes for their Instant Pot.

While I'm not a vegan, I am new to pressure cooking and am on the lookout for more ideas and do cook plant-based meals often. This book immediately won me over with the inclusion of high altitude adjustments (I live at 7200 feet) and cook time charts for vegetables, beans, and grains. I can easily look this stuff up online, but it's nice to be able to see at a glance the differences between various kinds of vegetables I might want to combine in a dish when experimenting. Several of the recipes in the book look like dishes I'd actually cook, but there isn't anything that surprised or excited me--most of the combinations were pretty typical. However, I have already tried two recipes that came out wonderfully: Cinnamon-Curried Chickpeas and Garam Masala Lentil Soup, and I anticipate this becoming a go-to when I need to put together a meal that relies on the kinds of things I usually have on hand.

Thank you Netgalley for the electronic copy of the the Vegan Pressure Cooking, Revised and Expanded book. I have been vegan for upwards of 5months now so I was extremely excited to receive a copy of this new vegan cook book. I loved everything about this book, from the dietary advice to the tips on soaking beans and making soups. The pictures in this book are beautifully done, the illustrations are vibrant and an excellent addition to the recipes. I highly recommend this book and all the recipes I have tried were delicious, this book will definitely be referred to again and again by me.

There's only so much you can do with vegan food but this book elevates vegan to a whole other level. Recipes are mostly budget friendly, easy, and hearty. The variety of recipes is a huge plus too. Definite must-have addition to a cookbook collection.

I've been looking for a good vegan book , dare I say this is one of the best ones out there. I can't wait to try some of these recipes and give it a try to my pressure cooker .

I've been looking for a good vegan instant pot book, and I would say that this is the best one out there. This book covers the basics, but also has some interesting dishes that I've never seen before. Especially useful is the beginning chapters which cover the basics of how the instant pot works, and the tables featuring common instant pot staples and their cooking times. This book is something I plan on referencing again and again, and I can't wait to try some of these recipes out. The pictures and graphic design are gorgeous as well.

Well I’ve had my pressure cooker for about 20 years, no idea when I last used it, but I was only to steam vegetables, not once did I make a complete dish. What a waste, it holds so much potential. Saving time and dirty dishes. So easy. The recipes that I tried were tasty and quick and easy to prepare and cook. I’m not vegan, but I have been a vegetarian for 25 years, my family eat meat, but are all happy to eat vegetarian or vegan on occasion. All the instructions were clear and concise, including those for the use of a pressure cooker (I have no idea where my instructions are so having pressure cooker information as well as recipes was a real bonus). I can’t wait to experiment with more recipes. My favourite so far are the one pot recipes. I received a digital copy of this book from the publisher via NetGalley. This is my honest review.

My daughter is a vegan. I’m a ’sometimes’ vegan but I have to admit, despite having had a pressure cooker for over 30 years, I have only ever really used it for soups or for boiling plain beans. For whatever reason, I never considered flavouring up the beans to create a whole dish in the pressure cooker. This book is inspiring me to do just that.

From the very first page, the stunning and vivid photos capture your attention. They make you want to get cooking. This book encourages you to cook healthy vegan dishes simply and quickly using staples that most vegans would have in their fridge and/or larder cupboard. There is something for everyone in this book, recipes for mains, sides, breakfasts, desserts and plenty more. My pressure cooker is finally about to get the attention it deserves.

This book would make a fantastic gift for someone who cooks on a daily basis or at least a couple of times a week, very nutritious and healthy recipes, the charts are useful even for the absolute dummy in the kitchen.
Really good introduction, delicious looking recipes, I'd highly recommend this book to people who're trying to eat healthily but trying to avoid the fuss of too much prep & time investment for a single meal.
