This keto recipe book is outstanding! It's incredible clear, it covers all the nooks and crannies of keto, and best of all - it taught me how to really extend my use of my instant pot! I'll use it exclusively for pressure cooking meat no more. Now I can invite german pancakes into my life. I'm seriously impressed by this recipe book. It'll be a great gift for my friends over the holidays.

Clear cut and easy to follow recipes for beginner Keto and Instant pot users. Nutritional information is an added bonus. I love how the author breaks down what Keto is, how your body works when in the state of ketosis, and what you can eat.

Tons of great recipes for your pressure cooker! Lots of ethnic and interesting takes on different foods. Photos are very appealing.

I haven't tried any of the recipes yet, but my daughter tried one - Hearty Bacon Cheeseburger Soup - and they said the recipe worked well and they liked it. Unfortunately the protected pdf's can only be downloaded on my pc at work so it's hard to use the recipes since I can't print, copy/paste, etc. Looks like a lot if great recipes and even though we have't committed to go keto yet, I'll try some before the archive.

This cookbook not only contains delicious recipes, but it's all keto! The book explains how the keto diet works, gives tips and suggestions, and tons of wonderful recipes, all of which you can make in your pressure cooker or Instant Pot. I highly recommend this book for anyone wanting to try keto or make better use of your Instant Pot.

This book is simply amazing! This is one that I previewed and then when it came out I went and bought for my own collection of cookbooks. As someone who follows Paleo and Keto, depending on what is going on, I loved this so much. I got my Instant Pot the Christmas it came out, and I love using it every opportunity I get. This is a great collection of recipes that are easy to follow and ready in hardly anytime, but taste like they took all day. I will be recommending this cookbook to all my friends and fellow Keto followers.

I have an extensive collection of Keto cookbooks so it is a rarity to come across one that has fresh new recipes that make me excited enough to think I need yet another one. Keto in an Instant is a rare exception. I was giddy to see a recipe for pot roast that I actually want to eat (mushrooms and celery in place of potatoes and carrots sounds just fine to me!), as I have really been missing a good roast. The entire breakfast section sounded fantastically delicious, as did the desserts. I pretty much want to cook every recipe in this book. I love that it is all Instant Pot recipes because electric pressure cooking makes life way easier. I would recommend this book to anyone who follows a ketogenic or low carb lifestyle or who just want a book full of healthy, easy, tasty recipes to make.

I should preface this by saying that I am not and never will be a keto follower. I've known about the ketogenic diet for years but as a diet for the treatment of severe epilepsy in children, as the Mayo Clinic designed the diet nearly a hundred years ago. It was never designed as a weight loss plan, and I have serious misgivings about its long-term effectiveness and its safety as a permanent way of eating. Even the Mayo doctors advised it as a short term (2 to 3 years) diet for children who were severely disabled by their epilepsy and in those cases there were specially trained nurses who helped plan the diets so the children would get adequate nutrition. It is a wonderful diet for those children, and much safer for most of them then the current anti-seizure medications that often have horrible side effects. Most children who used it were able to eventually return to a normal diet and remain seizure free, which is really remarkable. Most doctors have prescribed anti-seizure medications for children with severe seizure disorders instead of the diet because they say it's too much work for parents to have to adhere to, which I think is really a shame. I have many friends who are currently happily doing the Keto diet for weight loss, though, and I am very familiar with the diet.

All that said...

The good:

This is a great cookbook for people who embrace both the keto lifestyle and Instant Pots. There are gorgeous photographs of some of the dishes, there's good information for each recipe like calorie count, carb count and time to prepare (I found that to be rather misleading at times, though, since IPs take time to come up to pressure and nobody completely preps a recipe in 2 minutes). Many of the recipes looked very tasty, and it was nice to see some vegetables used since a lot of keto and paleo cookbooks act as if vegetables don't even exist and the world is full of nothing but bacon, avocados, cheese and heavy cream (don't worry, this cookbook still features plenty of those).

The bad:

I really wish there had been a photo for every recipe, or at least for more of them. The photos were really well done but I'm like a lot of cooks in that I really like to see what a recipe is going to look like to sell me on it. I'd say there are photos for about 20% of the recipes. It also seemed as if a lot of the recipes were better suited NOT to be cooked in an IP. Many of them required dishes that you'd insert into the pot on a rack and covered with foil, and I don't have a lot of the specialty sizes and types of pans required for those (do they even make silicone cupcake pans that fit in an IP?). Many of the recipes seemed quite fiddly -- use the IP to steam this and then wipe it out and do this and then fit this kind of pan and do this, and then take it all out and slice it and put it under the broiler....

Since this is low carb, that also means that anything sweet relies on weird sweeteners that I can't even begin to pronounce, much less spell. I appreciate that it's not along the lines of saccharine, but it's still heavily processed, weird stuff.

I have not tried any of the recipes. Some appealed to me since we're a gluten free family, but they all seemed like too much trouble and too many calories. In order to lose weight on a keto diet it has to be 100% of what you eat (if you'll even succeed then) because the whole idea is that you can't have any carbs or your body will not enter ketosis. So a lot of these recipes are very high in calories assuming you're following that commitment. Since I'm not, I just don't want to make a soup that clocks in at 400 calories for 3/4 of a cup of it even if it sounds tasty. I started to make the cauliflower cheese "bread" but then saw that it has to be cooked for 2 1/2 hours on slow cooker and then transferred to the oven on broil. My broiler is broken so that one is out too. That's another case of a recipe that seems better suited not to be cooked in the IP at all, for what it's worth.

The book gives good information about the basic premise of the keto diet and what's allowed and not. There are recipes for breakfast, lunch & dinner, appetizers and desserts. The desserts looked gorgeous, although I don't know how good things made with those sweeteners taste.

If you follow the Keto diet and you're one of those people who loves using your Instant Pot, this is likely to make you very happy. If you don't fit both of those niches, it's not likely to be a good fit.

I got an instant pot for Christmas and I can't wait to try out some of these recipes. The Spicy Chicken Soup recipe is calling my name! The only thing that I was not a fan of was recipes where you just used the saute setting. I wouldn't pull out my instant pot to saute bacon or ground beef. Doesn't mean the recipe is bad...it's just kind of silly to classify as an "instant pot" recipe" But overall a good selection of healthy low carb recipes!

This book was so easy to follow! I loved all of the colored graphs, diagrams, helpful tips (including one for each recipe)! There was even a helpful picture of describing the control panel of the instant pot and even other items that you can use in it to make certain recipes. I'm eager to try these recipes out.

I love the recipes in this book and they're so quick and easy. I give this book five stars, I love that it is dedicated to Keto recipes.

Easy to follow recipes that actually turn out as good as they look. I found myself utilizing this book more than once when planning menus for the week.

Excellent assortment of recipes to make in my Instant Pot. My husband and I have been eating keto for a few months and it’s nice to have such a variety of recipes to try.

I was so pumped when I got selected for this cookbook. I am just starting out trying to eat a more low carb life and have a pressure cooker. To be selected for this and have so many easier recipes was amazing. Almost all of the recipes appealed to me. The instructions were very easy to follow. There were no super complicated ingredients or instructions to follow. It also came with a very small introduction on Keto. From Bacon Cheddar Stuffed Meatloaf to Crustless Keylime Cheesecake there is something in this for everyone. The Pumpkin Spice Latte is also perfect for a cold winter night when you need that caffeine fix.

I am always drawn to instant pot cookbooks. I value fresh, nutritious meals, however favor quick and easy. This book is great for anyone looking for keto or lower carb recipes that taste delicious and include simple, easy instructions and ingredients. I loved the variety of recipes included, especially the breakfast and dessert recipes. Of note, there is not a corresponding photo for all recipes.

The keto diet haws become popular & so many of those recipes work for just about anyone. The Instant Pot has changed cooking for so many. This list;e cookbook combines both trends with great-sounding recipes that will work for anyone.

The book opens with a short introduction covering the veto diet in simple, easy-to-follow guidelines (no formulas here). An second part of the introduction covers using the Instant Pot.

The remainder of the book is recipes, with a strong emphasis on main dishes and sides. Each recipe has summary information giving you cooking time, with prep time and cooking time broken out. There's other great information here as well.

The recipes have clear step-by-step instructions, including how to use the Instant Pot whenever it is used in the recipe. I liked that the steps were clear and that they make using this Pot accessible even to new users.

I loved so many of the recipes and look forward to making them.

I was excited to receive a copy of this book from netgalley in exchange for my review.
I LOVE my electric pressure cooker. I had it for several years without touching it because I didn’t know how to use it, and I wasn’t convinced the recipes would be any better than the ones where I spent all day cooking them. I recently began using it more and have also been searching for more healthy ideas, and recipes that were more than just beans, soup, and roast.
This book includes both. It also includes an overview of the instant pot and a guide to the accessories that are needed for the recipes. I loved this because most IP cookbooks I’ve gotten include one or the other.
It also has a wonderful rundown on the ketogenic diet, a Keto friendly food list, and a section on ketosis, which is great for beginners who might not be familiar with more than a general idea of ketosis, like me.
But back to the real reason we’re here- the FOOD.
The breakfast section included both sweet and savory recipes and I’m ready to try them all. Muffins, various types of eggs, PUMPKIN SPICE LATTES. The main courses were pretty much all immediately written into my meal planner. A major bonus to this recipe book is that if the recipe calls for a sauce or spice rub, it doesn’t refer you to a secondary location, it’s included in the recipe. I hate turning back and forth as I prep.
I loved the sides and appetizers. They’re all suitable for fancy potlucks and entertaining, as well as just a regular night at home. And the desserts? Even your non Keto friends are gonna need the recipe.
But my favorite things of all were the tips for every recipe that we’re extra advice to perfect the recipe for IP beginners, and suggestions for variations to change some of the recipes up. And more importantly, queso. The queso recipes are the first on the list for me to make.
