Even as a non-vegan the collection of recipes in this cookbook added a large variety of recipes that interested us. 101 recipes are labeled with nutritional values and with tags of "nut free", "soy free", etc. Easy to follow and unlike almost all vegan cookbooks I've encountered, a vast majority of the recipes are also budget friendly. As cost is one of the issues in our house in regards to eating healthier, this was critical to me.

So instant pots seem to be a guilty pleasure of mine and this was a very helpful guide. The book answers a bunch of questions you may have about your instapot , as well as functions and settings.
Then it goes on to share yummy recipes with a vegan appetite.
What did I like? The recipes were pretty standard vegan recipes and I’ve been curious about how to cook in the instapot. This was a pretty good guide and easy to follow recipes. If you are a vegan dish lover and just bought an instapot then this book would be a must have.
Would I buy this book? Yes, it’s an all inclusive guide to a vegan instapot cookbook.
Thoughts for the author? One thing I always hate about cookbooks is that they never offer enough pictures... my only downside on your cookbook.
A solid, well-rounded cookbook with uncomplicated and tasty recipes. Would definitely recommend to those interested in vegan cooking.
This book was filled with some amazing and easy looking recipes. 101 mouth watering recipes to be exact. I cannot wait to make all of them! The layout is wonderful and so easy to navigate and theres just so much of everything. This book will be a regular for me for sure!
I have been waiting for something like this to hit shelves. I find a lot of recipes for vegans to be laborious if you are craving something other than salad. This provides variety, yet remains simple and easy for weeknight meals.
This book is awesome. The recipes are healthy and so tasty, easy to make, and of course, the instant pot is a miracle. The book is a rare one with nearly all the recipes marked for me to try - and I will greatly enjoy doing so!

I have since experimented with several recipes and loved each one. As a vegan new to the Insta Pot I found this a excellent guide to both usage of the Insta Pot and recipes.
The author categorizes each type of possible cooking per chapter in a sensible easy to follow manner. If your a cook photos are not needed and I did not miss them. What I wanted I found here without distracting photographs. As a real cook and a vegan it was imperative to me that my Insta Pot meals be healthy and nutritious. I found all the recipes here met my criteria.
This is the definitive Insta Pot cookbook and one I will refer to time and time again.. Thank you for the opportunity to review this fabulous cookbook. I highly recommend this book for all who use a Insta Pot and all who are considering owning a Insta Pot.
I can never pass up a vegan cookbook without at least taking a peek! Musick begins the book with information about using and maintaining an Instant Pot and gives plenty of tips for successful cooking. Then on to the recipes. These recipes range from super simple to more complex and include recipes inspired by various cultures for a nice range of tastes. The recipes are arranged by the typical categories: breakfasts, appetizers/starters/sides, soups/stews/chilis, beans/legumes/grains, vegetable mains, treats/sweets/desserts and stocks/sauces/staples. I haven't had a chance to try the recipes since i don't get own an Instant Pot (or similar), but this cookbook does have me thinking again about possibly adding one to my kitchen. I find quite a few recipes of like to try out.

So, I still have not bought an Instant Pot®. I think I’ve been waiting for complete proof that one would be useful for me. I have a small kitchen (which is stupid considering that I love to cook) with not much counter/storage space so do I really need another gadget? Thanks to Barb Musick’s The Complete Vegan Instant Pot Cookbook, I may just be convinced.
I love that Musick offers lots hints and thoughts on using the Instant Pot® before ever presenting the recipes. If you’re new this gadget, the suggestions and warnings will be beyond helpful.
As for the recipes, most of them seem very tasty and I’m especially appreciative of the number of southwestern recipes since I’m a fan of chiles, beans, cilantro and, well, the whole cuisine. I was less fond of the ubiquitous sweet potato. As I mentioned in another cookbook review in the past year, I like sweet potatoes…infrequently. Unlike white potatoes, sweet potatoes are…well…sweet. The longer you cook them, the sweeter they become and in a savory dish, that’s just not what I’m looking for. Not that they don’t have their place in something like Caribbean pepper pot (that recipe is not in this book, btw) in which the heat of Scotch bonnets and the sweetness of the potato mesh.
The sections on the bean recipes and the rice recipes won me over. These are dishes that I can imagine cooking over and over and using an Instant Pot® for. These are the staples of the vegan/vegetarian diet and Musick has made them healthy and tasty.
There were recipes that I’m not certain an Instant Pot® is useful for, particularly salsa. I’m a purist with regards to salsa. Veggies should be cut, combined, and served with no cooking so that the salsa tastes fresh. Likewise, I wasn’t enamored with the mushroom gravy, which I do make from scratch and find that long sauteeing of the mushrooms creates the flavor without adding a bunch of other ingredients beyond flour or cornstarch and broth and maybe some tarragon.
Many of the breakfast recipes and other recipes incorporating tempeh, I want to sample and possibly add to my rotation. These sound delicious and considering the amount of protein would be welcome addition.
I also need to try the Cashew Sour Cream.
I highly recommend The Complete Vegan Instant Pot Cookbook if you are a vegan and have an Instant Pot®. If you’re on the fence as I have been, this cookbook might just convince you to get an Instant Pot®. I’d also recommend this for Instant Pot® owners who are looking to add more meatless meals to their rotation as well.

The Complete Vegan Instant Pot Cookbook is a new collection of 101 plant based vegan friendly recipes written for the Instant Pot pressure cooker. Released 30th April 2019 by Rockridge press, it's 190 pages and available in paperback and ebook formats. Author Barb Musick is a lifestyle blogger and writer with a very encouraging 'you can do it' style. She admits to not really learning to cook before she was in her 30s, so there's maybe still hope for me.
There are a lot of reasons to incorporate more plant based food in our diets; guarding our resources for future generations, living more simply, health and well-being, as well as philosophical reasons, not to mention taste. Using a pressure cooker can be a time-saving device but even better, it's generally a much less 'hands on' process. You can set the ingredients on the proper cooking program and walk away. I'm -not- a gifted cook and it really is that simple.
The included recipes are made with easily sourced ingredients and the instructions are crystal clear and easy to follow. The photography is not abundant; most of the recipes are not illustrated, but the photographs which are included are clear and well done.
The introductory chapters (10% of the page content) are devoted to an explanation of the instant pot and what it does. The recipes which follow are arranged thematically: breakfasts, appetizers (and side dishes), soups/stews, legumes and grains, main dishes, desserts, and kitchen staples (stocks, etc). Each recipe includes an intro with recipe special features such as nut-free, gluten-free, etc. There is an introduction with other info such as portion control and yields followed by highlighted sidebars with prep-time estimates, cooking settings, and other info. The recipes' ingredients lists are provided with English/American measurements. Metric/SI measurements are not included in the individual recipes (there's a conversion table in the appendices).
The links and recipe ingredients are slanted toward the North American reader, but can be sourced relatively easily in other areas of the world with an internet search. More difficult to source outside North America would be the actual Instant Pot itself.
The ebook version includes an interactive table of contents. There's also an interactive resource links list (slanted toward readers in North America). The chapter subheadings are also linked for easily paging back and forth to other areas of the book.
We tried out Gobi Masala (Cauliflower curry), Kimchi Pasta (Korean/Italian fusion), and Korean Barbecue Chickpea Tacos (more fusion food). They were all tasty, but possibly a bit adventuresome for my family. We do love Korean and Italian and Southwestern cooking, just possibly not together. The portions were also slightly smaller than my family are used to, I cook for 5 and 2 of them are skinny athletic adult males with hummingbird metabolisms who can pack away food like crazy. It's not an insurmountable problem, but some portions will have to be adapted or compensated for with an extra side dish or more salad.
Three and a half stars because I really felt the lack of sufficient photography very keenly, rounded up to 4 for the completeness of the instructions and cooking settings and the author's overall supportive and encouraging writing style.
Are you a huge Instant Pot fan and looking for new recipes? this new cookbook is filled with creative recipes that are great for vegans and non vegans alike. After a quick review of tips about how to make the Instant Pot work for you, the author outlines an array of Instant Breakfasts, Appetizers, Soups, and Bean and Grain based recipes to tempt every eater. Especially useful is a little chart for each recipe that outlines Prep time, Cooking Settings, Release time making it easy to figure out when dinner will be on the table. For meatless Mondays and other days of the week when you want to whip up a quick and delicious meal, this book is a solid addition to help me use my favorite new kitchen tool.

Sometimes it is nice to change your original recipes and use vegan cooking instead. What I like in this book is a lot of information has been given. What I would like to improve is the fact that most of the recipes although they were good seemwed to me being repetitive. Simply substitute veggies for meat. Some of the recipes were easy to do some I would not even bother to do because they were too easy or too hard to bother. Overall good cook book for vegan and non vegan cook.
I haven't made anything from this book yet, but man am I excited to. 😍
I've read through the whole thing and page after page I was intrigued. Also loved the layouts and pictures with easy step by step guides.
Sometimes things get routine and boring and you feel like there's not a lot of options for you, but this book was new and refreshing. Loved!
