This book is filled with so many great recipes! I appreciate how well labeled the recipes are: Gluten Free, Freezer Friendly, One Pot, Dairy Free., etc. I have Celiac and many of the recipes are gluten free or have alternatives to make them gluten free. Very nicely done and I hope to try many of these recipes.
Carrie Forrest, who founded the popular Clean Eating Kitchen, blog and website, has taken everyone’s new favorite appliance and adapted recipes to prepare in it. There are instructions for prepping ahead, as well as mouthwatering recipes that everyone will like. The difference between this cookbook and other Instant Pot cookbooks is that the recipes are healthy – something most of us will benefit from.
Not only does the Instant Pot save time, but Forrest’s prepping ahead methods save even more. Everyone can cook healthier and quicker with this excellent cookbook. Many families have members who have allergies and special needs as to their diet, and this cookbook covers many of those.
The recipes include a variety of dishes – there is something to appeal to almost everyone – including soups (Broccoli-Cheddar, Chicken Tortilla), great chicken dishes (Kung Pao Chicken, Chicken Piccata, Honey Sesame Chicken), and surprisingly, fish and seafood dishes (Lemon-Garlic
Shrimp Scampi, Coconut Fish Curry (Yum!), and some great meat dishes (Honey Mustard Pork Tenderloin, Korean Beef Bowl, Barbacoa Beef). The cookbook covers cooking grains in the Instant Pot, which is very helpful. Although there are dishes from almost everywhere, it seems to be heavy on Asian dishes, especially popular take-out Asian dishes. So far the dishes have turned out perfectly, and the queue is growing.
Unfortunately, there are very few photographs of the actual dishes, which is the only negative about this cookbook. The instructions are concise and easy to understand. One big plus is that Forrest gives dietary information (i.e., gluten free, dairy free) for each recipe, whether it is freezable (with freezing instructions), and advance prep.
Anyone who is required to or wants to cook and likes to make the dishes a little healthier will love this cookbook. Forrest knows her stuff, and this book should appeal to everyone who owns an Instant Pot.

I really liked this cookbook. I have several IP cookbooks and this is the one I go back to most often. This cookbook makes good food that does not have a bunch of gourmet or odd ingredients. It makes enough food that you can have several meals from one recipe. I usually use my IP for basic quick meals, this cookbook lets me change it up enough to keep meals more interesting.

This was pretty good. I'm not sure I will get around to actually trying any of the recipes, but it was interesting to learn I can make desserts in an Instant Pot. It would make a nice gift for someone who is into healthy meals.

I bought an instant pot and it sat for months on the floor of the dining room. I was a bit afraid of it to be honest. The kids are both off at college and I needed to switch gears and cook smaller healthier meals for just two.
This book has helped me do that. The recipes are appealing and things we eat. They have normal ingredients that we already have or can easily pick up at the market. Because the meals are ready so quickly it cut down on the urge to head out for a meal which was starting to becoming “a bad habit” (both financially and for health reasons).
There are nice step by step instructions for each recipe. There are a good variety of sides and mains. I would have loved pictures of the final results but that’s a minor nitpick. I have tried several recipes at this point and have been happy with the results so far!

A great cookbook that caters to various trends. Where can you go wrong with meal prepping and being assisted with an instant pot? I'd recommend to public library collections or those looking to change up your weekday meals options.
I have been struggling with the best way to meal prep for quite some time and I love and adore my Instant Pot and use it constantly, so this book was a great combination of the thing I wanted to learn more to do while using my favorite tool to do it. I was super happy to see that there were nutritional breakdowns, but the cookbook went even further and also indicated on each recipe if it met the needs of a specialized diet. Definitely helpful when planning for more than just myself.
I absolutely love my Instant Pot. It's one of the many appliances I own that I actually use. Although I don't do meal prep on a regular basis, I would like to do it more often to free up some time. So when I saw this cookbook, I was intrigued and excited to see what the author had to offer.
At first glance, I liked the cover design. Inside we have seven chapters with recipes.

I really enjoyed this cookbook and look forward to using it a lot! I do wish it had more pictures of the finished dishes, but in saying that, the variety and the simplicity of the recipes make up for the lack of pictures. A must buy for Instant Pot owners!
I love my instant pot and I can't wait to try some of these recipes. I'm glad that they included some of the cooking time conversions, sometimes I have no idea how long something needs to be cooked.
This book has recipes I would actually make. The whole family will like the different options. Beautiful pictures and easy to follow recipes. I also liked the section on how to make your basics in the Instant Pot. If you’re new to using the instant pot this cookbook will walk you through the functions step by step which is great for a beginner. Instant pots are a staple in kitchens and this book is a great companion.

I am in love with my Instant Pot, and I’m working on having a day set aside for meal prep to make my life easier, so this book couldn’t have come at a better time for me. There are SO many delicious, healthy, and easy recipes that I had to stop bookmarking pages, because I was marking almost every single recipe! There are options in this book for all lifestyles and diets, so this book would work for anyone. I was pleased by the number of vegetarian options and the use of simple ingredients that I have on hand. The recipes are even marked with labels to show you which ones are freezer friendly or one pot “dump” recipes. Thank you to Carrie Forrest for writing such a helpful cookbook with amazing recipes!
Great book with many interesting recipes that we will incorporate in our weekly dinner routine. Loved all the varieties of menus.
My instant pot and I have a very healthy relationship. It saves me time and money and I use it several times a week. This book has now given me some very good, healthy recipes to try. It won't be long until I'm using it every day. You can open the book to any page and find a great recipe that uses pantry staples, yet gives you an end result you can be proud of.
If you are new to the Instant Pot world you need this book! There is a variety of recipes all easy to make and easy on the waist line. They give detailed instructions on how to use the Instant Pot along with tips and tricks to make every easy.
Love this IP cookbook. Basics and staples and the cooking times chart do a much better job than the other IP cookbooks that I have. I have only made one recipe so far so can’t vouch for the accuracy of all the recipes but had no issues with the one I used. Highly recommend.
Easy to follow recipes that actually turn out as good as they look. I found myself utilizing this book more than once when planning menus for the week.
I liked a lot of these recopies. Good ideas even if I change them up a little. I would have liked a little more information on what exactly made these meals "Healthy"
