I've been eating vegetarian for awhile now, so when I saw this cookbook I knew I needed to check it out. This is definitely worth having, especially if you want to use your instant pot alot more like I do.
Many of these recipes are oil, gluten, soy, and nut free as well... perfect for those with food sensitivities. So, if you are looking for delicious plant-based recipes that the entire family will love, then try this one out... you won't be disappointed!
I was a little skeptical about this cookbook, as I use my Instant Pot for oatmeal, hard boiled eggs, and meat more than any other items. And maybe beans. But this cookbook is a treasure trove of recipes that are plant-based and plant-forward, and yet still look delicious and like my family might be willing to try them. The soups are solid, but I was surprised at how many inventive uses for the Instant Pot focused on less expected foods. Recommended for vegans and those wanting to integrate more plants in their (instant-pot driven) diet!
A lot of these recipes I've adapted for the use with a regular pot, since I don't have have instant pot. This is another good source for more vegan food ideas even if you don't have the pot.
Going Vegan is not for me, but I found so many recipes that my husband liked. This cookbook is a great resource to have in your arsenal if you want to go on a cut, or you want to incorporate a mix of foods into your diet.
"Vegan in an Instant" turned out to be the cookbook I didn't know I wanted let alone needed! Nowadays Instant Pot everything is the way to go and honestly these recipes were terrific and fun to do. These recipes were easy to follow and absolutely delicious. This book is totally worth the price.
Up Your Instant Pot Game—Vegan Style
If you have an Instant Pot because you like to dump, set, and forget to get a meal on the table quickly, this book doesn't have a lot of those types of recipes. It's mostly full of more complex recipes which may also require the use of your oven or stovetop as well as pre-cooking time (like soak time for cashews). Some recipes also have you use your Instant Pot for multiple stages, requiring cleaning of the inner pot in between. If you don't mind that kind of fussy recipe, this book is full of inventive and tasty-sounding dishes. Sometimes the ingredient lists are a bit long, and you have to have quite a spice cabinet to pull all of them off. Not every recipe has a picture, but many of them do. Some recipes do use ingredients that may require you to go to your health food store if your grocery store isn't well-stocked. Many recipes in the cookbook have international flavors. Countries represented include India, Cuba, Mexico, and Italy. This is an official cookbook by Instant Pot, so there is a nice introductory section that gives you more information about how to get the most out of your appliance. If you are a vegan with an Instant Pot who likes complex (and international) recipes, you might enjoy this book.
I just got an Instant Pot and have been scared to use it! This book was incredibly helpful and I learned a lot of fun and easy Vegan recipes that are DELICIOUS! As I am stuck at home at the moment, I have been having so much fun experimenting in the kitchen.
I very recently switched to a whole food plant based diet and have been looking for all the vegan cookbooks I can find. I was very excited to see Vegan in an Instant and find out what delicious meals I can cook in my Instant Pot. This book did not disappoint! I have tried a handful of recipes out of this book so far and have quite a long list of what I want to make from it. Each recipe has been quite good and fairly simple to make. You will have to try the easy refried beans recipe that is quickly becoming a staple in my house. I have not tried any of the desserts yet, but I am definitely excited too, they sound delicious and is something I had never thought about trying to make in an instant pot! This book will push you out of your cooking comfort zone, but in a guiding way that makes you excited for the next recipe.
I love the ease of the Instant Pot, but it can be intimidating and this cookbook helps a ton. It not only gives many great recipes, it starts out with basics of the Instant Pot and then a ton of great tips and techniques. There is even a section on what useful accessories you should look at getting. My Instant Pot is a whole new device to me now and I have used it in many ways I hadn't thought of or hadn't figured out how to. I highly recommend adding this cookbook to your collection, it does not disappoint.
A great vegan cookbook to add to our collections. As a vegan I appreciate every vegan cookbook and this is one I learned a lot from . I enjoy the pleasing layout and sensible receipes that are easy to follow. This is a great addition to your kitchen. What I love is the anti inflammatory receipes and the receipes for the instant pot which I use quite often in my kitchen..
I highly recommend this cookbook.

This collection of recipes was very helpful to me – it not only explains the purpose of the instant pot well, but gives you numerous of occasions and how to’s so you can maximize your purchase. I go vegan for about 2 months every spring and autumn for lent and these recipes have been a lifesaver this past few weeks: full of fast, pool proof delicious and different meals. Honestly, highly recommend!
Let me start out by saying, I do not own an Instant Pot nor have I ever used one. I have been thinking about getting one, and this cookbook made me realize that I think I need one in my life. The author shows the reader just how easy putting together a meal can be! I really wish there were pictures for each individual recipe; I’m a very visual person when it comes to cookbooks, so if a recipe doesn’t have an accompanying picture I most likely will skip over it. I especially like that the prep and cook times are clearly labeled, along with dietary restrictions, it helps to know what I’m getting myself into. Overall, I believe this is a great cookbook for entry to mid-level cooks/Instant Pot users.

I have owned my InstantPot for about three years now and use it almost every day. I love discovering new recipes and was happy to see an all-vegan book! The breakfast section is filled with many delicious recipes including Tofu Scramble Breakfast Burritos, Vanilla Yogurt Jars, and Bananas Foster Millet Bowl. I also enjoyed the staples section in the back of the book which provides recipes for vegetable broth, almond ricotta, BBQ sauce, cashew cream and more. This book only has 103 recipes which isn't much compared to most cookbooks, and not all of them have a photo which is disappointing. Overall a great cookbook for Instant Pot beginners though and the author did a great job including GF, SF, and OF recipes.

Finally, an instant book for vegans. Loved the recipes. Each step is very clear. Buying this for my vegan friends.
I really like this cookbook. It's hard to find vegan recipes for the instant pot so it's very awesome to have an entire cookbook where I know every recipe is vegan. The layout is well-organized. The recipes seem great. I don't see a bunch of weird, hard to find ingredients. My only complaint is that I would like to see a photo for each recipe. I want to know how something is supposed to look before I cook it!
I love how each Instant Pot cookbook shows the way of using it. This book takes cooking vegan to another level with great recipes! I enjoyed cooking two recipes up... well realized I needed the book, so I picked it up at my local bookstore
This book is great for anyone looking for easy vegan instant pot recipes. There are labels on the recipes to easily see which ones are oil, nut, soy, and/or gluten free. You can also easily see the prep and cook times so if you are in a hurry you can quickly glance at what you can make. Although there are quite a few photos, I prefer cookbooks with photos for every recipe. Photos are what makes me want to try the recipe so without it there were quite a few that I skipped over without even seeing what they were. Overall, it's a great book with some great recipes that are fast and easy.

Making vegan cooking quicker and including nutrition facts for each recipe (thank you!), this book is easy to navigate and offers up a good variety of vegan options.
Always here for a new vegan cookbook (and especially ones with simple recipes)! I'm suddenly inspired to go out and buy an instant pot...
A really useful recipe book for an easy transition to veganism. There were some unique recipes and the ones I tried were delicious.

I have been on a 21-day fast with my church the last 2.5 weeks. The fast is inspired by the Book of Daniel in the Bible. Only plant-based food, no dairy, no processed food, no sugar, and no caffeine. Basically, a modified vegan diet (because of no sugar and caffeine). So, I have been looking for vegan recipes when I came across this gem of a book. Marina Delio included something for everyone: love Italian or Greek food ... she has a recipe, love queso and other delicious Mexican food ... she has a recipe, love Indian or Middle Eastern food ... she has a recipe, love sushi ... you guessed it, she has a recipe. What I love the most is that she includes recipes for every type of vegetable and grain. I have never tried jackfruit, but you know what? Those jackfruit tacos look delicious! I will give them a try.
