I cook 7 days a week for a family of 4 that includes 2 eighty year olds (my grandparents). My grandfather has a love for southern food that has taken a back seat due to his being diabetic as well as a slew of other food restrictions. Needless to say, I was very interested when I saw this book!

Quick aside - in today’s day and age a cook book might seem unnecessary with the internet and millions of recipes at your disposal. It is very necessary. A general diabetic friendly recipe search yields too many results to be quickly helpful and, to be honest, if you’re new to diabetic friendly cooking the results can feel dubious at best.

The Southern Comfort Diabetes Cookbook is written by Maya Feller MS, RD, CDN. Feller is a registered dietitian nutritionist. She briefly goes into carb counting, portion control, and the dish method. She also gives you a nicely detailed breakdown of diabetic friendly common ingredients, which is great even for those of us who aren’t new to being diabetic friendly.

On to the recipes themselves... each recipe includes some substitute suggestions and a nutrition breakdown for anyone tracking this information. Also noted are if they are vegan, gluten, nut, and/or soy free right at the beginning of each recipe which I thought would be invaluable for those who need that information.

Recipes range from breakfast to dinner, sides and mains and includes recipes for spice mixtures and sauces used instead of buying ready made which tend to be heavy on salt. What I really love is that while there are some specific-most-people-probably-won’t-have-it-on-hand ingredients, most recipes I could throw together easily with what I already have on hand. This is great! So often I find a great looking recipe that fits the various restrictions my grandparents have only to find out I need multiple specific uncommon ingredients that I won’t use often or fast enough to justify.

My main interest is the sides and there are some great ones here like Dirty Forbidden Rice, Baked Vegetable Macaroni Pie, Stewed Green Beans, and Chili Red Bean Succotash. But there are also gems like Gullah Rice which incorporates chicken and shrimp for a main dish (I’m allergic to shrimp and this is still great using only chicken!)

Overall, I think this Cookbook is wonderful especially if you have -or are- a southern food lover.

I haven't tried any recipes yet, but these look appetizing. I am always searching for healthy alternatives that don't required unusual ingredients and actually taste like the less-healthy version.

This cookbook is fantastic. My husband has really struggled with the transition to a diabetic diet. I'll be honest I've grabbed up anything even remotely in the realm if a diabetic recipe. He is never wowed until now. Finally recipes that deliver flavor and healthy ingredients. For me the salads are delicious I have made the Tomato, Peach and Strawberry salad multiple times and it is yummy. I love that this book recommends other recipes that complement the flavors. This makes pulling together a delicious meal a snap. I received this book from NetGalley for an honest review.

We love southern barbecue and this book delivers with delicious healthy recipes. The recipes are easy to follow which is great for someone like me. I have only tried a couple of the recipes and my family loved it. It was full of flavor but less calories. I can’t wait to try more of the recipes. This is my own honest opinion. Thank you NetGalley and Callisto Media.
