Thai book was super helpful to me while pregnant! I did not have gestational diabetes but understanding what would need to change if I did helped me to eat healthier and these recipes work even if you don’t have GD!
This cookbook is vey well thought out and the recipes are simple and delicious. I feel this book can easily be used even if you are not pregnant. To be honest I am a mother of four and I am not currently pregnant but I want to transition away from sugar and processed foods. I am using these recipes and modifying the carb/fiber intakes for my personal nutritional needs and its been a breeze. I love the foods to avoid section of the meal plan it is broken down in simple information tat is easy to work into my lifestyle.
What I find so impressive is this book tries to use fresh produce as much as possible and also recommends substitutes or alternative ingredients (if for instance you don’t like feta it recommends trying goat cheese). The Brussels Sprouts and Egg Scramble is delicious with the recommended swap outs of spinach and Chard. I also made it with the Brussels sprouts and even though I don’t typically like them it was a great companion for the eggs. I also loved the Chicken, Cantaloupe, Kale and Almond salad. I used spinach and it was wonderful. I love the ready substitute recommends and it really opens your eyes to the possibilities of customizing to your own tastes. The prep Tim’s are perfect for a busy mom and the meal plans easily help balance nutritional needs through the day and week.
I received this cookbook from NetGalley for an honest review. I would definitely recommend it and I have added to the cookbooks I love and will refer to on regular basis. I do wish it had more pictures I personally prefer that in a cookbook but it is not a deterrent as the recipes are well though out and explained. (I did give it a 4 because I feel others will also want more pictures) but this is an excellent nutritional guide.
