Chocolate. Need I really say more? There was no way I was going to pass up the chance to read this book, and I’m very happy I didn’t.
Even before getting into the amazing recipes, and there are many, author Maida Heatter schools readers in what to do before we bake --- the ingredients, equipment, and techniques, giving us a well thought out insight into making the best chocolate creations we can.
As for those creations, these recipes had me drooling while reading the book, and writing this review. Recipes like . . . Chocolate Intrigue, Old-Fashioned Fudge Cake, Queen Mother’s Cake, The Newest Cheesecake, Dolly’s Crisp Toffee Bars, Chocolate Almond Sp-Icebox Cake, Bittersweet Chocolate Biscotti, Chocolate Pecan Pie, Black Bottom Pie, Frozen Chocolate Mousse, Chocolate Raisin Clusters, Homemade Chocolate Syrup (And 19 Drinks and Variations) and a whole lot more!
My one disappointment with CHOCOLATE IS FOREVER, is that instead of photos of these amazing creations, there are illustrations. While they are fun and colorful, real photos would have made this book irresistible to all but those with chocolate allergies.
Any book with the word "Chocolate" in the title is a winner in my opinion. And a recipe book with chocolate is pure gold. You're bound to find something to make no matter what your skill level is.

Chocolate Is Forever is a collection of chocolate recipes by the late Maida Heatter. The recipes range from simple to quite complex. The first few chapters contain everything you need to know before you start baking. There is information on things such as different types of sugars and what they consist of, how to blanch, roast or toast nuts etc. The cookbook also has details about utensils and information about making sure the correct ones are used for a particular recipe in order to succeed. I enjoyed the little stories behind some of the cakes especially the Robert Redford cake. Thanks to NetGalley and the publisher for my digital copy.
Maida Heatter loves chocolate, and it shows. This book starts with info on chocolate, other ingredients, equipment, and techniques. The chocolate recipes are split into chapters on simple cakes, special occasion cakes, cookies and bars, pastries/pies/puddings/more, and candy/fudge/chocolate drinks. The recipes provide a wide range of incredible options for enjoying chocolate, and most have an illustration. I wish there were some photos in the book. Each recipe has a description and background to start, and some include variations or an additional recipe for an accompaniment. Even if you love chocolate, there are likely recipes in here that you have not discovered yet.

When I saw this chocolate specified book, I knew I needed to have it, being the chocolate fiend I am. So far, I’ve tried the brownie recipe and oh my, they were SO delicious! I can’t wait to make more! Thank you for the chance to view this!

I just spend an hour browsing this book -- unfortunately, since we are in the middle of the COVID-19 pandemic, I have no flour to test the recipes. Hopefully, that will change before my ARC expires.
As to be expected from a cookbook author of her caliber, Ms. Heatter begins the book with great general guidance and the recipes look delightful. I do hope I have a chance to try one or two shortly.
In this book, we see how many various types of chocolate cakes there are that can be created I particularly liked the orange chocolate loaf, marble cake and chocolate mint truffles and am definitely going to be giving them a try to make as the steps are easy to follow and the ingredients easy to get hold of.

This is truly the chocolate connoisseur's cookbook. It is filled with all the chocolate-based dessert recipes you'd ever want. But, it's also for the expert baker, as the recipes are complex and lengthy. Everything from scratch! I am reviewing pre-publication, so the illustrations are not included. I hope that there will be more than just a few colored line drawings. Photographs of these masterpieces will make this book a treasured cookbook.
Chock full of Chocolate Insanity, this is just the ticket (book) to answer all the chocolate indulgencies you have ever had! Once again, Maida Heatter's recipes are a legend, just as she is, and this book goes the extra mile to show you just what a marvelous baker and legend she is! The only downside is it ended all too soon! 5 easy, delicious stars!!
I used to make Maida Heatter's Blondies for an annual bake sale. My boss would come and buy up the whole plate! They have been a favorite recipe since I bought the Book of Great Cookies in the late 1970s.
Heatter passed away last year at age 102. I am relieved to know that baking desserts did not shorten her life. Because we are in the COVID-19 Lock Down in Michigan and I feel the urge to make cookies and eat chocolate like I haven't felt in years.

Who could pass up Positively-the-Absolute-Best-Chocolate-Chip-Cookies? They are my weakness! Turns out that polls show they are America's favorite cookie to make at home. Heatter tweaks the traditional Toll House recipe.
Black-Bottom Pie was a favorite of Pulitzer-Prize winning Marjorie Kinnan Rawlings (The Yearling, Cross Creek). Heater agrees and shares a 'glorious' recipe.
I love Heatter's Homemade Chocolate Syrup with 19 drinks and variations! I imagine having it on hand for Chocolate Banana Milkshakes in summer and Hot Mocha in winter.
I am going to get into the kitchen tomorrow and try the country fair prize-winning Buena Vista Loaf Cake, a "plain and wonderful chocolate loaf loaded with fruit, nuts and chocolate chips--almost a fruit cake but not as sweet." With a crunchy crust, I think it will be great with my afternoon cup of tea.

If you love chocolate and want to make homemade versions of your favourite treats, this is the book for you. It's incredible comprehensive, covering cakes, cookies, candy, and all kinds of variants in-between - including chocolate bread! The first few chapters set you up for success: talking about types of chocolate and other ingredients and how to work with them, the type of equipment you'll need, and the various techniques required.
While the majority of these recipes are geared towards serious bakers, there are some very simple recipes for every the beginning baker. One of the interesting things about these recipes is how many of them feature using a bit of instant coffee in the recipe, something I found very surprising. That is usually the most exotic ingredient, making it easy to make with what you have on hand.. The instructions are straightforward and very precise, pointing out potential pitfalls to make sure that every batch you make is a successful one. This cookbook contains everything you'll ever need to work with chocolate and is worthy to sit on your shelf..

No matter how I tried to read this book, it didn't come through well in the apps I used. I've given up and decided that what I could see of it looked very worthwhile, and have gone ahead and just ordered a print copy.
It's an excellent cookbook and it made me crave to taste most of the recipes.
It liked how clear the recipes are and their story.

I love chocolate, so the book title convinced me to give it a try. There are a lot of recipes that look very good. I have to try some. I like the part at the beginning about ingredients and equipment.
I like short descriptions and notes at the beginning of each recipe. I love that the recipes contain simple ingredients. Next to each chocolate dessert, there is an illustration, but I would prefer photographs.
My first baking teacher as a child was Betty Crocker. My second, as an adult, was Maida Heatter. The above admonition is one I ignored often and it is only through years of experience, success and failure that I have learned that there are some cookbook authors on whom you should not riff. Maida Heatter is one of those. She really did test her recipes over and over again before publishing them. That doesn’t mean that I didn’t substitute dried cherries for raisins in the loaf of chocolate bread. It does mean that I followed the processes she describes to the letter. If you are looking for foolproof books to guide you through baking, you could do a lot worse than Maida Heatter and not much better.
Chocolate is Forever, and Cookies are Magic are being released this Spring, I assume in honor of Maida Heatter’s death at age 102 last year. The new forwards by David Lebovitz and Deb Perelman were not available in the advance reader copy, so I don’t know what they say. The recipes collected are not trendy or fashionable. In many of the short anecdotes before the recipes, Heatter talks about picking up a local recipe as she was travelling. She was interested in the foods that gave a city or area it’s flavor, and that’s reflected in the recipes gathered in these cookbooks. The recipes are traditional, but not, in the modern parlance, basic. There are gluten free cakes and desserts in Chocolate is Forever, but that’s because flourless chocolate cakes are part of Heatter’s Jewish culinary heritage and not because of a concern about gluten.
I am a creative baker (which isn’t necessarily a good thing, but I persist), so having a basic recipe on which I can build is a wonderful thing.
In a book full of cakes, puddings, pies and brownies, I decided to make the chocolate bread. Of course, I made substitutions. The recipe called for raisins and walnuts. I dislike raisins, so I used dried cherries instead. My housemate can’t eat nuts, so I left them out. If you can eat nuts, do add them. The loaf came together easily and baked beautifully.
It makes a large loaf of bread, so be prepared. The aroma was amazing. The chocolateness of the bread became more apparent when toasted the next day. It makes beautiful toast and more importantly, it makes beautiful french toast. It would probably make an amazing french toast casserole. Insert eyebrow wiggle gif here.
I’ve baked from enough Maida Heatter recipes to know that they work. Feel confident when you buy this book that you will have some amazing bakes and learn some techniques that have gone out of fashion in home baking.
Maida Heatter's recipes are absolutely top notch! The best I have ever tried to bake. The instructions are clear and easy to understand and very well layed out.
I love the section of tips to read before you bake it includes a general list of ingredients, equipment needed, tips and technique for optimal results and is perfect for those new to baking or anyone just wanting to improve how their recipes turn out.
This book made me feel like I was in a cooking class with her by my side this is seriously a true gem for not only fans of Maida Heatter's cooking but anyone wanting to perfect cooking with chocolate.
I was pleasantly surprised the recipes included everything from basic chocolate cakes to candy, drinks, and so much more. I was almost overwhelmed at what to try first. Y'all this book could seriously make me fat (technically fatter lol) if I'm not careful because the recipes are just that delicious.
I have never owned one of her books so now I understand why she is revered as a master in her craft. I have truly been missing out by not trying her recipes sooner.
Literally my only complaint is the recipes are illustrated instead of actual photos. The illustrations are fantastic and give it a fun whimsical vibe. However, in a cookbook I want photos of the food. But the book is so amazing I won't lower my score but I do want to point it out so you know what to expect when you purchase this book. And believe me you should it's a delight!!!

This book had a lot of great recipes, and I really liked how it was laid out. The tips and tricks seem very helpful, and I enjoyed the little descriptions and stories at the beginning of each recipe. I would have liked some more pictures though.
well this was just delightful. i won't lie, i am no baker, but i like to pretend i could be, and i really enjoy looking at recipes for things i will likely never make. because... chocolate.
