This cookbook is well organized and well written. The Avocado Humus Dip is delicious and I enjoyed the Black Bean Avocado Burritos. My favorite part of the book is the Dairy-Free Milks and Cheeses section - LOTS of options.

Some of these require a bit of effort to compensate for the lack of dairy, but surprisingly less than I was anticipating. The 30 minute timeline isn't a joke either, from the ones that I tried they really were so simple. And lots of great ideas for shopping, planning, prepping, and health information. It's really helpful and the recipes were wide-ranging too.
