125+ Simple, Healthy Recipes for Living Well
by Sanaa Abourezk

This publisher gives cooks so many affordable recipe collections. They always include generous photos and information to set a cook up for success. This time the topic is Vegetarian, Mediterranean cuisine. Delicious healthy food is found in these pages.

When 125 recipes are included it is difficult to know which ones to highlight. Some that intrigued me are below:

Eggplant Caviar, Skordalia (because I love it), Filo Wrapped Brie with Orange Marmalade, Gazpacho Blanca, Spanakopita, Fried Rice Balls with Tomato Sauce, Flatbread with Harissa and Sesame, and Milk and Orange Pudding.

Take a look at this book and have some wonderful meals. You won’t go wrong.

Many thanks to NetGalley and Callisto for this book. All opinions are my own.

This cookbook is absolutely amazing and I highly recommend it. The recipes are nit only delicious sone are unique which fir me hands down is always a win. My only complaint is I love pictures in a cookbook and it could use more but otherwise this is awesome. If you are either a vegetarian or just looking to reduce how much meat you eat. This is a great find. The Mediterranean flavors are to die for. Definitely highly recommend it.

The recipes sound delicious and healthy. They are easy to read and simple to prepare. Many of the ingredients I keep on hand. I wish there were more pictures. I like to see what a recipe looks like.

I am behind on my reviews, so I can tell you now what I could not have told you last year: The recipes in this book are absolutely delicious! The walnut-potato dumplings with the spicy pomegranate sauce were a revelation. I was also surprised at how yummy the moussaka was, I had never eaten a meatless one before. I could keep on raving especially about every single lentil dish, but do yourself a favor and check this one out for yourself.

This is not a beautiful book, since there is only one small photo per chapter, but I think it would be a very useful book for anyone looking for flavorful vegetarian recipes. I want to try every one of the soup recipes, plus a lot of the others. The author believes that most ingredients can be found in supermarkets (she lives and has a restaurant in South Dakota), but she also gives some alternatives.

The author was born in Syria but the recipes “originate from or are influenced by the countries surrounding the Mediterranean Sea”. Each recipe lists the preparation and cooking times required and whether it fits into any special category such as vegan, nut free, freezes well and/or gluten free. General tips at the beginning of the book include: add texture, don’t overcook, purée and freeze herbs, infuse oils, roast vegetables, and season well.

Some of the recipes I found interesting include:

Snacks and small plates: hummus, marinated olives and vegetables, caramelized pearl onions, filo-wrapped brie with orange marmalade

Soups, salads and sandwiches: ribollita (vegetable soup with cubed bread), lentil soup, vegetable and chickpea soup, roasted red pepper soup, French onion soup, tabbouleh, fattoush, nicoise salad, lentil and feta salad, falafel sandwich, caprese sandwich

Meatless mains: stuffed potatoes, stuffed zucchini, pommes anna, spanakopita, bell pepper and onion tart, asparagus and Swiss quiche, zucchini, onion and parmesan frittata, French bean stew, eggplant and lentil tagine, roasted cauliflower tagine, eggplant parmesan

Rice, grains and beans: jeweled rice, asparagus risotto, vegetable paella, kushari (rice, beans and hot sauce), raisin and chickpea pilaf, lentil and mushroom lasagna

Pastas, pizzas and breads: three sauces lasagna, penne in tomato and caper sauce, rosemary focaccia, brioche,

Mediterranean staples: tahini sauce, harissa, garlic aioli, preserved lemons, tzatziki sauce, ghee, pita bread, falafel mix

Sweets and desserts: rice pudding, milk and orange pudding, baklava, orange and almond cake, clafoutis

I received a free copy of this book from the publisher.

Almost every recipe in this book was a winner and that almost never happens for me. I had to copy just about every one of them. I made the zucchini, onion and parmesan frittata today and it was perfect. These are a great mix of Italian and a more sort of North African influence (lots of harissa, which I'm always looking for more ways to use!) They're relatively simple and straightforward too. Recipes are interspersed with information about the most commonly used ingredients, like a page explaining variations in olive oil. Easily became a favorite cookbook!

Everything we’ve made so far from this has been tasty and we’ve found interesting ways to use some of the leftovers (for example, the leftover spinach ricotta dumplings made an awesome lasagna filler).

Almost no pictures.

Each recipe does have a per serving nutritional breakdown. The recipes are labeled for ease in terms of things like “vegan”, “nut free”, “freezer friendly”, etc. And each one has an added note, such as how to make parts ahead of time as easy meal prepping or how to easily convert an on-vegan recipe into a vegan recipe.

I have had several friends that have done the Mediterranean diet and have wondered about it but I have been vegetarian for several years now. I always thought of this diet as being about veggies and fish. You do not think of this type of food as being about non-meat protein, so it was nice to see that there was a vegetarian Mediterranean Cookbook. As I was going through this book I was amazed that there were so many meal options and I cannot wait to try them.

It's nice to see a Mediterranean cookbook written by someone who grew up in Syria. I feel like the recipes are more authentic than in other cookbooks, yet cover all areas of the Mediterranean.. I barely got a few pages into the appetizer section and had to go to Amazon to buy it!

Each recipe in this book has very simple instructions and a really nice introductory paragraph with interesting facts/history about the dish or its ingredients. Each is labeled at the top with helpful descriptives, such as: gluten free, nut free, vegan, 30 min or less, freezer friendly, etc. Nice little tips for preparation or substitution are included at the bottom of each page. And, the photographs are truly mouth-watering--I wish there were more!

The fact that this cookbook is entirely vegetarian is so impressive! It shows that you can cook really tasty, varied and healthy meals without using meat! Here are just a few examples of the recipes: Lentil and Mushroom Lasagna(Italy), Kushari (Egypt), No-Bake Spiced Fig Loaf (Spain), Shepherd's Salad (Turkey). This cookbook gets my highest recommendation!

So far I have liked all the recipes I have tried in this book. The directions are easy to follow. It would be helpful to have more photos of the finished meals.

There are a lot of vegetarian Mediterranean cookbooks on the market, but this one is as authentic as they come. The Syrian author shares the history of the recipes as the ingredients, and the recipes all sound delicious. I am not sure about the availability of all the ingredients, but I am sure you can improvise or find them on Amazon. A word of a caution, the za'atar recipes combines wild thyme, sumac, and sesame seeds. There is a an ornamental sumac tree that produces the sumac spice, and a poisonous sumac vine that causes severe allergic reactions (think poison ivy). So make sure you are using the correct type of sumac in your ingredients.

Really enjoyed this cookbook. It has good directions, easily obtained ingredients, and some history to enjoy about some of the ingredients. I learned about some new foods I have not used but will make this a cookbook I will pick up and use often. Loved the pictures!,

This book has sooo many recipes and the recipes are simple and easy to follow. The only con for this book is that there aren’t many photos of the food.

I received an advance review copy but had no obligation to post a review. All opinions are my own.
