This cookbook had some really great recipes. The recipes were easy to understand and not too complicated for the average cook. I enjoyed the illustrations and look forward to making these recipes for years to come.
Having owned an electric smoker for several years, I was excited to see Electric Smoking Cookbook for Beginners: 100 Essential Recipes to Master the Basics by expert Chef Jonathan Collins. Previously I have smoked briskets, ribs, and a few other things, but I really didn’t have any recipes for spectacular smoked dishes. Collins has a wonderful imagination, and includes in this cookbook dozens of recipes for use in the smoker that most of us wouldn’t think of making. The recipes are mouthwatering, and those I have tried so far have turned out to be picture perfect. Unfortunately, I have had to take my own photographs of the dishes, since this cookbook has only a few; it definitely needs more. However, the instructions are succinct and easy to follow. The early chapters in the book are very helpful and explain how to smoke almost everything in an electric smoker.
One of the things I was excited about was to make smoky beans in my electric smoker. Collins has included two recipes that I wanted to make, and unfortunately, both recipes call for “beans,” but don’t specify whether the beans are dried, cooked, or fresh. I just guessed, and used cooked beans, but the book needs to let readers (especially beginners) know what kind of beans to use.
There are so many fabulous recipes in this book that my cooking queue keeps getting longer; it’s doubtful that I’ll even finish by the end of summer. This cookbook is perfect not only for those who are just learning to use their smoker to advantage, but for anyone who loves smoked food and wants to expand their repertoire. You can’t go wrong with this cookbook.
Special thanks to NetGalley for supplying a review copy of this book.
I was disappointed in this cookbook. Based on the title, I had thought that it would cover not only outdoor electric smokers (it does) but also the smaller smokers designed for indoor use. No luck, this book only is for larger outdoor smokers. The introductory chapters are useful.
Besides the specialized use of the cookbook, I was disappointed in the recipes. Many of them were done in the smoker just because you couldf, not because the recipes were anything original or exciting. Other recipes were far to chefy for me. Finally does some hot spice, such as jalapeno, need to be a part of so many recipes?
If you have an outdoor electriuc smoker, you might find this book useful. Otherwise don't bother.
Prior to trying the recipes in this book, my smoking was limited to fish...mostly salmon...and only one or two rubs/marinades. Now, my family is asking for a different recipe every day. I let them choose and have been very happy with the results so far. Easy to follow, using everyday pantry items, I've managed to produce some BBQ items that put the local restaurants to shame. If you are gifting or getting an electric smoker, you definitely need this book!
You will be impressed with how many different recipes you can make using your electric smoking! My husband loves his smoker and we'll definitely try some of these recipes soon. There are recipes for poultry, pork, beef, fish and seafood, veggies and sides, and some marinates and sauces recipes, Great book! I can't wait to try some of the recipes. Each recipe tell you what kind wood you should use, prep time, cook time, serving size, and there are some tips at the end of each recipe.
