Realistic meals that a working person can fix easily after a long day. Even though I'm not vegan, I wanted to try this to eat more plant based meals. Instructions were simple and easy to follow on the couple I tried and ingredients are not hard to find as they are usually staples or ones that are in a regular grocery store. I also really liked the different 'one pots' that can be used. Thank you to the publisher for the ARC for my honest review.
Nice recipes, easy to follow! I made a couple of these and will keep this around to make more! I think the physical book would be better for pictures, but the ebook worked okay
Always looking for simple vegan meals, this title caught my eye. The potential buyer should be aware some recipes do call for special equipment such as a slow cooker, electric pressure cooker or air fryer so if kitchen gadgets aren't your thing, some recipes may not be a good fit. The recipes are clearly noted as to which cooking vessel is needed thanks to an icon at the beginning of the recipe so it's easy to skip those that don't fit what you have available. Serving size, prep/cooking time and nutritional information is also included for each recipe. Ingredients used are easier to come by though a few might be a little tougher depending on where the cook lives. One pet peeve I always have though is a cookbook that doesn't include weights in the ingredient list. It's so much more accurate and simpler measuring by weight rather than volume. This wasn't a collection where I immediately want to make every recipe and I'm not sure I'd add it to my permanent collection, but I'd definitely check it out from the library to see if it grew on me.
I like one-pot meals. They are easy and are generally fix and forget. Well, sometimes you have to stir. I am also a vegetarian so I am always on the lookout for recipes that are easy, don't have a lot of steps, or use ingredients I will use only once and throw away in a couple of months. This book fits the bill. This cookbook had 125 easy recipes for breakfast, lunch, dinner, desserts plus extras. I only wish there had been more photographs so I could compare my results with the authors. Sadly I don't nail it often but I need a picture so I know when I do. I must say I have lived in the south all my life and have ñever put berries in my grits but it worked. What a nice change. I also tried the Moroccan Lentil and Rice Stew, the Tomato Bisque, and the African Peanut Stew. I am looking forward to trying the Mushroom and Rice stew and the Mango Sticky Rice this weekend. I grew up on rice and love it. I will probably wort my way through this cookbook finding new favorites I didn't know I had. I really enjoyed The One Pot Vegan Cookbook by Gunjan Dudani. I found the book to be well organized, easy to read and understand. Chapter 1 does a really good job of explaining exactly what a one pot meal is and some of the benefits of a plant based diet. The chapters are arranged by categories: breakfast, soups, comfort foods, etc. I found the recipes to be easy and not too ingredient heavy. I love the picture at the top of the recipe that tells what kind of one pot you will need. One of my favorites was the Chocolate Chip Cookie Granola. The only thing I would have liked to see is a few more pictures. Overall this is a cookbook that I will use a lot.

Thanks to much to the publisher for an ARC to read and give my honest opinion. I’m not Vegan but I often enjoy meatless Monday’s, and meatless dishes when I’m looking for something simple to eat or cook. This was a first of a kind cookbook for me. Not only for the ramen style dishes but the simplicity it adds to cooking.
What did I like? The first thing that really stood out for me is the cute way the book denotes which pot you will use. Various recipes call for a sheet pan, stockpot,Dutch oven, instapot, or a skillet. I really thought that was a cute idea and it really helped you plan the dish visually. A ton of the dishes seemed to have an Asian or Indian personality to it which in my opinion gives the book recipes with wide usage. I’m not a big fan of tofu or tabbouleh but there were a lot of dishes I would still be interested in.
What needed help? I can not preach this enough but cookbooks need pictures. One picture per group of recipes is hardly enough to really wet my appetite.
Would I buy or recommend? Other than the few pictures I could not find fault with this cookbook. I thought it had some adorable ideas I’d not seen in any other cookbook and the recipes looked like they were bursting with flavor. Less mess...less cleanup with the one pot version.
Thoughts for the author? Congratulations on your cookbook! Kudos to a great and one of a kind! I loved getting a sneak peek at your wonderful cookbook!
Vegan's can eat more than salads and this new release by Dudani celebrates a plant-based diet with easy to make one-pot recipes.
I am so impressed with this book. I've been trying for a while now to cook more plant based meals that are simple and filling. It's a struggle to find books with minimal, common ingredients AND with not so many pots and pans. I tried the Quinoa Vegetable Chowder last night (bonus that I got to use the pressure cooker) and it was incredible.
This book has everything I've been looking for. Simple/short list of ingredients, and options for batch cooking or meal prepping. I feel like this would be a great book for anyone who is interested in starting a vegan diet or wanting to eat more plant based meals.

I am not Vegan but I did find a few recipes that I just might make. One Pot Vegan is the perfect recipe book that is perfect for a vegan or someone that wants to eat healthier.

In the introduction section, you get an explanation of the benefits for a plant-based diet, what cooking methods to use which include an air fryer, slow cooker, sheet pan, pressure cooker, dutch oven, stockpot, and skillet.
I like to use my pressure cooker and skillet mostly and there are a few recipes that fit right into that category. I like the section that has tips on how to fill up your pantry with the right staples.
Power proteins are essential for a vegan diet, beans, chickpeas, lentils, quinoa, tempeh and tofu. Some I like, some I don't, I have never had tofu and to tell you the truth, it scares me...lol
So all in all, this is a good cookbook for the vegan and want to be vegan. Good looking recipes that will appeal to that person!
I love the idea of one-pot. I need simple in my life and being able to put everything together without making a huge mess is everything! This book is helpful for those who may be new to to the vegan diet, but also for the experienced vegan. It offers a nice guide about different appliances at the start and then talks though a bunch of different recipes for different meals. None of the meals require to many complicated ingredients which I always like. This is a helpful book for those needing some suggestions on a vegan diet.
