This cookbook had some really great recipes. The recipes were easy to understand and not too complicated for the average cook. I enjoyed the illustrations and look forward to making these recipes for years to come.

This was a wonderful surprise of a cookbook! K. Hudson provides 2 weeks of meal plans to make it easy to adopt her nutritious recipes. In our family, we are trying to eat healthy, whole foods--this is the perfect book for new ideas! And many of the recipes have short, simple prep, which means happy kids (and parents!). I've already tried the Kitchen Sink Italian Salad and I'm going to try the Sun-Dried Tomato & Kale Frittata this weekend. Thank you for writing such an accessible cookbook!
Thank you to #NetGalley and the publishers for the e-galley in exchange for my honest review!

I loved the set up of this book and particularly in ebook format, it was nice to be able to click on the meal in the weekly meal plan and then it took you straight to the cooking directions.

I will say this had a little too much eggplant and fish in it for me, those happen to be two of my least favorite items to eat. But the directions and set up fo meals are easy to follow!

Eating healthy shouldn’t be a chore, and it isn’t with this really sweet cookbook. Some really great recipes that do not follow a diet for people who just want to eat a healthier choice. From tofu to changing your white pasta to wheat, this author gives you a meal plan and some delicious recipes to enjoy!

What did I like? The presentation of the book was very pleasing, with some cute stories to each recipe. Some lovely pictures, and advice on when to make a double batch for secondary usage or for leftovers to use in other meals. The chapter pages list all the recipes in that chapter which makes it easy to find what your looking for.

Would I recommend or buy? I’m all about pictures these days....pictures make me want to try a recipe. This book has a few but no where near where I would like. I like to look at food, which makes me buy. If your into healthy eating this has a lot of great recipes but your likely to be disappointed by the lack of pictures.

Thoughts for the author? Thanks so much for a peek, all the thoughts and opinions are my own. Congratulations on your release! I appreciate your inspiration to help people eat better!

The cookbook looked promising and I was excited to try some of the recipients. I cannot give an accurate rating of the cookbook because it was archived a couple days after I downloaded it. Since I lost access to it, I was unable to actually try ad recipes in it which is disappointing.

Unfortunately this cookbook was not a good fit for me. Perhaps for both a novice cook and someone very unfamiliar with nutrition this would be useful. However the lack of pictures would still be a drawback. I also didn’t care for the organization, quick meals, slow cooker, etc., with breakfast, dinner, meat, poultry all mixed together. The repetition (fajita bowl, fajita sandwich, etc) was another issue I had. Finally, the label of kid friendly dishes was unusual- not anything my kids would eat! Sorry, just not for me.

This collection of recipes can appeal to any level of cook in the kitchen, comprising easy-to-follow directions, a variety of ingredients, and tips to enjoy a healthy diet. While lacking visuals to illustrate the recipes, the meal plans and shopping lists make the text very accessible and a jumping point for cooks. I look forward to testing out some of the recipes in the kitchen. Thank you Netgalley for access to the ARC.

Everyday Healthy Cookbook by Kathy Hodson would be a great cookbook got for a wedding shower or first housewarming. It's filled with easy and tasty recipes which can be on the table in 30 minutes or less. The author is a blogger who struggled with healthy eating for herself and her family, and this book is the end result of her journey toward meals which include natural ingredients and spices, protein at every meal, new foods and more more time around the family dinner table.

Even though the recipes are qui and easy, the results are flavorful and fun. The book is divided into No-Cook Meals, Lightning Fast 30-Minute Meals, One-Pot and Skillet Meals, Double Duty meals and Pressure Cooker and Slow Cooker Meals. This cookbook is filled with a lot of delicious recipes, as well as a lot of helpful tips for people who are new to eating healthy. My only complaint is that there aren't enough pictures. There are over 100 recipes and only a handful of pictures.

This book is very nice and it has lots of yummy recipes. Some of the recipes are recipes that we already know but there's a healthier version of them like beef and broccoli and pork and ramen. I eat healthy like 90% of the time so I'll be trying some of these recipe. 4 starts because there are only 7 photos and 100+ recipes. I received a free digital copy of this book from NetGalley in exchange for my honest review

This book is great for beginners who are new to eating healthy! I am new to eating healthy myself within the last few months due to food allergies. The beginning is clear and concise with information and tips that come from the author's heart. I liked the sectioning of the recipes and especially the no bake and 30 min sections!

Thanks to Callisto Media, Rockridge Press, and NetGalley!
