I would not recommend The Everything Easy Vegan Cookbook to be adopted into a curriculum or included in a classroom library.
However, I would recommend it to someone who was interested in learning some basic vegan recipes. The photos showed appetizing foods and the recipes were easy. For someone just learning to cook or trying a vegan lifestyle, this would be a good starting point.
This cookbook does a great job at including kid-friendly, adults-(probably)-only, and DIY to everyone’s own tastes. Many of the recipes also have notes at the end for substitutions and other tips. It’s a great cookbook to give as a gift to new families or more established families who may need some new staples.
This cookbook includes a lot of recipes from different origins, including Asian, European, Middle-Eastern to name a few. Recipes are classified into meals (Breakfast, Dinner, Salad, etc.) and each recipe include basic nutritional analysis which is good for people that need to pay close attention to their intake levels.
One thing I would prefer is to see more photos. The photos don't have to be a huge spread on the page but a good photo tends to make me more inclined to try the recipe.
Overall this is a very informative book with lots of interesting ideas to try out.
This is a good vegan cookbook with simple and easy to follow recipes. I appreciate that nutritional information is provided for every recipe and the format is attractive, simple, and easy to read and follow. The recipes are as easy as promised. Chapters include breakfasts, appetizers, soups, salads, tofu, rice dishes, desserts, etc. There are a lot of recipes but not very many photos. It's not designed to be easy for folks with allergies like gluten and soy. There are are plenty of recipes that don't involve these, but substitutions or icons are not provided to make that easy. Altogether a helpful book with lots of tasty recipes that are generally healthy and high in fiber but not a lot of work. There is not a large dependence on any one food like soy, purchased meat substitutes or egg substitutes, etc. but rather a wide range of dishes.

Usually when a book has "easy" in the title it is actually harder than you would think. But this is actually a relatively easy and super comprehensive guide to vegan cooking. Which is known for being difficult. I've saved quite a few of these recipes and once I gather up the ingredients I can't wait to try them out!

After a quick introductory chapter on veganism, its benefits, and how to make the switch, this book gets right on down to the recipes, and it does not skimp. There are tons of recipes in here, and it’s divided up just how you would imagine.
First, appetizers, sauces, and dips, includes some gravies, Mediterranean dips (my fav), and some bar food standards. The recipes are straight forward with nutritional info and some options if you want to make other things along-side or if there are store bought alternatives that will make your life easier. The beautiful photos made me hungry.
Next you’ll find sections for breakfast, salads/dressings, soups (my wintertime fav), veggies stir-fries and sides, rice and grains, pasta, misc. mains, tofu, seitan TVP and Tempeh, and desserts. I love the micro level that these recipes are broken into. You don’t have to flip through an entire dinner section if you know you want pasta or tofu for dinner.
I am not vegan, but I have close friends who are, and I am always looking to add more plant-based meals into my prep rotation, cutting back on meat and dairy when possible, and I can’t wait to try lots of these recipes out. They look delicious. This one is out in February, so keep an eye out for it if you’re looking to diversify your vegan cooking, or if you’re curious and want to dip your toes into easy vegan recipes to see what you think.
The Everything Easy Vegan Cookbook begins with a section providing concise explanations for why vegan diets are great for health, weight loss, animals, and the environment. While that information is excellent, what makes this book great are the 200 recipes broken down by food groups and types (breakfasts, tofu, seitan, etc.).
Long-time vegans and those just wishing to explore a plant-based diet will find much to love in this cookbook. As promised, the recipes are generally easy to prepare and rely on ingredients sold in large grocery stores.
Before getting this book, I tried for years to make tofu that I enjoyed, but I could never figure out how to prepare it nearly as well as restaurants did. But the Cajun Cornmeal Tofu recipe in this book changed everything, and I finally was able to prepare tofu that was restaurant-worthy. This book was exactly what I have been looking for in a cookbook, and I can't wait to make many more recipes.
Wish there were more pictures, but the steps were explained well enough so that they were not necessary.

This cookbook is terrific! As a pescatarian for the last 5+ years with a vegetarian husband, this provides great recipes/alternatives for dishes I would’ve eaten with meat. I would buy this cookbook for my mom in particular because she will buy plant based meats when it is not really necessary when we come over! This cookbook really shows how you can be vegan without buying “fake meat”, with the exception of a few dishes that require vegan sausage, etc. I also love that it spans multiple cultures of foods. I’m really excited to try making the gyros! The only thing I would change is having more photos of recipes; photos really entice me to make the recipes!
If you are new to vegan eating or just want to add vegan meals to your rotation, this cookbook is for you! I was delighted by the variety of simple and healthy recipes using every day ingredients. As a mom to a vegan teen I am always looking for new and simple recipes. We will definitely be using many of these in the future. Highly recommend!
I was thrilled to receive this cookbook to review. My young nephew has some significant egg/milk allergies. Finding recipes for meals and snacks for him has been extremely difficult. This cookbook was a godsend, it has some fantastic recipes in it. The limited photos are not problematic for me as I am mostly interested in the recipes and content. If you need a easy to use vegan cookbook, this is a great selection. I like the alternatives to “non-vegan” foods that are included
The recipes in this book sound yummy. However, I like my cookbooks to have photos of the recipes and this one is lacking in that department.
The Everything Easy Vegan Cookbook is a compilation, reformat, and re-release of content from several "Everything" Vegan cookbooks from 2010-2019 with included new material. Due out 9th Feb 2021 from Simon & Schuster on their Adams Media imprint, it's 272 pages (print edition) and will be available in paperback and ebook formats.
I like the layout and formatting of the "Everything" cookbooks. They're easy to understand, generally easy to follow, and full of tasty, relevant, and do-able recipes. This one follows the same format and will be familiar to readers who have used the other books in the series. The introduction gives the basics about veganism, what vegans eat (and why), health advantages, and some nutrition info.
The recipes are arranged roughly thematically: appetizers, breakfasts, salads & salad dressings, soups, vegetables stir-fries & sides, rice & grains, classic pastas, miscellaneous mains, tofu, seitan TVP & tempe, and desserts. Each recipe has its ingredients listed bullet style in a sidebar. Measurements are given in US standard only. (There's a metric conversion chart in the back of the book). Special tools and ingredients are also listed, along with yields and cooking directions. The ingredients are mostly easily sourced at any moderately well stocked grocery store. Nutritional information is provided for each of the recipes and includes calories, fat, sodium, carbohydrates, fiber, sugar, and protein.
Essential info, alerts, facts, and questions & answers are highlighted in text boxes. These will be familiar to readers of other books in the Everything series from this publisher. Few of the recipes include photographs. The photos and serving suggestions which are included are full color, appetizing, and appropriate, but the general lack of photos might be a drawback for some readers.
Four stars (mostly for the lack of photos - so if you don't need them, it would be five stars). This is a general cookbook with a huge variety of appealing vegan friendly dishes. It would make a superlative gift or purchase for readers trying out a vegetarian/vegan lifestyle. Many of the recipes do rely on pre-processed ingredients (vegan beef, vegan sausage crumbles, etc) - so some planning and adjustment will be needed for cooks who strongly prefer to cook from scratch. All of the recipes I tried on my family were tasty and well received, though I did notice the lack of finish/serving photos.

I am attempting to cook more vegan and vegetarian meals, so this cookbook was a great help on the vegan front. I don't yet know what to make for vegan meals without help, since I was so used to meat, cheese, eggs, etc. being the basis or at least embellishment for a meal.
The book is exactly what the title promises, a collection of recipes that includes everything and are very easy and vegan.
I love how simple but clear th instructions are and how the book is made up, or in other words of the recipes are put together, so that breakfasts can be found together an der so on.
The one thing I wish would have been a little different is the amount of pictures. I am a very visual person when it comes to recipes especially.
So if have a picture for every recipe or at least near to that? I will say more like make it because i saw how good it looked, my brain remembered the nice picture and reminded me to make it.
espeiclaly since the pictures that are in the book are stunning!
But that's a personal preference, and I am sure not everyone enjoys having to flip through a lot of pictures to get to the recipe they want to make.
All in all a great staple for the evers kitchen, not just the vegan one!
Lots of fabulous vegan recipes in this cookbook, both tasty and nourishing. I am giving it five stars and thank you to netgalley and the publishers for giving me an advance reading copy. The fact that it was an ARC did not influence my opinions in the least.
I am not a fan of cookbooks that do not have photos of every recipe. 65 percent of the population are visual learners, photos of the completed recipe are a must. The recipes themselves do look fairly easy but many are imitation of non-vegan foods. I wouldn't recommend this cookbook.
