I'm always interested in vegan recipes, but so many require uncommon ingredients that are difficult to find at a regular grocery store. I also don't like tofu. At all. No matter how it's prepared. I was delighted to find several recipes in this book that don't seem too difficult to make - Spiced Hot Chocolate S'mores Brownies, One-Pan Super Saucy Garlic Ziti, Garlicky Nooch Broccoli and Potatoes, Easy 5-Alarm 2_Bean Tacos, Loaded Sheet-Pan Nachos, and Cheap 'N Cheesy Jalapeno Grits.

Although I'm not Vegan per se, I do eat mostly vegetarian and have been trying to branch out further into vegan and vegetarian recipes in order to increase my go to recipes. I liked Harder's approach and the photos in this cook book make his recipes look absolutely stunning!
This follow up to Epic Vegan is full of fun recipes perfect for weeknights and get- togethers. The recipes are packed with flavor , yet require minimal time and ingredients. These one pot meals are perfect for after work , or when I just don’t feel like spending a lot if time in the kitchen . As with his previous books, There are tons of beautiful photos of the actual recipes rather than the vanity and art photos often found in cookbooks . This has always been a “make or break “ issue with me as I like to see photos of the completed dish . Dustin’s fun, quirky personality shines throughout the book . His down to earth approach feels as if a good friend is sharing his favorite recipes .
So far, I’ve made the Baked Thai Chili Cauliflower Bites, , Garlicky Nooch Broccoli and Potatoes , and the Made In Minutes Mini Pizza Cups. They were all excellent , and like many of the recipes from his previous “ Epic” book, they will be in my weekly rotation.
I love everything about this book. Unique recipes, gorgeous photos, and some extras that aren't usually included in cookbookz, like meal prep combos using the recipes from the book. I only wish it were longer so I could get even more great ideas. Also, pineapple basil sorbet?? Yum!
I am a total sucker for organization in a cookbook. The moment I opened this one my eyes feasted as well as my guegling stomach. And it's not even lunch time! I love the organization in this book and the list of recipes that hit you as soon as you open the cover. A bunch of recipes really stood out for me- the quesadilla with the pineapple dream sauce, miso garlic cheese bread, the seitan tikka masala, rainbow vegetables and tofu sheet pan, dustins summer salad and stovetop mushroom tetrazzini.
There are plenty of lush photographs HOWEVER, in the salad section it could have been more plentiful with the photoillustrations. I would have much rather have seen the salads shown instead of the roasted potato dish with broccoli as that dish is rather lackluster. Id like to see more colors like I do in other sections.
Plenty of variety here in this book. Its going tonbe a GREAT addition to my cookbook shelf and also a great gift for a friend who has had to go vegan for the health benefits.

I am not a vegan but do eat vegan occasionally and this cookbook will seriously help out with some new recipes. I especially loved the meal prep section. The book includes a gravy recipe, multiple new ways to eat tater tots, lots of really yummy looking desserts. I'll be making quite a few of these!
If you are new to veganism, or just new to cooking in general, this book is great! Tons of high quality pictures alongside almost every recipe and lots of basic recipes to have on hand as well as more complicated ones. Ingredients are all relatively simple (NOT the case in a lot of vegan cookbooks!).
I am especially looking forward to the creative tempeh recipes (Smoky Tempeh Peanut Satay to start)!
I can not rave ENOUGH about this book! I felt so spoiled in the beginning with meal prep suggestions. Half my battle with sticking to a diet or life change is planning the week out. He already did that for us. How fabulous is that?! The recipes were so easy to follow and mighty delicious. I just wish there were photos on each recipe. But overall it’s a fantastic vegan book!
I am so excited to try out these recipes. I am not a fan of soups, but I even want to try the soups. Here are the yummiest sounding ones:
* Very fast lentil soup
*Creamy chickpea potpie soup
*Mindful Mushroom and Corn Chowder
*Minute made miso soup
I know that the first two snacks I will try are the loaded sheet-pan nachos and the cheesy burger tater tots. The Hawaiian tofu and pineapple sando is screaming my name. As are the mushroom carnitas and Brussels burrito with sweet red onion. Just trust me when I say that each chapter contains a handful of delicious recipes you'll want to try.
loved the layout, this had great spicy and filling vegan recipes. lots of great photos of the colourful food to show how to plate it.
Epic Vegan Quick and Easy by Dustin Harder is a fantastic cookbook that features tons of hearty recipes. I loved the variety of recipes with easy to find ingredients. Gorgeous pictures accompany many of the recipes.

This cookbook is filled with so many good vegan recipes that seem simple and easy to make with most ingredients you would have on hand.
This cookbook is very easy to use. The introduction talks you through ingredients, tools needed and meal prep suggestions. The recipes are divided into 1. Basics, 2. Breakfasts, 3. Snacks, 4. Soups, 5. Sandwiches, 7. Lunch, 8. Dinner and 9. Sweet Treats. It is well laid out with full page pictures beside most recipes. Ingredients are to the left, the method is in the middle and a tip is on the right. Each recipe has a small number of easy to find ingredients, and there are only a few steps in the cooking process.
This is the perfect book for lazy, unimaginative, vegans, vegetarians and even meat eaters. Now, I'm off to make the Garlicky Nooch Broccoli and Potatoes.

The recipes are pretty tasty sounding, and most should be easy to whip up quickly. Nice resource for vegan/vegetarian cooks, even if just for inspiration.
I think this book is a must for not only vegan households but in homes that want to make more meatless meals. This book is full of so many amazing mouthwatering meals. I know it will be used often in my home and we are not vegan but want to make more meals with more veggies.
Holy cow this book is right in my wheelhouse. Not only are there many, many fantastic sounding recipes, there is a photo of each one! To me, that is a necessity.

I love to cook, and ever since my brother went vegan I try to incorporate more vegan dishes into the mix. This had me hooked right out the gate with the words "quick" and "easy" haha As much as I love cooking, sometimes I don't want to spend all day in the kitchen. This had a wonderful variety of recipes and there was even some in there I hadn't come across before, so double bonus points! Great cookbook if you're vegan or even trying to do meatless meals on occasion. Highly recommend.
A fantastic collection of vegan recipes that are clear, concise and easy to follow. I particularly enjoyed the loaded sheet pan nachos and the made in minutes pizza cups which I made with my children. The pictures of the food are very well done and had my mouth watering. I will definitely be making more of these recipes. Thank you for the opportunity.
I really loved the idea of this cook book. Due to a super fun combo of different food restrictions, I eat plant based about 75 percent of the time and have a family member who is vegetarian and a bit of a picky eater. I'm always looking for new FAST and/or low prep recipes so I don't just repeat the same meals over and over when life gets busy. I was super interested when I saw there was an entire chapter/ section devoted to meals that are easy to take to work since a meal that "travels" well is always seen as a plus in my book.
I really loved the tips on the side of the recipes. Many tips are specifically geared toward eliminating food waste, providing direction on healthier or allergy alternatives, and give clear direction on the best way to store the recipe and keep food fresh. Really helpful information!
That being said, I did have two issues with this cookbook:
1. Organization and lack of "fast facts"- A lot of info that I personally find really helpful when deciding if a recipe is one that I want to try was not easy found, specifically, estimated cook and prep times. There is a lot of information just in blocks of text and therefore it's difficult to get the info I would need at a glance. The only info that was clearly separated was yield.
2. While I didn't find this a major issue, many recipes have a considerably long list of ingredients, and some of these ingredients are not common. There were a number of recipes that I knew I would not even think of trying because it would mean tracking down ingredients I could not get at my local grocery. Basically, take the "easy" in the title with a grain of salt. Not everyone would consider all of these recipe's easy.
There is a few recipes that are just a non vegan recipe but the ingredients are vegan ________ (fill in non vegan food here) Aka just telling you to use vegan substitutes to make this food vegan. This might be a bit disappointing for someone looking for a truly vegan cookbook but since I am not 100% vegan I didn't mind too much.
The recipes in this book look great; vegan, a wide range of recipes, with many substitute suggestions and tips.
I love that they're easy to cook (huge one-pan fan) and easy to follow recipes.
I'm especially excited to try the Sheet Pan Pancakes and mac and cheese!
