I've been a big fan of Vegan Richa for a couple years now, and this cookbook has been on my radar for months. I was provided a free e-copy of this book from NetGalley and Hachette Books in exchange for an honest review.

This book far exceeded my expectations. I love the focus on sauces followed by a breakdown of so many kinds of foods. The photos were phenomenal and now I have so many options for meals moving forward. Richa does a brilliant job of intertwining her personal experiences with recipes to share with us all.

I have several of Richa's vegan cookbooks and love them all. I have been vegan for over 50 years and began at a time when there were few resources for vegans. I do not own an instant pot, but a pressure cooker, which is easily adaptable for these recipes. Her recipes are full of earthy spices and creative combinations that inspire and delight. I have always been of the adage that it is all about flavor, when you bring new vegans into the fold. Richa knows how to do this, with recipes that also cook up quickly. Another winner!!

This book was so informative! I loved all of the information on how to transform dry goods into delicious instant pot recipes and the amount of information about spices and flavoring.

We've been waiting and waiting for Richa to publish a vegan Instant Pot cookbook and finally, here it is! This book does not disappoint. The recipes have all been delicious. An absolute must for any library's cookbook collection.

I am a sucker for vegan instant pot cookbooks, so I was very excited for a chance to take a look at this one. Let me start off by saying the recipes look great and really well put together. The only problem I had was with the organization of the book. When I opened it I was hoping to see a varied mix up of of recipes, what I got instead was a bunch of Indian recipes... Now I love Indian vegan I already have a cookbook dedicated to that on my shelf. So then I figured it was a book dedicated to Indian vegan instant pot, then I saw a recipe for Mulligatawny soup, then the soup section came with American-ish dishes, there was even a recipe for a Creole dish from New Orleans. It just felt very disorganized to me. I don't know how else to explain it. When I see the title for vegan instant pot I want varied recipes and more cohesive groupings of recipes. I think the recipe book is a collection of good recipes it just needs to be edited differently? It just didn't flow for me to be like "wow! I have GOT to get that one when it comes out!"

Although I haven't gotten a chance to try these recipes out yet, I do love my Instant Pot and wish I had had this cookbook when I was learning to use it! The recipes seem clear, and the section on ingredients was helpful. There are a few recipes in here I can't wait to try!

After spending some time with this book and cooking a few of the recipes out of it, I will say that first impressions were not misleading! I think the digital format of the cookbook threw me off (which reminds me, thanks NetGalley, the publisher, and the author for a review copy!), and so it was difficult for me to really connect with how these recipes would turn out. However, after trying a few of the recipes out, it quickly became apparent to me that it was my own familiarity with the medium that was to blame. I can honestly say that there are several recipes that have upped my instant pot game, and I have ordered a physical copy of the book—for some reason cooking and physical cookbooks will always work best for me.

Vegan Richa's Instant Pot Cookbook has Indian food and food from other cultures. The Indian food section was my favorite. So much of Indian cooking is naturally vegetarian, so a lot of the changes you need to do are just swapping tofu for paneer and cashew cream or vegan yogurt for your dairy-based versions. Hingles includes everything from your favorite curry to rice pudding to chutney and even chai.

Vegan Richa's Instant Pot Cookbook is broken into two sections, your Indian food followed by you food from other cultures section. I was very drawn to the Indian food section. So much of Indian cooking is already vegetarian so a lot of the changes you need to do is just swapping tofu for paneer and cashew cream or vegan yogurt for your dairy based versions. Hingles includes everything from your favorite curry to rice pudding to chutney and even chai. The non-Indian section has items like mason jar pancakes and breakfast sweet potatoes with blueberry compote and even scalloped potatoes. In 2020 when work-from-home became the norm I started making a lunch that I found a version of called Grits with Mushrooms and Chickpeas. Now I just through things I saw in my fridge into a pan and added some spices but apparently I am not the only one to like this combination. It makes a great bowl and you can add any spices you want to it or extra veggies and it works. There are several items I can't wait to try but top of the list are Malai Kofta (one of my favorites) and Masala Potatoes.

This cookbook is a great option for people who enjoy Indian food, vegan food, and easy Instant Pot recipes. The recipes look delicious and they were organized well into different categories.

I enjoy Richa’s other two cookbooks, so when this one came up I was excited to check it out. And it does not disappoint! One thing I like about all her recipes is they include ways to adapt to be free of gluten, nuts, soy, etc. And something this IP cookbook includes that I haven’t seen before is pot-in-pot cooking (having something on a trivet to steam above a sauce, or adding another bowl inside the IP). I’d estimate at least half of the recipes are Indian specialties, so be aware these aren’t 5 ingredient recipes—there’s a lot of layering of flavors. With plenty of tasty sounding recipes I’m especially looking forward to trying the Sweet & Sour Chickpeas.

I love Vegan Richa's recipe website, so I was excited to check out her new cookbook! It is much more extensive than the average cook book(150 recipes!). Even though they are all instant pot recipes, I love that Richa gives us recipes with a variety of recipe levels. There are several "dump and done" recipes for when you are in a time crunch. There are also more time consuming(but worth every second!) recipes that use the instant pot for part of the recipe, but use other pots/pans too.

The variety of meals is also amazing. The majority of the recipes are Indian cuisine, but there are other cuisines featured too. The biggest surprise for me was the variety within the extensive Indian recipes. There was both northern and southern Indian cuisine, street food, spice mixes, condiments, spice mixes and more! Typically Indian Cookbooks in the US only feature the staples you see in restaurants here(tikka masala, korma, daal, etc). This book had quite a few recipes that I have never heard of, but can't wait to try them all!

Last but not lease, I appreciate that Richa took the time to cover instant pot models and other tips and tricks, as well as the pantry staples needed to make the recipes within the book. While most people will skip straight to the recipes, I found the information helpful in making sure I got the most out of them. I definitely recommend reading through that section before trying any of the recipes.

My family is huge fans of all things curry and warm cozy spices. We're also huge fans of the simplicity of weekday insta pot meals. Richa does a great job of making these seemingly complex recipes feel very accessible to the average cook. The photos in the book alone will have you craving curry! All of the recipes are innovative and make great use of the stuff you probably have around the house.

One of my favorite things about this book is all of the simple sauce recipes. Once you have your assortment of curry spices you can make a plethora of freezer ready sauces. When you want a simple meal, you choose you protein and veggie source and pour all the saucy goodness right on top. These recipes truly feel like resteraunt level, but in the comfort of your home and with the ease of an insta pot!

My only *slight* complaint is that I truly didn't realize this book was for cooking Indian Cuisine, and I simply thought it was an insta pot book. The font is so small and slightly blurry in the photos that my eyes bypassed right over the subheading. For my family, this was perfectly okay as we love these flavors, but may need photos retaken in the future. I'm sure it's easier to read in person as well.

I am a huge fan of Vegan Richa- her blog, instagram and her wonderful cookbooks. This cookbook did not disappoint. I am an avid user of the Instant Pot and was very happy to get some more ideas on how to utilize it. Like the author, I am also of Indian descent. I am very experienced in Indian cooking but really appreciated how th author was able to talk about how to prepare the sauces and seasonings ahead of time to save time. She gave really excellent instructions for Pot in Pot cooking- something that I am still getting the hang of. I also appreciated how the how author took allergies and dietary restrictions into consideration. Many vegan recipes focus on utilizing cashews for creaminess and she was able to give some really good substitutes. Several of her recipes, I felt were restaurant quality. This book and the recipes do utilize a lot of ingredients but Indian food does utilize a variety of spices. I still think the book is very accessible for both foodie's like myself and also for beginners with both Indian cuisine and the Instant Pot. Highly, highly recommend this book!

In previous times in my life, I have been fully vegan. I have also been vegetarian and pescatarian, by choice - but that's neither here nor there. I think I can speak for a lot of folks when I say it is HARD to find delicious and non-threatening VEGAN recipes - especially ones that have more flavor and variety.

This book full of Instant Pot recipes really satisfies variety, ease, and accessibility. I definitely found a handful that I would consider trying in my kitchen, committed vegan or not! They really do look appetizing and doable. I appreciate all of the gorgeous photos of recipes that were included in this cookbook as well.

Overall: A solid kitchen cookbook Instant Pot recipes book~

As someone who loves using my Instant Pot to cook, plant-based recipes, and trying new types of cuisine, it's like this book was specially created for someone like me.

I loved the fact that it offered variations for people who need to avoid certain ingredients, such as gluten, garlic, onion, and nuts. There were so many recipes that I bookmarked so that I can try them, and while there is a heavy emphasis on Indian dishes, there are recipes from other cuisines as well, including Italian, African, and American. I loved the idea of incorporating new foods and using familiar foods and spices in a different way.

The photos of the recipes are stunning. I especially appreciated that she included some photos of the recipes in progress. This book got me to think outside the box about using my instant pot, such as creating desserts in it. I loved the fact that there were so many healthy recipes, and the instructions are incredibly easy to follow. My only issue with this book is that some of the recipes use a lot of ingredients, but even those seem incredible and tasty. Many of the ingredients are easily found at my local supermarket, with only a few that I'd have to go to a specialty store to get.

This book is an incredible collection of easy-to-create and tasty-looking recipes. I can't wait to try some of them out!

I love that this is an instant pot cookbook. There is a wide variety of flavors and recipes and it was hard to decide what to make first. I decided to make Peanut Sauce Fried Rice and it was delicious, The recipe was easy to follow and the instructions were clear. There were suggestions on what protein to add if needed and substation suggestions for allergies/preferences. I ended up making the rice without adding any tofu and found it very filling on its own. My picky eaters really enjoyed it too, which shocked me. So I think that’s a win! I liked the pictures in the book too.

The only negatives I see with the book is that it is sort of an Indian food cookbook, but sort of not. It felt a little confusing, but I think ultimately, it’s nice having a lot of options in a cookbook. I also would have liked to see estimated times for cooking each meal included so I can decide if I should tackle the recipes on a weeknight.

What a wonderful book full of great information and wonderful recipes. I am fairly new to instant pot cooking and have always loved Indian food but I have not sought out recipes such as these.

From the other cookbooks I have read for Instant pots, I find these techniques both time saving and innovative. The recipes have lots of flavor through the use of spices but no processed foods which I see in other recipes from other cookbooks. This is what I expected and I was not disappointed. There is truly a recipe for everyone and everything from breakfast to dessert are covered.

I think my favorites will be the mushroom gyros, upma (which is new to me), the mason jar pancakes, chai tea, and the West African inspired peanut stew. Check them out.
