Thank you so much Richa- this book simplified my meal planning for the week. It also helped me with ideas for my picky family, mainly my toddler.

This is a solid cookbook with a variety of authentic recipes. I tried several before this review and all came out well. Note that there are some rarer ingredients that might need to be ordered online or found at a larger supermarket in a larger city.
The book begins with the basics - instapot cooking info and getting the most from yours. After that are the recipes in the following sections: Indian Comfort Food, Dals/Lentils/Beans/Peas, Vegetables/Grains, Soups/Chilis, Curries/Stews, Stir Fries, Pasta/Casseroles, Tacos/Burgers/Wraps, Pot In Pot Meals, Breakfast, Desserts. As you can see, this isn't just about Indian recipes but includes quite a variety - from Japanese curry to Mexican chili sin carne.
The recipes are cleanly laid out and there are many photographs of both the final results and steps during cooking. Although not every recipe has an image, enough do to make this worthwhile. Each recipe layout is clean - nothing fancy or pretty but serviceable. A large title, a quick introduction, serving size and allergy information at the top. Then ingredient lists in large bold face type. Instructions are numbered and not too blocky, making them easy to follow. Notes and variations follow the steps. At the bottom is the serving info: calories, fat, saturated fat, sodium, carbs, fiber, sugar, protein.
In all, a very nice variety with many options/variations, plenty of photographs, and an easy-to-follow format. Reviewed from an advance reader copy provided by the publisher.
I'm not completely vegan, but I do try to incorporate vegan dishes into my diet. This book is AWESOME!! It is full of delicious recipes and the ones I tried out were easy to make. I've already put this book on my wishlist and will be purchasing my own copy once it's published!
I've been on a Vegan kick and between this and PlantYou I've had my fix. It's so user friendly and the meals are easy to make! Thanks for this one!!
Lots of information here for how to stock your kitchen and which instant pot to purchase. There is even a section on Indian comfort food. Since these recipes are very much Indian, it's not for everyone, but it is a really nice selection and variety.
This vegan cookbook is completely FULL of great recipes. I think this is the largest number of recipes I've ever seen in one book, and it was wonderful. I will definitely be making some of these!
A beautiful book of of vegan recipes. Highly recommend. Especially loved the breakdown of recipes and ease. Made it feel like even someone at my level (super low) could manage. I received an advance review copy for free, and I am leaving this review voluntarily.
As soon as i saw the name vegan richa i got excited. I have had her Indian kitchen cookbook and honestly this has it beat. I see so much improvement. I am a vegan with ALOT of allergies so despite vegan options most cookbooks won’t work for me. My main allergies are tree nuts, coconut, and I’m gluten intolerant. I didn’t expect alot but left with so much. Alot of these recipes have nutfree alternatives and no coconut needed soy milk works too. Also many gluten free options. This is definitely a cookbook i will be purchasing!!!
While I am not a vegan, I do try to eat more plant based recipes for health and to minimize my carbon footprint. Lately, I've been obsessed with lentils and have been making the same lentil soup recipe day in and day out. Vegan Richa's Instant Pot Cookbook has been a nice resource to have around my kitchen for more variety and ease for days I don't have the energy to cook a big meal but want a nice and easy nourishing vegan/vegetarian one. This also drew me to Richa's blog which is also delightful. The images in the cookbook are appetizing and the flatlays are beautiful.
This book is a great resource for anyone who is new to the Instant Pot. There are tons of instructions on general use for the Instant Pot and each recipe is very easy to follow. While there are many Indian inspired recipes, there are also numerous recipes not from that part of the world. Even if you do not have an Instant Pot, the recipes are great inspiration and with a little tweaking, can easily be made using more traditional pots/pans.
I love my Instant Pot! I use it frequently to meal prep for the week. I have never sought out vegans recipes before, but going through this cookbook might change my mind. The biggest takeaway for me was the diversity of recipes and the amount of them. I loved that there was a section for "Indian Comfort Food." My initial thoughts about cooking vegan food was that it would contain hard to find expensive ingredients. I do like that this cookbook contains a lot of instant pot tips that can be used for general recipes. Also the spice blends are a great addition! One thing that could bee improved was more images. Overall, awesome recipes for vegans.
I am not vegan, but I’ve always wanted to cook more veggie based meals, and this was a great help. The palak tofu was delicious - I just made it for my parents and everyone enjoyed it.
I've followed Vegan Richa since my college days around 10 years ago. It's amazing to see how far she has come and how her recipes just keep becoming more innovative and delicious. When cooking for yourself the majority of the time, you miss those big meals you have with family like curries and soups. With the Instant Pot you can create these delicious recipes in smaller portions. I highly recommend everyone get an Instant Pot and add this book to your library.
A good way to start on vegan January. A few good recipes that I will keep making a few a didn’t love but we’re okay.
Vegan Richa does it again with this beautifully photographed and cookbook with details and notes on variations (soy- and gluten-free) with step-by-step instruction and photography this book will get you using your Instant Pot multiple times a week!
If you love using an instant pot and cooking Indian food, this book is a WINNER! While more complicated than vegan favorites I tend to make, there are SO many tasty sounding meals to make that you really cannot go wrong!
I really like Vegan Richa and make a lot of her recipes from her blog. I was excited about this book because I enjoy instant pot cooking. There are some unique and delicious recipes to peruse, and the detail for each recipe is really impressive, and there are variations offered for so many of the recipes so the ability to have something unique and new each time is almost endless! Some recipes require ingredients that may take a bit of sourcing, but in my experience with Richa's recipes, it's always worth the effort to hunt them down. A great book for anyone who loves Indian food and wants to take a load off with their Instant Pot to help!
Lots of great recipes, great to try for anyone trying to eat a bit healthier while still easy in the instapot. Love it. Would definitely recommend it.
For some reason this cookbook just didn't do it for me and I'm not entirely sure why.. The book is put together beautifully and, in addition to heaps of recipes from various cuisines, offers a wealth of information for those who are new to cooking with an Instant Pot. Those who are new to IP cooking would do well to read the first portion of this book, simply to learn the ins and outs of the device. The recipes are written in such a way that they are easy to follow and Richa Hingle offers numerous variations/substitutions throughout the book so that you can make the recipes more to your taste, dietary needs, or simply more convenient based on what ingredients you may have available.
I do plan to revisit this book at a later time to see if a change of mental scenery may make it more enticing to me.
I've been a follower of Vegan Richa on Facebook for years and the recipes have never steered me wrong and many family favorites have been found along the way. This collection of instant pot recipes is no different. I have by no means tried all of them but everything I have tried has been amazing. I look forward to purchasing this in paper form for my home collection as well as recommending it to our patrons.
