Vegan Richa's Instant Pot Cookbook is a fantastic cookbook that features a variety of mouthwatering recipes. The book is huge with tons of encyclopedic content on using an Instant Pot and a huge variety of Indian recipes. My only complaint is that I wish there were more pictures, but there is so much amazing content!

Well this is a treasure trove of information for not only cooking vegan in the instant pot but also cooking Indian food in the instant pot. This is the first vegan cookbook I've read that has so thoroughly explored Indian dishes. I think this aspect of the book is a great seller. Other than that this book also teaches you how to make your own veggie stock and your own spice blends to use in recipes.
I requested an ARC copy of this book from NetGalley. I am a new user of the Instant Pot and have been looking for some meat free recipes. I had no idea who Richa was and I am amazed at these amazing recipes and her entire body of work. I am a new fan.
Vegan Richa's Instant Pot Cookbook has 450 pages of deliciousness. There are recipes from all over the world and cover every meal of the day. Some require a bit more skill than others, but her instructions are great and full of tips. At the beginning of each chapters are suggestions of what to try first or further explanations of techniques.
Living in the Midwest it can be hard to find some the specialty ingredients for vegan recipes, this is meat and three country. However most of these ingredients can be found in a regular grocery everywhere. I highly recommend trying the Mushroom Bourguignon, Fried Rice, Dosa and Masala potatoes. Yum!
I am a lifelong vegetarian and have been an Instant Pot™ (IP) convert for several years. IP cooking has really opened my eyes to the ease of making delicious and complexly flavored Indian and Indian themed meals.
I was very excited to try this new book and learn more about Vegan Richa and she did not let me down!
There are so many pluses to this book, including - writing for any level, including how to get started.
Interesting and innovative recipes including layered pot in pot. The recipes are clear and very easy to follow. My favorite to date is the Spicy Peanut Noodles which was restaurant quality dinner for me!
There are 150 global recipes that focus on whole foods and avoid heavily processed rom a range of global cuisines. I've only used it for dinner but there are recipes for breakfasts and cakes too (looking forward to this!)
Also amazing is that Richa included adaptations for allergies and diets the full nutritional info is also available. If you are interested in healthy cooking combined with an IP, you cannot go wrong with this fabulous book! #VeganRicha #IP #VEganRichaInstantPotCookbook

I’m not vegan but I love to read and to try recreating different recipes. These recipes are fun and new to me! Each of them very detailed and with dietary substitutions. I wish this had more pictures. But overall, it’s a great cookbook.
This is a great cookbook dedicated specifically to using an instant pot. I have not found very many resources like this one. I love her vegan approach and have found the recipes easy to follow and very helpful for my food sensitive family. I’d recommend it for anyone cooking with food sensitivities or looking to make some healthy changes.
I'm a big fan of Vegan Richa's blog - I think this is a great, straight-forward cookbook with a lot of different recipes for all tastes and preferences. Specifically, I love that it's an instant pot-based book because finding vegan recipes for that kitchen tool is difficult but Vegan Richa makes it so easy!
