Well-known Philadelphia chef, Aliza Green, has written a superb book on making your own pasta. She shows you step-by-step how to make delicious spaghetti, penne, linguini, and less well-known shapes of bucatini and tagliatelle. There is also a section on filled pastas, such as ravioli and dumplings.
Although there are many cookbooks available on making homemade pasta, Green's cookbook explains they "why" and "how" of the pasta-making process. She explains what different flours contribute to the recipe and even what the water contributes. The author describes different pasta-making methods and illustrates them using both modern and vintage tools. Recipes are provided in both cups and grams and Green provides instructions for mixing pasta dough by hand, using a mixer, and using a food processor. Beautiful photographs illustrate the different pastas and the steps to making them. The author provides recipes for some pasta dishes, but the focus is on making the pasta itself. Green also includes a reference to Fante's Kitchen Shop, a locally owned - and much loved - kitchen store in Philadelphia's Italian Market.
If you don't have an Italian grandmother to teach you, this book is an excellent choice for anyone who wants to learn how to make homemade pasta. The information provided is clear enough for a beginner to get started and there is enough variety in the recipes to keep cooks busy for months! Five stars!

The book starts with three chapters on Pasta Basics: Ingredients, Making Pasta with Wheat and Other Flours, and Flavoring Pasta Dough (the latter two include recipes). The second section is Pasta Recipes: Dumplings, Pasta Sheets, Making Cut Pasta, Specialty Hand-Formed Pasta, and Stuffed Pasta. There are a handful of sauce recipes tucked in.
The book covers tools, methods, tons of background info, a glossary, and a resource list.
This is a great book for those interested in making homemade pasta. Nothing seems unapproachable, but there is a lot of info in here and a variety of recipes.

This is a fabulous book - I think it covers every form of pasta imaginable. It takes me back a long way to when I helped my grandmother and later my father to hand make Italian pasta, no machines in those days, everything was rolled out and I remember the table filled with pasta drying out ready for use.
This book is very well illustrated and procedures easily understood,. with lots of variation in the type of pasta. I have always love the black squid ink pasta and I was pleased to see it in this book. There are many flavored pasta, gnocchi , filled ravioli, and hand shaped varieties. There are, of course recipes on how to incorporate these pasta gems into a meal, and sauce recipes as well.
This is going to be my go to book in future.

This is a beautiful guide to making pasta!
There are recipes, pictures, and helpful instructions for a variety of pastas. There's information on choosing your ingredients, mixing your dough, and variations for different kinds of pasta. There's a lot of information packed into this book! The recipes are in both cups and grams and the pictures are very helpful.

What a wonderful cover and a great gift idea for the pasta lover in your family. The book uses basic ingredients and pasta tools to crank out some incredible looking recipes. Every pasta you can think of and a ton more that you’ve probably never heard of but could definitely try. Homemade never looked so easy!

This book is A-mazing. No experience required, just a love of pasta. This cookbook was created by the James Beard Award winning author Aliza Green. Aliza Green is well known in my neck of the woods as being one of the first women chefs in Philadelphia, Pennsylvania, and as a pioneer of the farm-to-table movement.
Through Super Simple, Green will take you through all of the steps to create homemade pasta including choosing ingredients and instructions on using pasta makers/machines. The most interesting chapters relay instructions on flavoring your pasta! The most common styles and types of pasta are offered as well as unusual and unique (such as chocolate! and sweet potato!) utilizing special spices and methods.
Green includes all styles of pasta including cavatelli and tagliatelle and gnocchi. Of course some styles require extra tools but Chef Green walks you through all of the steps.
If you love Italian food, pasta restaurants and hot filling dinners, then Super Simple Homemade Pasta if you you! I highly recommend this book to any pasta lover. Once you have made and cooked your own you will never eat store bought again!

One of the best step-by-step instructions for making homemade pasta that I've found! The photos are incredibly helpful, as they lay it out in each step. The recipes are simple, clean, and cover a broad range of pasta types. I will now be scouring shops for the tools used in this book! I loved it and can't wait to get started.
4-4.5 Stars! Wow! Who knew there was so much to consider when making homemade pasta. If you love pasta and want to make it yourself, from scratch, this is a really great book for you. I learned so much from this book, possibly even a little too much, if that’s possible? The recipes all look delicious and the pictures are mouth watering! Highly recommend this for any pasta making beginners.

I absolutely adored this book. It's very well written, almost encyclopaedic in the detail. There are lots of photos making the recipes and techniques easy to follow. There's plenty of information regarding the history of pasta making and the evolution of the different types, shapes and preferred methods of preparation. It's a triumph of a book. A well deserved 5 star score.

Although there is good pasta available in grocery stores, there is something special about pasta made fresh at home. There are dozens of cookbooks available on making homemade pasta, but this excellent cookbook takes pasta making to a higher realm. It includes pasta made with different flours, flavored pasta, and dumplings. There are instructions for mixing pasta dough by hand, using a mixer, and using a food processor. The dough can be rolled out by hand, as well as with a pasta machine or extruder, and Green includes instructions to make it easy.
There are sections on pasta making tools to make all of your favorite shapes, as well as your favorite stuffed pastas. The instructions are step-by-step so they are easy to follow. There are a few recipes for classics such as lasagna (very different than what is served in many US homes) and Cannelloni, as well as a few good sauces. The focus of the cookbook, however, is on making the actual pasta. Green presents dozens of shapes, many that are not so well-known. There are also beautiful photographs of the different pastas and each step while making them.
Reading this cookbook, and finding that everyone can make excellent pasta at home will inspire pasta lovers everywhere to make something new almost every day. There are enough recipes to keep cooks busy for months or longer, and families and friends happy. This book is an excellent choice for anyone who wants to hone their pasta making skills. Highly recommended.

An amazing guide to making home made pasta. While I have tried other recipe books in an attempt to make my own pasta at home, Aliza Green explains the pros and cons of various wheat flours, and the importance of proper hydration. Step by step instructions, along with generous photos, really make the process look easier than other pasta making books. She also includes a number of recipes for flavored pastas, such as spinach and asparagus, and also stuffed pasta and various gnocchis. Looking forward to trying out many of these recipes.

I really love this collection of recipe books from Quarto Publishing, so when I saw they had another offering, I jumped at the chance to review. I have made fresh pasta exactly once in my life, in a class, which inspired me to buy a pasta roller that I never ended up using. I was hoping this recipe book would help to persuade me to finally pull it out of storage.
This book is pretty comprehensive on the "how to" of making pastas, all kinds of pastas, from sheet pasta and cut pasta to hand rolled and filled. The book explains the different flours used in pasta making and which pastas they're best for. I'm a very visual person, and I love that there are pictures that accompany the step-by-step instructions, both for the dough techniques in the beginning and continuing in the recipes.
Most of the recipes included are for how to make the pastas themselves, including different ways to flavor the dough. There are a handful of meal recipes where the pasta is used, like lasagna, ravioli filling, and tortellini. There are also suggestions on what to do with each pasta and recipes for sauces.
This book should be a staple to have and is great for those wanting to know how to make specific pastas, but if you're looking for specific recipes to use these pastas for, you'll want an additional book.
