Vegan Pasta Night; A Modern Guide to Italian-Style Cooking by Brianna Claxton was a delight and quite delicious! I have made several pasta dishes from this book and they were all a hit!! A delightful book that belongs on every library shelf! I felt so lucky to get a copy for myself! I have shared on my goodreads, bookstagram, and booktok!

Vegan Pasta Night: A Modern Guide to Italian-Style Cooking is really more about the sauces and the fillings than the pasta. There are few fresh doughs - a basic semolina pasta dough, a flavored dough, and gnocchi. The author includes good instruction on how to use a pasta machine to achieve the right size and shape for the different filled recipes. This cookbook has a lot of homemade sauces, cheese alternatives, and meat alternatives. From staples like the fresh pasta, vegan cheeses and meats, to baked pastas, filled pasta, fancy pasta, and Italian mains and sides, there are many different types of dishes to make. Some of the more interesting recipes are Baked Rigatoni; Roasted Fennel and Sausage Rigatoni; Ricotta and Chicken Mezzalune with Marsala Cream Sauce; Wild Mushroom and Sage Risotto; and Stuffed Banana Peppers.

With a name like Vegan Pasta Night, readers would not expect to find dishes with no pasta. Personally, the cookbook should have been named Vegan Italian, as the fillings and sauces are the stars and not all recipes include pasta.

I did appreciate that the author did not cut corners and everything is homemade. I was disappointed that the author did not include a gluten-free pasta, as I cannot have wheat. I wish there had been more photographs and more substitutions given. Overall, Vegan Pasta Night was not what I was expecting, but other readers might enjoy the homemade options.

A thoroughly enjoyable cookbook about making vegan pasta, sauces, cheeses and meat alternatives. The recipes I tried were very good and I will definitely be making them again. This book is more for the American Italian, than the traditional Italian recipes I am more familiar with. The introduction to vodka sauce was a revelation. However it was a shame that more of the traditionally vegetarian pasta sauces such as "alla norma" or "arrabiata" were not featured. Will definitely be introducing this book to friends.

Game changer for vegans for sure. Lots of the classics reimagined to fit in the vegan diet. Easy to follow recipes with ingredients that will be easy to find for a vegan.

As a new vegan (and old vegetarian), I really wanted to like this book. I was hopeful that it would be packed with quick, easy, and healthy dishes. However, all of the recipes are "from scratch" - everything - the pasta, sauces, vegan butter, vegan cheeses, and even vegan "meats". Yes, I could buy pre-made versions of these ingredients, but that would be very costly and not at all healthy. For someone with a lot of extra time and who is less health-conscious than me, it might be a hit. On the plus side, the photographs are gorgeous!

For a while it seemed like every vegan cookbook I picked up shared the same recipes with minor, hardly life-changing adjustments, which resulted in some pretty uninspiring ideas. Vegan Pasta Night by Brianna Claxton is the complete opposite of those cookbooks. She has created something exciting and drool-worthy with Vegan Pasta Night that takes the reader beyond just pasta.

A part of me has always wondered why make pasta from scratch when you can buy perfectly good dry and fresh pastas at the store? A new part of me thinks I might give making my own pasta a try because what’s the absolute worst that can happen? (I’ve cooked for years so I’m pretty sure that I won’t set my kitchen on fire! 😉 ) Vegan Pasta Night goes beyond making your pasta from scratch to incorporating homemade vegan cheeses and meats.

My first introduction to how to make your own vegan cheese and meats is in this book. Claxton gives recipes for parmesan, two mozzarellas, goat cheese, and burrata, the latter of which is definitely intriguing. I focus on these vegan cheese and consider making them because cheese is the reason why I am not vegan. But if I could have nutty, melting goodness that I didn’t have to feel guilty about? Oh, I am all over that!

Equally intriguing is the idea of making vegan meats from scratch. I have never tried to make my own seitan although the thought has definitely crossed my mind. Claxton’s recipes seem like something I would like to try. And, probably the biggie: she uses jackfruit to make a version of short ribs–maybe there’s a vegan ropa vieja in my future (Sorry, yes, I know it’s not Italian)!

Savory sauces, appetizing sides, vegan caponata and pestos? It’s all here and different. I haven’t mentioned many specific dishes because I think the blurb does a good job with that.

The only thing I’m put off by is that some of the dishes seem time consuming, especially if you consider making your own pasta, cheese, meat, and sauce. (Focaccia, I love you but why will you have to take 24 hours?!) That said, she does have a section at the end where she recommends replacements that you can easily get from the shop. And some of the recipes really are weeknight friendly like puttanesca and cacio e pepe.

I have bought very few of the cookbooks for which I’ve received an ARC (sorry, folks) because they just haven’t inspired me to but this one is probably going to find a place on my shelf. I wonder if she has a recipe for vegan pepperoni? If not, hopefully soon.

Vegan pasta and vegan cheese?
My two weaknesses, so I had to request this.
I devoured it twice in one day and now I want to make some on my own, it might not be as pretty and professional like in the book, but I feel empowered by the recipes and the gorgeous photos so I will at least try.
There's lots of interesting tips for the colored pasta, several cheese types, sauces and even vegan alternatives for meat, seitan and others. Also some other recipes as well, but I was mostly interested in these.
Pasta is life!

This is a book of such droll worthy proportions that Nigella herself would be proud. Those of us not yet converted to the vegan cause could surely be swayed by the decadent imagery contained within these pages. It's not a book that necessarily has recipes you will conjure up on the spot, but with a bit of planning, a bit of time, and a labour of love, you will certainly not regret the effort invested. I absolutely could not resist trying out the 'Penne Arrabbiata Parmesan' and it was every inch as good as it looks (even the non-vegans in my household couldn't fail to be impressed!)

I 100% believe these is nothing more comforting that a nourishingly full bowl of pasta, and as such this book is a must have - so many classic and original ideas and the author's passion (and talent!) so clearly shine through. This is a beautiful book that would be fully deserving of a spot on any given coffee table!

I was really interested to read to this cookery book, Vegan Pasta Night: A Modern Guide to Italian-Style Cooking by Brianna Claxton, because I already make my own pasta and sauces from scratch. I really wanted to see how to make traditional Italian pasta dishes plant-based.

First of all, the photographs are stunning in this book - I just wanted to dive in and eat all the dishes! The book is divided in the following chapters: Fresh Pastas, Sauces and Other Essentials; Vegan Cheeses; Vegan Meats; Baked Pastas; Fancy Pastas; Filled Pastas; Breads and Spreads; Sides and Staples. The recipes are very clear to follow concise instructions.

I would say that the yields are high and I found myself halving the ingredients to make smaller yields. Alternatively, sauces could be bottled up to be re-used later in the week for a quick dinner. I’ve tried out the Vodka Sauce, which is a taste sensation, and is my now go-to red pasta sauce! I can’t wait to try out other dishes in coming weeks.

Chef and entrepreneur Brianna Claxton (Plvntfood.com) has created a book that addresses all of your pasta needs.
From Baked to stuffed, to sauces, to meats, Brianna has included clear instructions and beautiful photos depicting
the very basic and the favorite dishes of Italians (and the rest of us) everywhere!
We all know that vegan dining can be difficult, but thanks to Brianna, you can truly recreate any Italian based dish that you desire.
I especially loved the baked dishes and the vegan cheeses. The photos are truly amazing!
If you love Italian and are vegan or like to practice vegan eating this is the book for you. #Quarto

A great book about everything pasta for vegans! I have never made pasta at home, but I should, and I will! This book inspires me to do it soon. There are many delicious sounding recipes I will try as soon as possible, like ricotta, mascarpone, and lemon cappelletti with pistachio cream.

I have been waiting for a pasta book for vegans, and this is it! Some of the recipes look really fancy, so let's see if i can get hold of all the ingredients. I am also thankful for the Caesar salad recipe, on my list of must-cook recipes! Thank you for this book!

I’m not a vegan, yet. But I don’t always have eggs available to cook with, and I’m not the biggest fan of egg pasta anyway. I’m looking forward to trying all the recipes in this book, especially the vegan ground beef.
