As a lapsed vegetarian with vegetarian members in my household, I'm always looking for fresh, new meal ideas. And even meat eaters can benefit from meatless meals as often as possible. This cookbook had one of my favorite features for cookbooks: a photo with each recipe! It's nice to reference just how your completed recipe should look. There are various chapters devoted to breakfast, lunch, dinner, snacks, and desserts. What more do you need? My favorite recipes came from the breakfast and brunch chapters. The recipes were easy to follow and made with every day ingredients found at most grocery stores. This would make a great addition to anyone's kitchen shelf.

Honestly I think this one just wasn't for me. I'm not vegan but I am very interested in trying vegan meals, so I was excited for this book. In the end, I thought this specific collection of recipes was my real problem.

I genuinely couldn't figure out who was the target for this book. Overnight Oates, smoothies, some vegetable spread on toast? Given how easy to find online and basic (in a good way!) these recipes are, it would make sense to see them in a book whose target is complete beginners. But then we also have the cinnamon rolls, the nut roast, ... and those looked far more advanced to me. Obviously I'm not an expert so I might be wrong but the selection just didn't feel coherent. And while we're on the selection, I was very surprised by the scarcity of pasta. They're vegan and incredibly versatile. Homemade ravioli and some kind of spaghetti sauce would have been nice.

Then it was time to try come of the recipes. For starters, I tend to eliminate everything that uses some kind of protein powder or nutritional yeast. It's spendy and I don't like it. So that rules out a good chunk of the book. I had never heard of Kala Namak, sounds great, but judging by the puzzled looks I got from clerks in every store I tried, I won't find it where I live. I eventually found several simple recipes to try (the sweet potato gnocchi, the roasted pepper dip (no, I didn't try the tofu sandwich, because it's a tofu. Sandwich. In a cookbook) and the smashed peas on toast) and they were nothing to write home about. I didn't keep a single recipe from this book in the end.

And this was more of a small pet peeve of mine but I would have added a page about seasonal vegetables. I understand that maybe listing them was not possible due to the book being available in different countries but at least a few indications on how to get this kind of information? With so many people trying veganism for ecological reasons, I thought it would have been a big help.

On the plus side, the pictures looked yummy and did a great job of showing every dish. I also very much appreciated have the conversion from oz and pounds to grams. Incredibly helpful and should be standard in cookbooks everywhere.

To summarize, I'd just say I couldn't figure out who the target audience was and that's what gave me this feeling of discrepancy between the recipes featured. All I can tell for sure is that apparently, it wasn't me.

As a vegan, sometimes it's really hard to find a good vegan cookbook, but I really liked this one. I tried some recipes and they were delicious. Great book!

My sister waffles between vegan and vegetarian, and I'm always looking for tasty recipes we can make together. This book offers tasty, healthy, recipes that can be enjoyed by vegans, vegetarians, and those looking to reduce their meat intake. The recipes are flavorful and nutritious.

One can never have too many vegan cookbooks! This is another I'd love to add permanently to my own shelf. I found a good selection of recipes that appeal.

Nourishing Vegan Everyday is a fantastic cookbook that features a variety of mouthwatering vegan recipes. I loved the variety of recipes and beautiful photographs.

I’m not vegan and it’s not something I strive for. That being said I do like to incorporate plant based meals into my family’s diet. This book was incredible. There are pictures with every recipe. The ingredients were easily accessible. The recipes were well written and easy to follow. There are sections with the 3 main meals but then there’s extras (like brunch & special occasions to name a few).

For me to give a vegan cookbook 5 stars is a rarity but this one definitely deserves it.

Nourishing Vegan Every Day is a comprehensive and colorful guide to eating a plant based lifestyle. The book is loaded with tips and tricks to make veganism more accessible and achievable for folks of all different backgrounds and lifestyles.

The contents are broken out as follows:
Breakfast - Black Bean and Smashed Avocado Breakfast Burritos have my name all over them!
Brunch - Banana-Caramel French Toast is speaking to me.
Lunch - Sweet Potato, Kale, and Sun Dried Tomato Salad is first on my list.
Dinner - I can't resist a Sesame-Chile-Garlic Tofu Noodle
Snacks - Blueberry Wagon Wheels!
Sweets - everything looks amazing and I love a vegan dessert option
Celebrations - Garlic-Tahini Whole Roasted Cauliflower

Would highly recommend for anyone who is looking to eat more vegan recipes!

Some excellent vegan recipes which is nice as my daughter is vegan and I always worry about her diet. We tried some of the ideas in this book and they all turned out well. The book is nicely organized with appetizing pictures. Definitely a good choice for vegan’s.

My family and I have decided for personal reasons to begin a vegetarian / vegan journey with splashes of seafood incorporated, so I guess we eat a Flexitarian diet.
This book has beautiful photos to cause your mouth to salivate for each recipe. The recipes are easy enough to follow and the ingredients easy enough to find at a Trader Joe's or Whole Foods. You will also find a swap section instead of using eggs use this etc.
But where this book falls a bit flat for me is that the recipes aren't 100% healthy. By the way it does literally lay flat on your counter and doesn't take up much space. (Well I had to add that since we are talking about FLAT :) Let me move on.

It was a bit disappointing to find this is not necessarily a “healthy diet” book. It is more so a vegan cookbook for people who enjoy rich flavors, and might not be too bothered by things like calories, fat content or by eating by the rainbow. Lastly let me add this book was missing one factor for me and my family calorie and nutrition details from each recipe. I have a spouse on a renal diet and I try to be conscientious of caloric intake so this book fell short there. I was wondering was it designed this way because the author is a "food stylist"

All in all, I would recommend this book because the recipes might be new to some and those of us not looking for new recipes can still find something in this title.

⭐⭐⭐⭐ -- Great cover on this one!

With prices rising on everything lately, I am always on the lookout for great, quick and tasty vegetarian/vegan dishes. This book gave me that is spades!

This cookbook is divided into the following chapters...

-- CELEBRATIONS</b>

There is also an introduction that covers things like "key ingredients, q&a, and equipment". The recipes themselves are well laid out and easy to follow. There are plenty of photographs making it a visually pleasing book to flip through.

I have tried a few of the recipes and loved the "mocha caramel" overnight oats. The 'cheesy broccoli waffles" were also super delish. "chickpea tabbouleh with lemon tahini" made a great lunch dish to share with friends. The "cashew cauliflower and spinach daal" was loved by even my pickiest eaters, and the "orange cardamom layer cake" got all thumbs up from everyone that tasted it!

This is definitely a cookbook you will be reaching for again and again!

I am not a vegan, but I am always on the hunt for new vegan recipes to add to my go-to standbys. This book is full of creative recipes, mouth-watering photos, using ingredients I love! I've rated the book a 4 out of 5 because I rarely eat dessert, so I was hoping for more savory recipes.

As someone who rarely picks up cook books I found this one great for many reasons. Firstly its layout meant for the most part I could see the ingredient and the method on the same page..

Though I believe it is in American English which meant I had to google a few items, I just loved the simplicity of the recipes and steps.

All of the recipes sounded delicious which is sometimes hard with Vegetarian and Vegan food. I read the recipes but no surprise with my sweet tooth, I loved the sweet recipes the most..

Being a Vegetarian rather than a Vegan also means that there is even less work for me.
Can't wait to try the French Toast under the Brunch section.

There is no better time to review a vegan cookbook than in January! January also means Veganuary for many people who want to try out a plant based diet. Dedicating a whole month to try out delicious foods without harming animals. I'm celebrating my 6th year as a vegan this May so I'm always happy to talk about this big aspect of my life. I started going vegan for the animals but I quickly learned that living vegan also comes with lots of other benefits for my own health and the planet. 

This cookbook is filled with many nourishing and delicious meals. If you like savoury, like I do, you'll find a variety of meals for every time of the day. If you have a sweet tooth Amy also got you covered with lots of sweet breakfasts, baked goods and mouth watering snacks. 
There are also some more extravagant recipes like a cashew cheese but everything seems very doable without a lot of expensive or unknown ingredients. 
This book is great for people new to a plant based diet but also for people who are living a vegan lifestyle for some years now. I absolutely enjoyed this cookbook and I'm definitely getting my own copy because there are so many more recipes I want to try!

Universal appeal for cooks all around the planet. I am definitely going to prepare several of these dishes for myself and the family. Plant-based recipes get a lot of slack from omnivores and this book just might be the bright solution to a vibrant discussion about dietary choices. Just ate smashed peas on toast with garlic mushrooms today. An example of climate-change-friendly options in this book.

Thanks to NetGalley and the publisher for a chance to read and review this book. I found this to be a fun and easy read. The recipes seem uncomplicated and tasty. Reading about the authors journey was interesting and the pictures are beautiful.
