The Everything One Pot Mediterranean Cookbook by food blogger and restaurateur Peter Minaki offers 200 easy and delicious Mediterranean recipes designed to minimize hands-on cooking time. After a brief introduction to the Mediterranean diet and an overview of the main ingredients and equipment you’ll be using, Minaki gets right to the recipes.

The recipes are organized into seven chapters: skillet dishes, sheet pan and roasting pan dishes, Dutch oven and stockpot dishes, slow cooker dishes, pressure cooker and Instant Pot dishes, baking dish and casserole dishes, and desserts. Each chapter begins with a list of recipes for that chapter. Recipes are clearly written with helpful notes and include number of servings and detailed nutrition information per serving. Most of the ingredients should be easy to find.

Those who are motivated to cook by seeing photos of the finished product will be disappointed. This book contains a few photographs of finished dishes, but most recipes are not pictured. There are no process photos either, but most of the recipes are simple to make if you have basic cooking skills.

I’ve been delighted by all of the recipes I’ve tried so far. The Bianko from Corfu (whitefish fillets cooked over vegetables), the Mediterranean Sheet Pan Vegetarian Dinner, and the Balkan Sauerkraut Rice with sausage were excellent and will become part of our regular rotation. The Caldo Verde (Portuguese chouriҫo soup) was also good. The Byzantine Fruit Medley is a nutritious, easy to make treat that tastes delicious. The Sicilian Whole Orange Cake contains more sugar than we normally eat but was a lovely treat (we made the gluten free version with almond flour).

The back matter includes standard US and metric measurement conversions and an index that includes both ingredients and recipe names.

This cookbook offers plenty of simple, delicious recipes. I highly recommend it.

A great insight into easily embracing Mediterranean cooking. Tidbits of facts and tips are sprinkled throughout. Few of the recipies have pictures.

Great cookbook. Love that it gives an overview of the Mediterranean diet before getting into the recipes. Recipes seem simple enough and the tips and fun facts spread throughout are interesting

This is very much a Greek cookbook. Great simplification of classic recipes and updated versions for weeknight meals. Almost all recipes include seafood or chicken. There are some vegetarian ones but this is not the cookbook for those with shellfish allergies!
I really enjoyed the sheet pan recipes and some unique flavors and spice combos.
Then recipes are well formatted and fit on a single page. The pictures are beautiful! Formatting in the ebook was good.

I used one recipe from this book already and I think it is a excellent recipe book for Mediterrain Cooking. Lots of good ideas and well written. I'd recommend to anyone looking to try the Mediterrain Diet.

I'm always looking for easy recipe ideas that are also healthy. I love eating the Mediterranean way and the fact that these recipes were so simple, is a big plus. I found many that will fit in nicely with the weekly meal planning.

So yummy! Excellent recipes that get you out of your comfort zone, but with favorites that will warm your heart in a new way. I am excited to get cooking with some of these ideas.

With all the rave of how great the Mediterranean diet is - I had to get some recipes ASAP.
As of a mom of 4 (18-25 years old kids) and a super picky husband, finding recipes that are healthy and delicious is daunting.
Getting all my kids at the dinner table is challenging as they have crazy work schedules, so when we do sit to eat as a family, I am so happy to see them enjoy a meal - feeding my family is my way of showing love! A few recipes will be added to my house's "rotation" of meals!

I found quite a few recipes that my family agreed were delicious! And making them all in one pot was honestly a bonus. Clean-up after dinner is my nemesis, so a fast clean-up is the best!

Thanks to NetGalley for this ARC. I did find many recipes to try in here, but for a Mediterranean cookbook it seemed to me to have an awful lot of pork and beef and chicken. It felt a little unbalanced to me, but that could be because I am a vegetarian.

I think this book can be very useful and if you have diabetes and want to follow the Mediterranean diet it will be of great help. But I was more interesting in Mediterranean easy and inspiring recipes and this book doesn't have a lot of photos... My bad !

Thanks to NetGalley and Everything Publishing for this EARC. I work 10 hours days with a 40 minute each way commute. I am always looking for easy one pot recipes I can use for my meal prep for work lunches. I have always been curious about the Mediterranean Diet and this cookbook was a great introduction into it. I really like that the book was sorted by each type of cooking type. I tested out 3 recipes for my meal prep this week. I made the Italian Sausage and Zucchini from the skillet section, the Shrimp Giovetsi from the Oven section and the Slow Cooker Pork with Leeks from the Slow Cooker section. All three recipes were easy to follow with great directions and break down of ingredients. All three were very tasty, my fave being the Italian Sausage and Zucchini. I really liked how each recipe had the nutritional breakdown chart on the side of the recipe. I only have one con for this cookbook is the lack of pictures. I am one that picks a recipe a lot of times with my eyes first before reading the recipe.

I own every single one of Mr. Minaki's cookbooks so this one was a no-brainer to request to review...plus he is Canadian so gotta fly the flag!!! One pot means AMAZING as I am the only one who does anything in our kitchen (sorry, he does make a mess) and healthy as it is the Mediterranean (I can never type that correctly...thank you #spellcheck) diet. I get asked for the Med-Di (as I call it) almost every day so this one will be on the shelves of our library soonest and mine at home.

HIGHLY recommended.

As someone with a kid, I really appreciate a meal that can come together in one pot, even better when that meal placates the agent of chaos known as my child.
We made a few recipes from this book and each one was simple, outlined the nutritional value, stated healthy swaps, and was loved by our toddler. This is definitely going on my list to buy!

This is an excellent introduction to Mediterranean cooking. If you are like me, a busy working mom wanting to prepare delicious and healthy meals to feed your family (or just yourself), this is a great recipe book for you! Peter Minaki included a diverse range of delicious recipe selections with ingredients that are not difficult to source. The recipes themselves are written in a way that is unintimidating and simple to follow. You don't need to be a master chef or have a bunch of super fancy equipment to recreate the recipes at home. Importantly, Minaki also focuses on the importance of not just eating but taking the time to savor and appreciate food. I also greatly admire that the author included evidence-based studies to support their writing, as this lends reliability and authority in regard to nutrition. I would highly recommend this book to anyone looking to make nutritional/health lifestyle changes, include more Mediterranean dishes in their rotation of meals, or simply add convenience to their daily food prep without sacrificing time or health.

This was a very detailed and delicious cookbook! I loved exploring the many recipes I hadn’t heard of before. One thing I would have enjoyed were more photos. Some recipes I read through I couldn’t visualize. Overall, a great read!
