Eat the Rainbow by Harriet Porterfield is full of amazing recipes. Easy to follow and great storied. The images are bright and fun

This cookbook was very visual, with plenty of bright, colorful photos of the various dishes. There was information and tips to go with each recipe.
I do not always get a chance to go through recipes from recipe books before my time runs out with them. This is not a large volume. It has all the right pieces to make it a quick browse before settling in to make any of the recipes.
I must admit that I have only bookmarked a few and not carried out the recipes, so I cannot talk about the efficacy of the instructions. I can only talk about the accessibility and the fact that the recipes use simple ingredients without relying on mock meats.
There are vegan/vegetarian books that focus more on the aspect, and there are more health-oriented ones that are not as accessible to ordinary people like me (interest-wise, at least). This book strikes a good balance, and that is the most appropriate praise I can think of.
I recommend this book to people looking for something different to cook.

This cookbook is visually appealing, including photos of the end result for each recipe. Because of some health issues, I can't eat some of the ingredients but there were several recipes I would consider making. There were good tips throughout, which would make this useful for someone trying to eat more vegan or vegan inspired meals. I don't usually worry about the nutritional values, but it would be nice to include that information in this type of cookbook since I really can't see how I would get enough protein. That's not an issue for everyone though. 3.5 stars
I want whomever the food stylist for this book to make every one of my meals from here out. Omg I think even the toughest meat eaters would love these recipes. Easy, accessible and healthy without losing the flavor.

Really creative ideas and wonderful photography! As a vegan myself I feel reinvigorated and inspired to try to eat the rainbow and reap its benefits!

This book looks really beautiful - the photography is gorgeous - and the recipes I tried were simple and used a good variety of ingredients. Unfortunately the results were a little unexciting and bland. We’re not actually vegan though, just wanted to try to eat more plant-based, so perhaps if you are vegan the recipes will appeal more. Having said that, I may well try some of the puddings in the future - the photos are tempting.

Recipes have a brief introduction followed by prep time, ingredients and the actual recipe. It has different range if recipes.

This is a solid vegan cookbook with a lot of heart. The author is British so some food items weren't as easy to get (you need an Asian store near you) but the metric system and vegetable names were localized (e.g., capsicum to bell pepper, Celsius to Fahrenheit). This is another vegan cookbook that is focused on taste rather than health - recipes use a lot of oils, coconut products, and sugars.
The book breaks down as follows: introduction, equipment, brilliant breakfasts and smoothies, joyful brunches, magical mains, kaleidoscope salads and sides, diamond desserts, mindful cakes and bakes, colorful kids, every day essentials, and an index. Nearly every recipe has an accompanying photograph for the first part of the book (fewer photographs by the end recipes) and tips are provided for e.g., leftovers and substitutions.
Each recipe is in large type with a large title, short introduction and then serving size, prep time, cook time. Ingredients are listen on the left and paragraph blocks provide the steps. Tips round out the bottom and then with a large photograph on the next page. There is no nutrition information provided. The recipes at the end of the book have much fewer photographs.
Recipes include: smoothies and oat bowls, raspberry jam and peanut butter crepes, cosy cauliflower and coconut curry, sweet and sour tofu bowls, lemon linguine with kale cashew pesto, smoky sweet potato pizza, smashing sushi sandwich, spiced crispy chickpeas, warming winter squash soup with toasted croutons, tropical creamsickles, pink beet and chocolate muffins, rainbow pitta pizzas, easy banana pancakes, simple seeded bread. vegan parmesan, and more.
As noted, this isn't necessarily a healthy vegan cookbook and focused more on taste. The recipes use regular flour and pasta (not whole grain), and a lot of different sugars (from powdered white to agave). It also uses a lot of coconut oil and other oils, as well as coconut products like coconut milk. As such, a lot of recipes are fairly high in fat and calories (hence, the likely reason there is no nutrition information given). It is a reminder that vegan food can be delicious but also problematic for weight gain and metabolic syndrome issues.
Another nitpick would be to have numbered steps in the recipes rather than blocky paragraphs. That isn't to say the recipes aren't easy to make or to read. Certainly, if followed exactly, the recipes tasted quite good (though a bit too sweet since I don't use much sugar in my food any more).
In all, a nice 'comfort food' cookbook full of the usual recipes that takes regular foods and turns them into vegan options. There is a lot of heart here and the author clearly loves what she does. Reviewed from an advance reader copy provided by the publisher.
Eat the Rainbow is a beautiful collection of plant based recipes. The pictures are drool worthy and full of amazing and fresh ingredients. It makes vegan look glamourous and healthy. The smoothie bowls are delicious and so refreshing. This cookbook will leave you craving the rainbow of fruits and vegetables and the recipes will satisfy those cravings. I'll find myself going back to these recipes repeatedly. Thank you!

This is a lovely cookbook. The recipes are varied and full of nutritional benefits, and the pictures are beautiful.

Great recipes to help to eat better. I love to cook healthy meals for my family, so I loved all the colorful dishes presented in this book.

Such a pretty recipe book! That might sound a bit weird, but it’s true. I need this book, because I am useless with decorating food, especially desserts. I almost felt a bit ashamed when I read this book, because I realized I am even worse at this than I thought. Nice recipes though, and somehow put me in a good mood to see how creative some people can be. A bit of a different cook book, and I think many people who appreciate presentation, and something different, will enjoy it very much.

I absolutely loved the bright pictures and the healthy recipes. I am a big fan of being able to use fresh wholesome food in my recipes and these recipes definitely deliver. One of my other favorite details was at the bottom of pages there was an explanation of why she uses certain ingredients and their benefits. I also loved that she gave “tips” at the bottom of the page on how else to use certain ingredients or how to store ingredients.
This was absolutely fantastic and I will be purchasing this cookbook once it publishes!
This was such a deliciously colorful cookbook, with gorgeous photography and recipes for every taste.
Why eat the rainbow?
Because vegan food isn't some boring meal and it can be full of colour and vitamins, tasty spices and sweet fruits and veggies, legumes of all sorts and raw or baked, you can make your every day special and full of nourishing and nutrient rich meals, if you only try making at least couple of the recipes from this cookbook.
The author posts photos and reels of these mouthwatering creations on Instagram and they are worth checking out.
This British cookbook has lovely photographs and is very much focused on vegetables as the star. Some of the writing and measurements are British which makes sense. There are measurements included for American cooks. There is some language of the food as medicine type. Most recipes are approachable and achievable by the home cook. Some are more involved but would be fine as celebration meals for those days when more time can be devoted to cooking
