Just being new to the ownership of an Instant Pot, it is great to have a recipe book like this. Well laid out with plenty of choice of ideas that I am enjoying trying out.

This is a great cookbook for anyone interested in instant pot recipes. I've had an instant pot for a couple of years but I've honestly barely used it - it's seemed a bit intimidating to me. I love that I now have a great collection of healthy recipes to try out - all of which seem very simple to follow and use ingredients that are easily found at the grocery store. I can't wait to try them out!

I enjoyed trying out the recipes in this cookbook as they were unique and gave my husband and I something different to try. Some of the recipes had more steps and ingredients for my preference but the food was good so it was worth it in the end! Especially enjoyed the coconut curry pork bowls and spiced orange chicken bibb wraps. Would recommend this to anyone with an instant pot!

Almost everybody could stand to lose a few pounds. But those who really love food (and who doesn’t) don’t want to sacrifice by eating commercially prepared food from professional diet sites, or go on a strict starvation diet. The Quick and Easy Instant Pot Diet Cookbook: Make Weight Loss Easy with Delicious Recipes in an Instant is an excellent cookbook for those who want to cook fresh meals that can be shared with family members and make them in an Instant Pot or electric pressure cooker. The meals contained in this excellent cookbook are only 350 calories or less, so losing weight, while eating scrumptious meals will be easy and quick.

The recipes are written in the traditional manner with the ingredients listed first, followed by succinct, easy instructions that will be a cinch to follow for both beginning and advanced cooks. The cookbook includes sandwiches and wraps, main dishes, salads, and desserts so there is plenty to choose from.

The only drawback to this cookbook is that there aren’t enough photographs. While there are several beautiful, professional photographs, every recipe isn’t picture red, and that is a shame because the recipes are so appealing that cooks, especially hungry ones who are trying to lose weight, will want to see what the end results should look like.

All told, however, this is an excellent cookbook with plenty of unique recipes to help drop a few pounds and still be satisfied with good food.

Easy and interesting recipes to spice up your cooking. You find many recipes which are fast to make your dinner table or your next day lunch.

This book has recipes that are easy to follow for the instant pot. This is a short cookbook but does offer a variety from sandwiches to desserts. There were no images to refer to in the book. Having the nutrition facts for each recipe is very helpful if one is on a diet.

All of the recipes are quick and easy. The ingredients are easy to find, but some dishes have quite a few. Each recipe has a nutrition list included. They are quick and easy to make and the instructions are not overly complicated. One thing that I missed was that there were no photographs included in the book. While this is not necessary, it is always appreciated in a cookbook.

I'm very much looking forward to getting this cookbook in print. There are a lovely array of fresh-sounding recipes and a few standards with new twists, and the calorie counts are fantastic. I do wish the author would reconsider calling it an "instapot" because it definitely takes away some of the cleverness otherwise exhibited in the recipes.

Someone once said, “I love me a good cookbook.” Can’t remember who that was or is, but I do know that it’s definitely true for me. While eating good food comes quite naturally for me (as well as the members of this family and our friends), cooking and anything related to cooking is one of those things that seems more magic than science. Something of an art, and not a skill that I’ve ever been able to master. But because I love a well-cooked meal, especially one cooked with love, my search for the elusive next recipe has spanned into about 5 decades of cookbook collecting. Quick and Easy Instapot Diet Cookbook is a delightful addition to that collection and one that will remain well used for a while.

Instapot Diet is broken into 6 chapters with each then having 6 to 14 recipes. In addition to have a simple set up for each recipe, Nancy includes handy notes such as “It’s important to let the cooked chicken rest for 10 minutes before chopping . . . it will go from tough to tender in jus those few minutes . . . those very important few minutes!” Now, I don’t know about you, but I truly can’t give an opinion on a cookbook unless I’ve actually tried to use it. So after sitting down and comparing what I had in the pantry to what may pique my interest I came up with the one recipe for each section that I wanted to try out.

“Sandwiches and wraps” had 7 recipes. I decided to try the Spiced Orange Chicken Bibb Wraps. This was my first recipe in the book which I tried and I was immediately impressed with the ease and flow of the instructions. A Handy note (cited above) complemented the steps. This, as well as all other recipes, included easy to read nutrition value table that helped me understand nutrient value and figure out how the caloric count impacted my remaining choices for the day. The resulting dish was quite tasty and will definitely be made again.

“Main Course Salads” had 6 recipes. We decided on the Lemon Ginger Salmon Salad. With limited, simple ingredients I generally stock in the kitchen, I thought this would result in a rather bland offering. To my delight, the result was a light but very flavorful and elegant dish. The addition of the jalapeno provided a bit of a kick that edged this recipe up a notch on our ‘love it!” meter. This main course salad will become a favorite for lunches and brunches that need beg for a classy, but with a twist, touch.

“One-Dish Suppers” had 14 recipes. One of my all-time favorite recipes is a Shepard’s Pot Pie. It seems there are as many variations on this savory delicacy as there are kitchens with ovens. For me, the classic pot pie is one that melds flavors harmoniously, while still allowing for a variation of texture, flavor nuances and richness. Nancy’s Shepard’s Pie in a Pot does not disappoint despite the recipe calling for that great ‘nothingness’ of flavor – turkey. Whether it was the (surprise!) Zucchini, the chili powder, or the evaporated milk that did the trick, I don’t know, but this is certainly a do again in our house. The most beautiful aspect of this recipe is the ability to deviate from the basic recipe here and there and still have an amazingly delicious outcome!

“Soups and Stews” had 9 recipes. I decided to try a little bit in the Coconut Curry Pork Bowls. Normally, I am not a great fan of mixing fruit with meats and cilantro. However, the read of this recipe sounded enticing enough for me to take the chance. Quite frankly, I still think pineapple, raisins, and cilantro are too much of a good thing. I just wasn’t a fan of the resulting flavor that just seemed to have too much piled on. I’m not yet sure I’ll toss the recipe to the side, but I also don’t know how I would go about trying to make this more palatable for us.

Not to be overlooked in the same category of “Soups and Stews” is the CattleTrail Chilli. Whatever was too much in the Pork Bowls, was just perfect in this dish. The turkey, miller lite bear, and honey blended nicely. I did opt to leave off the cilantro. This was the perfect lighter version of classic comfort food.

“Protein and Vegetable Combination Dinners” had 6 recipes. The recipe of choice was the Greek Lemon Chicken with Asparagus. Not only did I have all the ingredients on hand, but I was also looking for something that could be easily prepared and tasted like Spring. I was NOT disappointed. Again, and this can’t be stressed enough, the flow of the directions was super simple and left no room in looking for a missing step. All too often recipe books assume the reader reads between the lines and automatically fulfills a missing step. Nancy does not make that assumption. She captures each recipe I tried in its entirety.

“Sweets and Desserts” had 6 recipes. I opted not to make any of these as I was running out of time for the review of this book. However, each beckoned to be made as they read rich and decadent. Come Autumn, I’ve already put in 2 markers to try the Apple-Cranberry Oat Crumble and the Pumpkin Pot.

My only whine on this book, which I received as an ARC in exchange for my unbiased opinion, is that it was an ebook. There’s still something to be said about feeling paper, smelling the freshness of the paper as the pages are turned, and jotting down personal notes in margins to pass to future generations in this family.

This was a great book about quick and easy instant pot ideas. I really enjoy these and will definitely be making all of them in the future!

I didn’t even realize this was a diet Cookbook. It honestly doesn’t feel like it at all. It’s just a good, easy, cookbook. My favorite thing is there are nutritional information with every recipe. Least favorite? No pictures. I like to see a recipe before I try it.

Some great recipe odeas, but not visually pleasing. I really wish it was more colourful and had some pictures, but can't wait to try some of these out.

My instant pot has become one of my favorite small kitchen appliances. So, I was excited to review a cookbook designed around the instant pot that provides healthy recipes. This one is simply chock full of great recipe options and I look forward to making many of them. In addition, the cookbook starts off by giving the reader a quick overview about this kitchen appliance - - how it works and its benefits. This cookbook would be a strong addition to any cook's repertoire and would also make a good gift.

Some interesting & tasty sounding recipes and some more familiar. I tried out several recipes in my slow cooker and found them easy to follow and delicious.
A good book to dip into when needing inspiration, especially when, like me, trying to eat healthier.

I love my Instant pot, so I am always eager for new recipes! There is a fair amount of recipes in this cookbook, but not an impressive amount. I am very disappointed there are no images, it would really add to the cookbook. It is straightforward and dull. I didn't really get that this was cooking for weight loss. Measurement are also in the metric scale, which I always like in a cookbook. Overall there wasn't any recipes that wowed me, just average.

This cookbook had me at the title with buzzwords like quick, easy, instant pot and even diet. So does The Quick and Easy Instant Pot Diet Cookbook deliver on the promises of its title?

All the recipes use an instant pot, or other electric pressure cooker so check that one off. The instant pot by itself promises food will cook quickly so that adjective is accurate. Since full nutritional information is provided, I can see by the calorie counts that diet is an accurate adjective too. The instructions for each recipe, especially how to cook in an instant pot, are very detailed and clear. Most of the recipes are relatively easy for a great professional sounding result so I would agree with the easy adjective too. Now, why did I say “sounding”? Because there is a dearth of photographs within this book. By dearth, I mean none. Not one, which is unusual in a cookbook. However, if you can overlook that one issue, you will find some interesting recipes like Smoky Bacon and Pork Goulash and Upside-Down Chocolate-Crusted Cheesecake. In a diet cookbook? Yum! 4 stars!
