This was an interesting read for me. I am so used to a broader cookbook and it's kind of cool how these were organized. There's so many new recipes for me to try, as I've been trying to incorporate more veggies anyways.

Lots of fantastic sounding/looking recipes for making vegetables the star of your meal!

There are a lot of great tips and tricks peppered throughout the recipes. I like that they are catagorized and easy to follow. There isn't a lot of strange ingredients that would necessitate a shopping trip before trying one of the recipes. I always want more photos in a cookbook, but the ones that are included are wonderful!

Thank you to NetGalley, the author and publisher for a temporary, digital ARC in return for my review.

Thank you NetGalley and Quarto Publishing Group for this ARC. First time reading cooking book and this book gave me nice experience. I enjoyed it very much. This book offers mouthwatering vegetable recipes. Would love to try the halal versions, though.

Nicely divided into different types of vegetable with clear instructions and substitution options provided with every recipe. Pictures also look appetising. Recipes are at times a little overly complex, with lots of ingredients and often long prep times.

I love vegetables, but it can be daunting to think of different ways to prepare and cook them. This book comes in handy, especially as I try different veggie recipes for the kids. I'm looking forward to trying some of the recipes in this book and I definitely think it's worth purchasing for your cookbook collection!

A colourful and varied cookbook centring vegetables in each recipe. Chapters are broken down into vegetable type with good introductions, thorough instructions, and with beautiful pictures. There was a good selection of recipes and I particularly liked the ‘hard to love’ vegetable chapter which included great recipes on those tricker to cook with vegetables and the end chapter which included great dressing/sauce recipes. I would definitely recommend for any vegetable lover who is already a good cook.

Thanks to Netgally and White Lion Publishing for this advance reader copy of this cookbook!

"These pale roots and tubers are too often relegated to side dished and supporting acts, so I'm surprised that our deep love for them hasn't elevated their status to hero on the plate."

It's no coincidence I picked a quote from the chapter about potatoes – I've been on the lookout for a recipe involving sweet potatoes and decided this arc would have just the thing I'm looking for. And I was not wrong. "Love vegetables" is a great look for inspiration if you've got those greens in your fridge that you need last-minute ideas to use up, or if you're just looking to add more veggies into your diet.

Firstly, a very common appreciation I have for cookbooks that get it right. Covering different measurements! No need to convert ounces to grams or Fahrenheit to Celsius. All measurements are clear as day no matter which system you're using.

Extra points for an interesting choice of categorising the recipes. What I've typically seen with veggie-based cookbooks is going seasonal. However, given that seasons vary across the board, Shepherd has made the reasonable choice to group vegetables by their type. Looking for tender greens? Got it. Craving some of that acidity of tomatoes? Sorted.

Each recipe also has little tips to tweak things to your taste, giving you flexibility to make things the way you prefer. "Love vegetables" is worth keeping on your shelf for when you're craving more greens (or starches. Us potato lovers must stick together);

I love vegetable forward cookbooks that are organized by ingredients as it makes it easy to find a recipe for what I have lying around. This photos in this book are absolutely stunning and showcase veggies in a way that elevates them way past boring side dish status. As someone with a fairly modern but simple pantry I thought the recipes and ingredients looked accessible for the average cook.

Love Vegetables: Delicious Recipes for Vibrant Meals is a cookbook perfect for anybody trying to eat more veggies. While it’s not a vegan or vegetarian cookbook, most recipes can be easily adapted. I like the way the book is organized into categories by vegetables: Alliums, Hardy Greens, Tender Greens, Potatoes & Creamy Roots and so on. As spring is upon us and I’m eagerly awaiting fresh greens from my local farm share, I may try the Lemony Garlic Greens with Chickpeas or the 10-Minute Pea and Tahini Soup with Charred Lemon Salsa. This cookbook is filled with beautiful photographs and “puts vegetables at the heart of every recipe.”

This book contained so many great recipes! It really inspired me to look at new vegetables that are coming into season with fresh eyes and a new perspective. During a time when many of us are trying to eat more veggies, I think that books like this will do really well. Thank you for access to this ARC, I really enjoyed it!

Love vegetables? Yes I do. I eat a whole food plant based diet and I thought this cookbook would be leaning that way but it’s not. There is a lot of butter, cheese, and oil used in the recipes as well as ready made things like phyllo, pie crusts, shortcrust etc. so just know that if you lean towards a whole food diet you will have to make many adjustments. That being said, there are quite a few gems included here. The layout is nice and the photography worked well. I did gather quite a few new flavor ideas and am excited to explore more combinations.
