Lots of nice vegetable-forward recipes to help add them to your meal rotation. I think it would be improved with more pictures, since a lot of the recipes may be unfamiliar and you don’t know how they’re supposed to look at the end ha.

Lots of expected appetizers and salads of course, but plenty of full meals that will expand your repertoire and keep dinner tasty and interesting!

Après Market has vegetable categorization for the different vegetable recipes making it easier to decide what to make with what you have.
Although, I enjoy the recipes and there are so many recipes I am excited to try the formatting of the ebook was not the most aesthetic

This book is beautiful and would surely elevate my cooking in the vegetarian field.

I would love to have this huge cookbook as a great coffee table book to flip through and find inspiration in the beautiful pictures and recipes that would help me push my veggies to the next culinary level.

Veg is such a fun cookbook to elevate your meals and incorporate such a large variety of different colored vegetables. I tend to stick to the same recipes over and over for vegetables in our house, but I have found countless recipes in this cookbook to add to my collection, and I love the variety of options from super easy-t0-make recipes that don't take too much time or forethought along with some really impressive recipes I can make for bigger gatherings to show off some new skills.

Another huge element that I loved about these recipes is that you are sure to find options from several different cuisines from Italian to Indian to Japanese, the list goes on. Some are things I've hear about before and many, many of them were brand new to me but will make me feel so fancy when I make them for my family because they seem so unique and special.

I also have to mention that the pictures within this book are absolutely gorgeous and will make you want to make many of these recipes just from looking at the pictures for inspo. I also loved the addition of some really interesting and unique dessert/sweet treat options at the end. You just can't go wrong with this cookbook and there is sure to be so much that you will want to make!

I love my vegetables and I am always looking for new recipes to make them more fun and more enjoyable for everyone. I must say I am very happy with this wonderful cookbook. A well laid out book with a lot of recipes and ideas on how to use wonderful vegetables. Having tried a couple of the recipes already I am ready to delve in and try more.

So I will keep this brief as I want to get back into the kitchen. I highly recommend this tasty vegetable cookbook to everyone.

Lots of great vegan recipes. I had a prerelease version and the photo felt like stock photos so I hope the get that fixed.

This book suffers from extremely good competition in the market. I suspect it'll be more convincing in person, but as it stands with the text alone it isn't the most original vegetable based cookbook I read. I'd also consider it rather old fashioned due to its global scope, considering the recent trend of regional cookbooks that go into cuisines in depth. The author also fails to attribute the cultures her recipes come from several times. Without context, I would have no idea where low country is, or where nduja comes from. A cookbook shouldn't send the reader frantically googling. The marketing for this book also needs to make it clear that this is not a vegan or vegetarian cookbook (which might actually be a pro for many people, including myself).

This would be a good addition for someone who wanted a coffee table book or didn't have other vegetable-focused cookbooks, but as it stands the recipes are not super original. I will say there's a few standouts, like some of the cocktails and a chilled white tomato soup. But in the competitive cookbook market, I'm not sure it's enough.

Book Review: VEG: Fresh, Vibrant, Delicious by Laura Sorkin

As soon as I laid eyes on the cover of "VEG: Fresh, Vibrant, Delicious," I was hooked. The design is both elegant and striking, making it a perfect addition to any coffee table collection. But beyond the cover, this cookbook proved to be a treasure trove of vegetable-forward recipes that are as diverse as they are delicious.

Laura Sorkin's book features 150 innovative recipes that celebrate the beauty and versatility of vegetables. From salads to soups, stews to sides, and entrees to snacks, there is something for every craving and occasion. What impressed me the most was the simplicity and clarity of the recipes - even as a novice cook, I found them easy to follow and execute.

I had the pleasure of trying several recipes from the book, including the Spring Onion Dip, Asparagus Tart, Pasta with ‘Nduja & Butternut Squash, Rosti Egg in a Hole, and Bread & Butter Pickles. Each dish turned out to be a flavorful masterpiece that left me wanting to explore more. I'm already looking forward to testing out the soup recipes when the colder months roll in.

While I thoroughly enjoyed the stunning photography that graced the pages of this cookbook, I couldn't help but wish for more. The images were so enticing and mouth-watering that a few extra photos would have taken this book to another level.

In conclusion, "VEG" is a fantastic cookbook that would make an excellent gift for any food enthusiast or a delightful addition to your own culinary library. Laura Sorkin's expertise as both a chef and farmer shines through in this collection of recipes that elevate vegetables to the status of culinary stars. Whether you're a seasoned cook looking to expand your repertoire or a beginner eager to embrace the world of cooking with vegetables, "VEG: Fresh, Vibrant, Delicious" is a must-have companion in your kitchen adventures.

Lots of interesting recipes to try out. Some look really good, and they are not too complicated to make. I want a photo of every single dish when I go through a cookbook, sadly this book does not have that. I found it a bit odd that there were some fish dishes in the book as well. Otherwise recommended.

This is a beautiful and extensive cookery book that, as the name suggests, showcases vegetables in all their wondrous forms.

The books follows a traditionally tried and tested formula of starting with starters, and progressing through salads, soups/stews, mains, sides, sauces/condiments, desserts/beverages - each section is very generously packed with an extensive array of recipes to cater to all tastes (both vegetarian and meats are featured.) The dessert section was a real treat to explore with many surprises!

While the measurements in this book were in cups/tablespoons, it was useful to find a very handy conversion table in the final pages.

All in all, a lovely book that I would be proud to feature on my coffee table!

This is definitely not your typical vegetable forward cookbook. Lots of diverse recipes so you can add more vegetables into your diet.

I do wish there were more/ better pictures with the recipes. Since the recipes are unique, it would be nice to know what the end results are supposed to look like.
