Cook Once, Eat Twice features delici0us recipes - well balanced, variety of techniques and flavors, with a practical spin for those of us short on time most days.

I loved the idea of transforming components of meals into others to help simplify groceries. Beautiful photography and well organized, this would be a great gift for any new cook or someone embarking on a life change that will keep them short on time!

I feel like this is a different cookbook to Nadiya’s previous books, it seems more subdued, less bright in the photos and less imagination in the recipes.
I did like the book and it will be in our library collection but I feel like it lacks a little pizazz compared to her other books.
I am looking forward to making the chocolate hazelnut cookies and there is a great bread recipe I will also be trying.

This cookbook features very easy recipes. I highly recommend it; it's worth buying. If you love to cook, this book is for you. The recipes are simple to make

COOK ONCE, EAT TWICE by Nadiya Hussain offers "Time-Saving Recipes to Help You Get Ahead in the Kitchen." This is a great concept from a much-beloved chef who is a past winner of The Great British Baking Show. In her latest cookbook, Nadiya presents seven chapters with each focused on a theme: Back to basics; Lovin' your leftovers; Ready meals (cook ahead at home); Two dishes (transforms to two different meals like carrot soup / carrot and cod curry); Never wasted again (using frequently discarded ingredients like ripe bananas for Banana Peanut Bark); Easy Bakes; and Waste not, want not. Her emphasis is on delicious food made easily with minimum waste to help save money. A few examples that I am looking forward to trying are Scissor Cut Pesto Pasta (looks and sounds delicious) OR Sloppy Joes which is followed by directions of how to incorporate leftovers into Cheese and Lamb Samosas OR Mongolian Beef with Sticky Rice. Borrowing from a variety of cultures, she also suggests an easily freezable Chicken Tikka Masala and Lasagna Soup! Most recipes are accompanied by full color photos although nutritional information is not provided. There is a helpful index, also, as well as a kitchen toolkit list.

I recently had the pleasure of reading “Cook Once Eat Twice”. This cookbook by Nadiya Hussain is an excellent resource for anyone looking to simplify their meal prep while preparing delicious home-cooked meals. Nadiya’s warm and inviting writing style makes you feel like you’re in the kitchen with a talented friend, and her passion for food truly shines through.

Cooking meals that can be enjoyed multiple times greatly aids meal planning. It would be particularly interesting to people with time constraints and two-person families who often have leftover food. Each recipe is well-structured, with clear instructions and thoughtful tips for various skill levels. Nadiya creatively combines flavors and ingredients that feel familiar and new.
One of the standout features of the book is Nadiya’s ability to provide versatile recipes. You can easily adjust ingredients based on what’s in your pantry, and she often offers clever ideas on how to repurpose leftovers, ensuring nothing goes to waste. The colorful photography accompanying the recipes makes everything look mouthwatering and inspires you to cook.


I decided to experiment with the concept of Cook Once Eat Twice and cooked Teriyaki Salmon and Sticky Rice. This recipe is found on page 66 of the cookbook.

This was a simple but very delicious evening meal. Since the recipe served four people, I had leftover salmon.
It worked out that I was having company the next day, so I decided to make a pantry dip using the leftover salmon. Here is what I came up with:
Baked salmon and artichoke dip

Ingredients
I largish, finely chopped shallot
14 ounce jar of chopped marinated artichokes drained
1 large piece of cooked salmon (either fresh or smoked) shredded
1 cup of mayonnaise
1 cup of sour cream
8 ounces of cream cheese
knob of butter
a good pinch of Aleppo pepper
1/2 cup of chopped parsley
Preparation
Preheat the oven to 350 degrees
In a pan, melt the butter and then saute the shallots until soft
Add the cream cheese and stir until soft
Next, add the sour cream and mayonnaise and sour cream and combine well
After everything is combined, add the drained, chopped marinated artichokes and the shredded salmon
Season with the Aleppo pepper and add the parsley to the pan.
Pour the ingredients into an oven-proof dish and bake for approximately 30 minutes
Serve the dip warm, not straight from the oven, as this gives time for the dip to become firm.
Enjoy!!!!
My conclusion is that whether you’re a busy parent, a novice cook, or simply looking to refresh your recipe rotation, “Cook Once Eat Twice” delivers practical solutions without sacrificing flavor or creativity.

So timely...

This cookbook comes out at the perfect time. Grocery prices are up and we are working more and more.
Cook Once, Eat Twice is the answer to our everyday problems in the kitchen. How to get food on the table to feed ourselves and our family, with minimal time, effort and with the greatest economy. Nadiya helps us focus our time and energy to cook once and eat twice to solve some of our kitchen problems.

A great layout and photos, easy to read recipes and Nadiya's charming personality comes through. I enjoyed this book and can recommend it and its recipes.
Highly recommend.

Cook Once, Eat Twice is a well written, graphically appealing tutorial guide with recipes by Nadiya Hussain to help cooks be more efficient and save time in the kitchen. Due out 18th March from Sourcebooks, it's 256 pages and will be available in hardcover format.

This is an *accessible* book full of info which anyone (even the least confident) can incorporate. It's full of ideas for using up leftovers and incorporating partial ingredients which might otherwise go to waste. The author leads readers from the very basics and beginning steps (pantry lists, necessary equipment) through universal basic recipes (bread, cooking and mashing the ultimate potato). The recipes are arranged into logical thematic chapters instead of by meal and dish type: back to basics, lovin' your leftovers, ready meals, two dishes, never wasted again, easy bakes, and waste not want not. The waste not want not chapter is especially eye-opening and really squeezes a surprising amount of usable food out of things we throw away without thinking about (chick-pea water from draining the cans, banana peels(!?), apple cores and peels, date seeds (!), and several others).

Recipes are written with an introduction/background (full of chatty personal info and history). Ingredients are listed in a bullet list sidebar, followed by step-by-step simple instructions. Ingredient measurements are given in imperial (American) measurements. Most items should be easily findable at any well stocked grocery store in North America. Recipes which coordinate or use the same partial ingredients are linked in the introduction header. Nutritional information is not given.

The photography is abundant, clear, and in color. Recipes are professionally styled and serving suggestions are appetizing and appropriate.

The author/publisher have included a cross referenced index in the back of the book.

Four and a half stars. This would be an excellent choice for public or secondary school acquisition, home use, or for a housewarming gift for a newly-fledged person living on their own for the first time.

As usual, Nadiya Hussain's cookbooks are a treat. The chicken sausage mushroom casserole is a new favorite; full of flavor and easily made into the hand pies so nothing goes to waste. This is especially good if you are a smaller household like mine. I had a terrible experience with bangers and mash in England and haven't wanted to eat a bite of anything like it since- until now. The sausage, mash, and mustard gravy(fantastic) especially when using chicken apple sausages. The chickpea water meringues were a super cool expirement and suprisingly tasty.

I like the way this cookbook is organized. My favorite chapter is the Two Meals - it gives you one recipe then another one for the next day to just change it up a bit. Great way to meal prep and use the same groceries without feeling like you’re eating the same thing all week. Good cookbook for someone with a busy life who wants to meal prep but needs new ideas.

This recipe book is so much fun! I love that you can prep once and not just eat the leftovers but have something completely different (for example a recipe makes a loaf of bread or use can use the same recipe for naan)! The photos are beautiful and the recipes seem very straightforward! I like that some seem basic and others seem elevated too! She also has a lot of suggestions for freezer single meals and limited waste repurposing!

I used to think I hated leftovers, but I think I just didn't like how it was usually a cold, reheated-in-the-microwave plate of sadness. Nadiya has come up with some creative and delicious ideas on how you can, either intentionally or by chance, use leftovers to feed everyone twice!

I really like that even though there are some familiar recipes like sloppy Joes and cottage pie, some meals are cooked in order to prepare for the next meal as well as the one you'll eat tonight! Like using your roast chicken carcass to make risotto, or leftover suya kebabs to make birria tacos.

So many great ideas and lots I would never have thought of!

A great cookbook for uni students!
Covers basics like simple roast chicken, poached eggs and how to use up left overs. Instructions are clear and produces tasty meals on a budget.

I don't think I'm the target audience for this book. A lot of the recipes are kind of basic for me. This may be a good housewarming present, or something for the reluctant/less experienced cook. As an American, I also feel that I need to object to lamb being used in a sloppy joe-- the sloppy joe is meant for the lowest of the low ground beef. There's a few recipes I find intriguing, like a pear rose cake, but if I saw this book in the store I wouldn't purchase it for myself. Nothing in this book is bad at all, per se, but I just don't need it and it doesn't stand out to me that much among beginner's cookbooks.

I love Nadiya Hussain’s recipes. They are easy to make and she has tips or adds ingredients that I would not of thought of on my own. I always love my cookbooks to have pictures and these are fantastic!!

I have enjoyed Nadiya’s style and respected her approach to cooking and baking since she won the British Baking Show. Therefore, I was incredibly excited to hear she had another cookbook coming out this year. It does not disappoint! One of the greatest benefits of this book is the approach to tasty eating on a budget. Nadiya’s approach to making a batch of one item, Chicken Curry, for instance and utilizing it for two recipes is extremely helpful especially for those newer to cooking.
Even though I am an experienced cook, I found I benefited greatly from the tips sprinkled throughout. Many thanks to NetGalley and Sourcebooks for the advance copy. All opinions are my own.

This is a great cookbook! I love that there are lots of pictures and the steps are easy to follow along. The concept of this book is amazing: Prep cooking and low-waste meals. There is a good range of types of meals and the creativity of using leftovers is really fun.

Delicious recipes, with an emphasis on reusing leftovers. I love that the author is portrayed with her hijab, and her recipes are middle eastern and American influenced, which allows those who haven't expanded their palate to try new recipes without feeling completely unfamiliar. The cookbook serves as an ethnography, and an exploration of the values we hold dear such as feeding those we love, while also remaining frugal. I highly recommend this book, and look forward to trying the banana bread, as well as the tikka masala.

This is such a great cookbook and I can't wait to get a copy for myself! It's family friendly and simple recipes that sounds so delicious and easy to make. I love the concept of cooking once and getting two meals of it--perfect for meal prepping the week ahead.
