I was really looking forward to this book of recipes because I love Indian cuisine but have always been too intimidated to try making it myself.. Unfortunately, this book still makes it feel intimidating. The title says 15-minutes but gathering the ingredients and prepping the food would take longer than 15 minutes. I love the idea of this cookbook but the lack of simplicity and some hard to get ingredients has me giving it 3 stars. I will say the photos are fantastic and make everything look delicious. I would try all of the recipes, just not cook them myself.

Loved the recipes in here! It's hard to get actual recipes from my aunties with measurements and ingredients that I can actually use (they go by memory and measure by heart), so this was super helpful to have a base recipe that I can tweak to my tastes.

I really enjoyed experimenting with these recipes and tasting what I made.

They are easy to understand and follow and are definitely worth trying.

Many thanks to the author, publisher and NetGalley for gifting me this arc in exchange for an honest, unbiased review.

This cookbook is an absolute gem! 15-Minute Indian is perfect for anyone who loves Indian food but doesn’t want to spend hours in the kitchen. The recipes are incredibly simple, quick (all under 15 minutes!), and use minimal ingredients—yet the flavors are so vibrant and authentic.

I love how the book is organized into sections for veggies, fish, legumes, potatoes, and more. It makes it easy to mix and match dishes to create a full meal. The descriptions are clear, and every recipe feels approachable, even for someone new to Indian cooking.

The photos are stunning—honestly, they make me want to try every single dish.

If you’re looking for fresh, flavorful Indian recipes that fit into a busy lifestyle, this is a must-have. Highly recommend!

As busy professional and someone who has to return to office, this book - "15 Minutes Indian" could not have come at a better time! The cookbook delivers on its promise of quick, authentic Indian meals without sacrificing flavor. Having tested recipes like masala broccoli and cardamom potatoes with dill, I can confirm both were quick and delicious results. The book's format is user-friendly, with clear kitchen-friendly instructions that are easy to follow during weeknight cooking. It offers a thoughtful mix of hearty meals and creative twists on traditional recipes, preventing menu fatigue while maintaining authenticity.

Thank you NetGalley for ARC, all opinions are my own.

I am officially obsessed with this book.

I'm a vegetarian who is not super skilled in the kitchen, and I don't have a ton of time (read: any time). I've always assumed that cooking Indian food would be out of my reach, but this book changes that!

The recipes are easy to follow, and, as the title suggests, they are in fact quick to make—maybe not always exactly fifteen minutes (Devi explains her cooking process at the beginning and notes that it gets faster with practice, and steps like veggie prep might go slower if, like me, you're a snail in the kitchen), but roughly 15 minutes or less of active cooking time is still incredible! And every recipe ACTUALLY looks amazing—usually, when I'm looking over a cookbook for the first time, I start a list of the recipes I'd like to try, but in this case, I could see myself cooking through this cover to cover (just skipping the fish section). That's a huge deal to my kinda picky self!

Honestly, my favorite part of the book was the inclusion of gorgeous photos of almost every recipe. The last few cookbooks I've read have been light on the photos, and they really make a huge difference, both for getting you excited about what you're about to cook and, honestly, for helping you figure out WHAT to cook (and what the final dish should look like)! As someone who just had a long debate about whether the sauce for a dish from a different cookbook was REALLY supposed to go UNDER the rest of the ingredients ("Do they really do that in real life? I thought only restaurants did that."), I'm grateful for photos.

I've only been able to try one recipe so far (need to make a shopping trip for spices), but it was delicious. Excited to try more!

Thank you to NetGalley and the publisher for sharing an ARC copy of this book in exchange for an honest review! All opinions are, of course, my own.

The concept of creating Indian food under a time crunch is infinitely exciting and I think a good effort was made to execute that vision in this cookbook. The recipes were super digestible and written super clearly and concisely making them easy to follow. There were also a plethora of veggie options whilst still leaving a large chunk of the book for meat/fish lovers too. There truly is something for everyone in this book which is a great introduction to the Indian cuisine for any food fan.

I did feel like some of the recipes felt more like side dishes and wouldn't necessarily work or be filling enough to be eaten as a main. I also feel like the structure of the recipes could've been slightly better. For instance, since the meals weren't sorted into type of meal it felt like the breakfast meals were randomly placed throughout rather than all in one section.

Another thing I would've loved to see in this cookbook was desserts and drinks. Exploring Indian cuisine felt really exciting in this book but it felt like it was stopped short because there were no recipes for accompanying drinks or desserts to complete the entire meal. I did appreciate the matrix at the end for feasts but it felt a little like once again putting lots of sides together with no unifying main to tie them all together.

"15-Minute Indian" is a game-changer for anyone who loves Indian cuisine but struggles with the time and complexity often associated with it. Devi has crafted a collection of over 90 recipes that are not only delicious but also incredibly quick and easy to prepare. Each recipe is designed to be cooked in one pan and takes under 15 minutes, making it perfect for busy weeknights or anyone looking to enjoy fresh, flavourful meals without spending hours in the kitchen.

The book is well-organized, with chapters dedicated to legumes, veggies, fish, potatoes, and breads, allowing you to mix and match dishes to create a sumptuous feast. Some standout recipes include Salmon with Fenugreek and Ginger, Tangy Green Chickpeas with Tomatoes and Fennel, and Garlic and Chilli Paneer. The ingredients lists are short, and the methods are straightforward, making the recipes accessible even for those who are new to cooking Indian food.

What I particularly appreciate about this book is how Devi emphasizes the health benefits of the spices and ingredients used. The recipes are lighter and fresher, without compromising on flavour. The clever short-sharp-cooking method she employs releases the spices in a way that adds a whole new level of fresh flavours and textures.

I love everything about this book. I love the way it is organized, how simple the recipes are and how quick the recipes come together. I cooked three recipes from this book so far and they were absolutely delicious. What I love is that I was able to use ingredients that I already had in my pantry. I am looking forward to cooking more for this book and I would definitely recommend it as a go to book for quick, delicious, Indian meals.

I have always found cooking Indian food to be a little intimidating and out of my comfort zone, however this recipe book has really changed my mind. I absolutely loved the idea of "one pot" dinners, and I loved that all of the meals were only 15 minutes to cook - as a busy working couple that is SO appealing to me! The recipes were so clear and concise, and I could really feel the author's passion for these foods through her writing.

This is a perfect quick book for Indian recipes. It's detailed, quantities measured, and the masalas written. It's a complete reference book for amateur and experienced cooks.

Excellent recipes, really short (not short only when you've prepared and chopped everything) and very nice instructions with the clear steps.

While I wouldn't quite call these exactly 15 minute recipes (at least not any that involve vegetables that likely need some chopping), I still enthusiastically applaud all the work that Anjula Devi was put in to creating a large collection of dishes clearly meant to make it easy on any home chef's time. Most of them come together through a mix of steaming and stir-frying - which honestly sounded a little curious at first, but all of the tasty-looking photos admittedly won me over to this particular cooking strategy. I definitely plan on giving a few of these a try in the near-future. However, that may be a bit tricky, because the variety of vegetarian-and vegan friendly dishes here is frankly quite wonderfully expansive.

I didn’t realise from the cover and summary that this book contains almost entirely vegetarian / vegan recipes (and 1 chapter with fish recipes). As a vegetarian who loves Indian food, this was unexpected but appreciated.

Overall it looks like a book which will become really useful to me - lots of tempting healthy recipes, accompanied by lovely photos, and for someone who is already a keen cook - the majority of the ingredients are already in the cupboard (tamarind might be a bit trickier to find..).

I’m a little dubious about the 15 minute claim but none of the recipes look too complicated or onerous, the instructions look clear and straightforward and I’m looking forward to start trying them out.

15-Minute Indian is filled with recipes that definitely fit that time frame. All recipes have 10 or fewer steps, most being 8 or under. I have very little knowledge of Indian cooking, but the steps seemed to be easy enough for someone like me to follow. I appreciated all the photographs. There can never be too many photos in a cook book!

Thanks to Quarto Publishing - White Lion and NetGalley for an eARC of this cookbook for an honest review.

I love the premise behind this cookbook. Indian food should be accessible, and having quick healthy options is such a game-changer. I love having vegetarian options but I do wish there were more meat options. Still, if someone wants meat the recipes are a good starting point and you can try o adapt to suit your preferences. Thank you to Netgalley and the publisher for the ARC.

A great selection of recipes which go beyond what you think of as ‘Indian cooking.’ There are vegetarian as well as meat and fish dishes and all look delicious and quick to make. Looking forward to cooking lots from here.
