As we have come to expect from the Food52 blog and series of books, this is full of innovative and healthy ways to build salads. The dressing section alone is well worth the purchase of this book with so many flavors and tastes incorporated in it. Recommended.
I don’t really need to be reminded to eat salads. My CSA box comes on Tuesday mornings, so its a rare Monday night that I don’t turn to my crisper for a clean-out-the-fridge salad. Its easy, though, to get into a seasonal rut. (Roast another cauliflower, I suppose.) I may never cook one of the Food52 recipes as written, but what I love about this cookbook is that the authors clearly give explicit permission to use them as inspiration, or as a kick-off for the salad you really want to eat. There are lots of twisty new salad dressings for my bored-with-vinagrette delight. And the cookbook is worth reading cover to cover for the tips and tricks on dealing with vegetables, herbs, and other refrigerator and pantry items.
This is a beautiful publication by Food52. I love all these salad ideas and the pictures are amazing. Food52 always does remarkable and beautiful work. The couple of salads I tried were great and looked great too.
Food52 Mighty Salads is full of over 50 different salad recipes. The are divided by salad type - leafy, vegetable, grain, pasta, seafood, and meat. The recipes include some not so familiar salads like sprouted mung bean, carrot, and date salad that will tempt you to try new things. Then there is familiar Cobb salad recipe that is paired with tips for keeping avocados from browning. Throughout the cookbook you can find help with creating great salads from herb storage to sprouting tips. The accompanying photos also highlight and entice.
This has to be one of the best salad books I have ever had the pleasure to read. Sixty delicious salad recipes with as many ideas again for variations and not a wilted lettuce leaf in sight (except for those designed to be wilted). Add beautiful photography and a great selection of culinary tips and you have my idea of the perfect recipe book.
Roasted roots, hearty greens, beans and grains, succulent fruits and tangy dressings topped (or mixed) with cheese, seafood or meat make for wonderfully satisfying main course meals.
I read this book while on a flight to Florida and found myself eager to arrive at our home there, head to the farmers market and start planning the delicious lunches we will be eating based on these lovely recipes.

I liked it! Food 52 Mighty Salads has given me many alternatives for creating great salads. Now my salads can go from boring to fun. This book is fun because there are many ingredients that I wouldn't have considered adding to a salad. I also liked the many tips given, many of which I will be sure to use.
This cookbook has such great suggestions and recipes with grains, beans, vegetables and met. Also information about washing Green's and keeping avocados from turning brown. All the Food52 cookbooks are wonderful and this one is no exception!
Growing up, salads were always pretty basic - some iceberg lettuce tossed with some tomatoes and cut cucumbers. As basic as it could get. I was pretty sure that salad was not my thing until I started to realize that there was a whole world of salads that I was missing out on. Now, one of my favorite things to do is try out different salads so that I can avoid the whole lettuce and tomato thing. I love how all the recipes can serve as a standalone meal (usually that is lunch for me) or as a compliment to a larger meal. I
I especially loved the Radicchio and Cauliflower Salad with Anchovy-Currant Vinaigrette because it is both filling and tastes amazing. The cauliflower is lightly roasted and is just a little spicy, the radicchio is a bit bitter to balance things out, and the anchovy-currant vinaigrette is packed with tons of flavor. Throw in some salty cheese, some sweet currants, and some crunchy walnuts and you've got a salad that hits all the big flavor profiles.

I had high hopes for Food 52 Mighty Salads but found personally that there was not a lot I would actually eat and prepare for myself in the recipes. I wasn't a big fan of many of the ingredients and found that many of them were just too complicated and time consuming for me to make as just a salad.
I really wanted to like Mighty Salads but it never really got there for me and left me feeling disappointed.
Which was unfortunate because I have loved all their other books.
I'm a long-time follower of Food52! Highly recommend this title for anyone looking for a simple guidebook to building tasty salads. With the guidance of how to choose greens, designing an excellent dressing, and the flavorful combinations created with carefully selected toppings, this cookbook will be a treasure for foodies.
Salads have never looked so good. There are so many recipes in this book that I am dying to try!
You will find all kind of salads and dressings in this cookbook. A lot of them have healthy ingredients, such as whole grains, kale , avocado, etc. In addition to the recipes, there are good tips on how to revive produce, improve a salad dressing, etc. if you are into a variety of salads, this book is for you.

I loved this book. It was a treat to review. The recipes were simple and fun, for the most part. I was not overwhelmed in the least. I appreciated the pictures because it made the meals come to life. The recipes were easy to follow and actually achievable. The tips were great. And the encouragement was totally appreciated. For a foodie and "amateur" salad chef, this book was a dream resource.
In summary, I want a hard copy. ;)

I'm a big fan of Food52 and love salads, so no surprise that I really LOVE this book and have made many delicious meals from it! I really appreciate all of the wonderful tips included throughout the book; there are so many that make this invaluable as part of my kitchen cookbook collection. It's hard to pick out my favorites as there are so many but I find myself making the antipasto chopped salad a lot!!
I always like the website of food52.com to find recipes. Honestly I fall in love in cooking because of their website. I really like this book since it has a lot of salad recipes and the pictures are awesome too!

Food52 Mighty Salads really surprised the skeptic in me. I thought this would be a traditional recipe book that basically gives the same tired recipes over and over, but Mighty Salads reinvents the concept of salad and elevates the salad to a sophisticated level sure to wow many.
This was certainly true when I made my husband, a true-to-core carnivore, the Hoppin' John Salad with Crispy Cornbread for dinner one night. He was hesitant at first but once he tasted the collard greens dressed in honey and vinegar he admitted he never knew that a salad could be so versatile.
Besides the fabulous recipes, there are also very helpful tips and tricks that the Editors of Food52 included, such as tricks to keep your lettuce from wilting and how to improvise on the go. Food52 Mighty Salads really shows the reader the potential of a dish often thought of as a side and makes it the center of a meal by highlighting various ingredients full potential.

This is a wonderful collection of salad recipes that will keep you busy (and very well fed) throughout the year. The recipes are divided into Leafy Salads, Less-Leafy Salads, Grain & Bean Salads, Pasta & Bread Salads, Fish & Seafood Salads, and Meat Salads, so there is something for every taste and every occasion. Some of the recipes are for main dishes and others for side dishes, but all can provide a whole meal if so desired. Quite a few can be served either hot or cold, depending on the weather or your inclination.
Each recipe takes up exactly one page, so you do not need to turn over for next stage, or be directed to somewhere else in the book for some essential
. The recipes are all accompanied by an attractive photo of the finished dish. At the end of the recipe there are often very helpful short “genius tips” on all manner of things, which may offer advice on how to vary or improve the recipe, or how to avoid common problems. Longer, more detailed, general “genius tips” are scattered throughout the book. Both imperial and metric measures are given, which is very much appreciated.
Most of the ingredients are readily available, and although some of the recipes were similar to ones I had already seen elsewhere, the majority were new and interesting combinations to me. I have made about ten of the recipes so far, and found them all easy to follow with very tasty results. My favourites have been the “Caesar-style Kale Salad with Roasted Onions”, the “Sprouted Mung Bean, Carrot and Date Salad” (had that one twice!) and the “Roasted Grape, Butternut Squash & Kale Salad”, and there are many more I intend to try and retry.
Whoever said salads were less filling and froufrou should give Food52 Mighty Salads: 60 New Ways to Turn Salad Into Dinner --- And Make-Ahead Lunches, Too a try. The cookbook is filled with plenty of belly filling recipes and lots of color photos.

Anything by Food52 is worth getting. This is one of the best salad books I have ever seen. I especially love the dressings recipes and pictures. Well worth adding to your collection.
