This cookbook is chock full of delicious sounding and looking vegan recipes. For the most part, the recipes are somewhat different than I'm used to seeing. Somewhat "more" if you will. While I've seen pad thai recipes, the one in this book is Triple Noodle Power Pad Thai. I've seen avocado toast recipes but in this cookbook it is Avocado Toast with Burst Heirloom Tomatoes and Balsamic Drizzle. There are several recipes for nut based cheeses that I'm dying to try out. This is going to get a lot of use in my vegan kitchen.

I was not disappointed with the cookbook by the author of one of my favorite blogs/websites. Simple ways to eat healthy and always delicious. Bravo Ashley!!

This vegan cookbook has a great key to help readers identify recipes that are also gluten, nut or soya free, which I found really helpful. It is also full of lots of beautiful pictures of the food presented in the recipes.

However, I found the recipes themselves rather over complicated and many look very time consuming. In the end I only found 2-3 recipes that I thought I would ever make and they wouldn't be done regularly.

Overall, I wont be making permeant room on the kitchen cookbook sheet for this book.

The author hosts a popular recipe-based vegetarian food blog and maintains that easy conversational tone throughout this book. She clearly wants her readers to be comfortable cooking their way through the recipes. She suggests brands and where to find them. Or how to substitute. And where the glitches might pop up and how to avoid them.

The recipes themselves are intriguing. Why would I languish in bed if I could easily whip up Blueberry Breakfast Ice Cream? Or munch on Cherry Almond Butter Plus Oat Breakfast Cookies?

Ok, time to get serious...with Creamy Cauliflower Tumeric Soup. I have been hearing buzz in the foodie-sphere about sorghum grains. I might just jump in with Sorghum and Cherry Tomato Salad.

Puffy Potato Pizza Crust? I can do that. But, I had never contemplated chorizo made from cauliflower. I might think on that a bit longer.

Delicious plant based recipes. Don't be scared by these sophisticated looking recipes, they are easy to understand and are focused on things you can find easily in stores (or gives suggestions if you don't have certain ingredients). Great for those looking to eat healthier without getting too complicated.

I own A LOT of cookbooks. And I am quite picky when it comes to them. But I am absolutely smitten with this one. Recipes are very vegetable heavy, but not in a rabbit food type way. They are original and vibrant, and bursting with flavor. I want to make everything, and I can rarely say that about cookbooks. I've probably already made close to a dozen things. My only complaint is that I wish it were hardcover, because it's going to take quite a beating getting used in my kitchen so much!

This was a beautiful cookbook! All of the recipes are vegan however anyone (even meat-eaters) will enjoy these delicious recipes! After seeing all of the stunning photography, I'm inspired to get in the kitchen and start making one of Ashley's dishes!
