This book offers a great range of recipes for coconut lovers. It encompasses using coconut in its various forms in dishes both sweet and savory with influence from cultures all over the globe. Sometimes cookbooks that focus on a single favorite ingredient can seem a bit gimmicky, like they are just taking standard recipes and including that ingredient in the recipe. This is not the case at all here. So many recipes that genuinely benefit from the inclusion of coconut and that use it in unique ways.

I think I'd turn into a coconut at some point. This is a beautiful book focused on cooking with every aspect of coconut - its layout and photos are fantastic and the recipes easy to follow. It details the life and parts of the coconut (having a Caribbean background made me appreciate the coconut a lot more!) The recipes were pretty intriguing (almond-coconut white bean spread, sinigang, fried eggplant and tomato rounds, etc.), and it was interesting to find that most are on the fairly healthy side. A great gift or reference book for coconut lovers.
