Thank you for this very interesting book. I learnt a great deal and will be using coconut more in my cooking.

I think I'd turn into a coconut at some point. This is a beautiful book focused on cooking with every aspect of coconut - its layout and photos are fantastic and the recipes easy to follow. It details the life and parts of the coconut (having a Caribbean background made me appreciate the coconut a lot more!) The recipes were pretty intriguing (almond-coconut white bean spread, sinigang, fried eggplant and tomato rounds, etc.), and it was interesting to find that most are on the fairly healthy side. A great gift or reference book for coconut lovers.
