I was expecting a collection of savoury tray bakes, but actually this is a recipe book of things that could, if you want, be cooked on a baking tray. So overall, lovely veggie recipes, clearly written and enticing pics but the sheet pan isn't essential.
A few American terms - e.g. what on earth are veggie crumbles - but mostly straightforward.
There are some really great, easy vegetarian recipes here. We are not vegetarian but have enjoyed several recipes from this book.
These deliciously inspiring recipes are made all the better by how easy and mess-free they seem to be. When you factor in how healthy many of the recipes are, it really is a must-have for your kitchen. While I haven't made any of the recipes yet, I am especially delighted by the "eggplant and white bean meatballs" and the "tortilla roja bake."
LOVED this book. Great recipes with amazing flavor, and the best part is it is done in ONE sheet pan that you throw into the oven.
The first thing I did was purchase a suitable sheet pan which is an absolute must before trying anything in the book..
My family discovered we love the Israeli food, the author's father is Israeli. The ones we tried are delicious, Babaghanouj is fabulous.
There are some quite Mexican flavoured recipes which we tried too, in particular Tortilla Rojo Bake. Mushroom risotto on a sheet pan! it works.
The flavours are great, it's easy to cook this way and fewer pans to wash up.
I'm going to try almost all as I work my way through the book, it's great fun and a total change.

Nice collection of vegetarian recipes. Most of them look fairly easy and could be served as a side or as a main course, depending. There is also a nice size breakfast, dessert and snack section.
I am not a vegetarian but sometimes I am looking for good meatless recipes.
Anyway, I enjoyed this cookbook. I have tried only a few recipes so far but the ones I have tried I have enjoyed.
The recipes are easy to follow.
This cookbook is great! There are so many wonderful recipes that are easy to make, not difficult at all. My fave recipe has been the chili nachos- so much delish flavors! I like how the whole cookbook basically uses a sheet pan to essentially "cook" ... no need to get other pots and pans dirty. I will definitely buy myself a copy soon.
A sheet pan is called a baking tray in the UK. Some of these recipes, particularly those with a liquid content, might be more safely prepared in a baking dish.
I'm not vegetarian but I'm always looking out for interesting vegetarian recipes. This book has some original ideas but I didn't find them particularly inspiring. There aren't many photographs but those there are wouldn't entice you to try the dishes. I thought the best section, the one that I might take some ideas from, was Breakfasts and Brunches but I wouldn't be buying the book just for that. Recipe books are very personal things, I find. This one just isn't for me.

These recipes are by far the best vegetarian recipes we've made so far, and I've been cooking from various vegetarian meal plans for 2 years now. Most of my vegetarian recipes involved sautes under close monitoring and it was really nice to let these recipes roast while I tended to other things. My family is usually very talkative while I'm cooking and I am not always present because I'm trying to watch several things on the stove. Sheet pan suppers definitely make that dynamic easier. I didn't realize the versatility of a jelly roll pan until I picked one up at the suggestion of the author. It makes a great alternative to using the larger half sheet pans and it is easier to clean. The recipes I made were:
- Black Bean & Quinoa Veggie Burgers
- Sheet Pan Chili
- Orzo with Pan-Roasted Tomatoes, Lemon, Mozzarella
- Tortilla Rojo Bake ( I substituted red enchilada sauce for the homemade rojo sauce though)
Those are all hits with the family and the leftovers served really well as packed lunches. The recipes were clear and the techniques were explained well; I think new cooks would appreciate that. This cookbook will be a staple in my collection.
Although I am not a vegetarian, I do enjoy vegetables and am always looking for new ideas on ways to use them. This book provides pictures to use as a guide. Even if you are or aren't a vegetarian I think you would enjoy finding new ways to supplement your meals.
Great recipes, fantastic ideas and easy to follow instructions.
The pictures that are there are beautiful i only wish that there would have been more than just around every third recipe pictured -or at least that what it felt like in comparison with the text and the pictures.
More pictures in recipe books are always better in my personal option.
But it has fantastic and easy to make vegetarian recipes and if you need inspiration, this book is defiantly for you!
I'm really enjoying the sheet pan craze. I roast almost all my vegetables but for some reason it never occurred to me to try a whole meal on one pan. I'm not a vegetarian but I only eat meat once or twice a week so having a way to incorporate a full vegetarian meal into a sheet pan dinner is appealing.
The book is broken down into Bits, Bites, and Snacks, Soups & Salads, Veggies with a Side of Vegetables, Grain Bowls and Beyond, Beans and Legumes, Pasta, Bread, and Pizza, Breakfasts and Brunches and Desserts. There is also an introduction that explains pans regarding size, and finishes.
All of the recipes sound delicious and worth trying. If you're a newbie/novice cook the author has interesting flavor combinations that might be new to you. Sweet Potato , Blue Cheese and Pecan Salad, Roasted Plum Salad with Fresh Grapefruit and Cardamom Syrup, White Bean Ratatouille over Roasted Eggplant, to name a few.
I'm not a chef by any stretch of the imagination but what I lack in skill I make up for by being willing to try new foods from my local farmer's market so, to be honest, I wouldn't need this cookbook for that but I did tweak a few of my favorites (like the sweet potato salad with her dressings etc.
But...I found a few - new to me - ideas such as making a soup/stew or grain bowl(risotto, lentils, black rice, bulgur, polenta, quinoa) right in the sheet pan. I'm definitely giving that a try and will update my review accordingly. I imagine being able to cook your grains and vegetables in one pan would be a huge time saver for families both with cooking and clean up.
A few recipes require a use of a bowl for mixing but most only use the sheet pan.
There are also Vegan and Gluten=Free (noted with a V or GF) recipes and the author says that nearly 1/2 the recipes are acceptable for those with Celiac Disease. I'll be checking with my mother-in-law on that since she does have Celiac's.
This is a great cookbook for new vegetarian's looking for fresh ideas, families to save time or those who would like some new flavor combinations to try. For more experienced cooks - you might be interested in for the grain sheet pan technique.

I had read Sheet Pan Suppers Vegetarian: 100 Recipes for Simple, Satisfying, Hands-Off Meals Straight from the Oven-by Raquel Pelzel. I had to keep myself from licking my computer screen. The recipes are mouth-watering and beautifully prepared. I've tried a few with great success and no left overs from family. I am surely going to be fixing a lot of these in the next week. So scrumptious!!!
At last! A vegetarian sheet pan cookbook! Pelzel has a great voice—enthusiastic, informed, and encouraging. Love the ease of the sheet pan concept coupled with creative vegetarian dishes. A great gift for: vegetarians, anyone wanting to eat more vegetables; those seeking inspiration for “Meatless Mondays,” cooks wanting to expand their sheet pan cooking repertoire. Headnotes are sprightly and clearly written. Sidebars offer useful and unusual tips. Color photos are clear and appealing--I especially liked those featuring sheet pans! This cookbook will definitely find a place on my bookshelves.
I tried and tried -- following instructions from Netgalley--downloading the software, setting up accounts, everything-- but I just cannot access the downloaded file for this book and there is no kindle edition. Sorry! I was really looking forward to reviewing this one!

Really loved the recipes and can't wait to try them. The first one I would love to try is the caramelized onion dip. My husband is not a vegetarian, but he said he wants to try the Mushroom and Parmesan sandwich. Yum!!
