This is a neat idea, but a bit gimmicky. There are some DELICIOUS recipes in here (portobello subsOMG! And the citrus shortbread was out of this world!). BUT! The reality was that making everything in a sheet pan was just a pain. I made the Israeli Couscous recipe, and needed two sheets of foil to cover the pan, then ripped one when I had to stir it halfway (and burned myself) and just kept thinking - this would have been SO MUCH EASIER in a pot on the stovetop!
So I guess my TL;DR is - great recipes, and don't be hemmed in by the sheet pan requirement.
I was really excited to get my hands on a copy of this cookbook as I've recently decided that I was going to make an effort to pack my own lunches instead of buying it out. I do eat meat, but I have noticed that I tend to gravitate towards vegetarian lunches, so this was a perfect fit.
These recipes were so easy to make - throw everything on a sheet pan and stick it in the oven easy - and barely took any time to prep. I'd make about 2 recipes at a week, sometimes for dinner with leftovers for lunch, sometimes just for a couple days of lunch, and was never disappointed. The recipes are healthy, filling, taste amazing and always leave me wanting to try something else. A definite recommend!
This was one of the best cookbooks I have ever had!! I am not always strictly vegetarian but when I want some veggies this is definitely my go to!
I made at least 10 of the recipes and cannot wait to make the remaining ones I haven't tried!! I never realized how much I loved making sheet pan meals than I do now!

This recipe book is amazing. So much so, that I'd recommend it to meat-eaters as well as vegetarians! The idea of a 'sheet pan' supper really appeals to me - it's straightforward, simple, and efficient, not to mention super yummy. The recipes were easy to follow, tasty and made using ingredients that are easy to find, which to me, is a bonus – I find a lot of vegetarian recipes try and sub the meat for obscure ingredients that are near-enough impossible to get your hands on. Awesome!
As a home cook who recently discovered the joy and simplicity of roasting vegetables on a sheet pan (beets are divine this way), I really like this cookbook. There are recipes here that I never would have even considered cooking on a sheet pan such as Sheet Pan Chili or Mushroom Risotto and some that just look and sound delicious such as Chocolate Brownie Scones and Summer Tomato Slab Pie. The photos are beautiful and the instructions clear. I have recently gone totally plant-based so many of the recipes won't fit my new lifestyle without some tweaks but I'll definitely be trying some tweaking.
