Sheet Pan Suppers Vegetarian by Raquel Pelzel is a unique and upbeat cookbook, with recipes for everything from soups and stews to salads and desserts, all created in a sheet pan / baking sheet.
The idea of a cookbook using only a sheet pan to prepare food in struck me as both practical and brilliant. Sure, I have seen 'one pot' cookbooks, but one pot cooking has existed for as long as humans have made bowls from clay. I have never seen a cookbook concentrating on dishes only made in a sheet pan. And all vegetarian, as well! This book is a perfect guide for making easy, healthy and delicious meals and snacks using one pan.
I enjoy cookbooks, and tend to read as many as I can get my hands on. This one jumped out initially because I had never thought about making soups and stews on a sheet pan before. The recipes are approachable and written very clearly, with great attention to detail that allows home chefs of all skill and confidence levels to successfully complete them.
Several grain 'bowl' recipes were featured, and they provide a great base to experiment with in that once you learn how to correctly cook grains in a sheet pan, you can substitute veggies, sauces and garnishes as you wish to make millions of variations.
Some of the recipes that I found especially appealing were:

- Broccoli Vodka Pizza
- Roasted Strawberry Danish

My family and I are not vegetarians but we do like our veggies. This book could though turn a person though. There are so many delicious recipes in her you won't miss the meat. There are actually 100 recipes in the book, with variations there are more then 100. The recipes are pretty simple and you don't have to stand over the stove. Stick them in the oven and walk away, who doesn't love being able to do that. I did make the mushroom Risotto and it was awesome.
The book is broken down into sections to make it even easier to use. There is everything from appetizers to desserts. The pictures will have your mouth watering.

Vegetarians are always in need of new recipes to change up the assumption that all vegetarians eat is hummus and portabella mushroom burgers. As someone who has a sheet pan and always assumed I was not using it enough, I enjoyed looking through this cookbook. The recipes I want to try most are the caramelized onion dip, super seedy power bars, quinoa and sweet potato rice bowl with tahini-miso dressing, slab frittata (great idea!!), slab quiche (another great idea!), baked oatmeal with dates/bananas/tahini, chocolate brownie scones, and honey-glazed spice cake. When I first heard about this title I was intrigued by the concept of a cookbook full of recipes that can be made in just a sheet pan. I mean, who doesn’t love a meal that’s quick and easy to prepare with minimal washing up?
Sheet Pan Suppers Vegetarian includes 100 recipes spanning a wide variety of dishes all of which are suitable for a Vegetarian diet. In addition around half of the recipes are Vegan and similarly almost half are Gluten Free. Whilst not all of the dishes are suitable for a ‘free from’ diet, many can easily be adapted to suit different dietary needs.
In addition to the more traditional sheet pan ideas like nachos, pizza and burgers the book also shares more surprising dishes including several soups! There is even a whole section of dessert recipes to be found at the end of the book and tons of tips and tricks along the way. Some of the recipes I’m most looking forward to trying out are the Vegan Poutine, Roasted Vegetable Lasagna, Crispy Roasted Shallot & Lentil Mujadara and I Can’t Believe It’s Mushroom Risotto!.
In a time where most of us rely on a selection of kitchen gadgets for all sorts of different tasks Sheet Pan Suppers Vegetarian showcases just how versatile and exciting cooking with a simple pan can be.

I've said it before and I'll say it again: where are the photos?! In the age of amazing cooking blogs, how is it acceptable for a cookbook to include recipes with zero photos? I want to know how the finished dish is supposed to look before I commit to shopping for ingredients and preparing a recipe. There are a few recipes in this book with photos that look good enough to try. That being said, none of the recipes are particularly unique, meaning I've seen them all, or very near approximations, in previous cookbooks or blogs. I was hoping for easy, vegetarian dinners using a sheet pan only (or mostly) and have not really found that in this cookbook.
An easy recipe book filled with so many unique options that fit perfectly into my busy lifestyle! Whats not to like?!
Sheet Pan Suppers Vegetarian by Raquel Pelzel uses one of my favorite methods of cooking: baking. I love to bake meals in the oven as once you pop a meal in the oven it bakes happily all by itself. There is little intervention for most baked dishes. Her recipes do live up to easy baking when it comes to meal prep and her cookbook's recipes range from sweet to savory.

Recipes are decent. Easy to follow, ingredients and directions in correct order. The author really knows what they're doing when it comes to cooking vegetarian. Some of the recipes are more cook on the sheet pan, then blend or do something else with them.

I am a huge advocate for fresh food with less fuss. Although my family is not vegetarian by default, I am always looking for the perfect dish for dinners with friends and family who are, or to add a little tofu style variety to our lives. Not only that, but so many of these recipes simply don't need meat to be delicious. So vegetarian or not, this was a perfect cookbook full of not only recipes, but wonderful tips as well.
I fell particulary in love with the Spinach, Roasted Roots, Pistachios and Honey Vinagarette. As a long time fan of beets, radishes and the like, I am often looking for new ways to incorporate them into my family dinner dishes. This was new and sweet and savory, a dish that my ever picky kids could force their way through, and that my husband and I could truly enjoy.
The BBT bites were the first recipe, so the first one that I made to take to a get together. They were so delicious, and none of them made it home with me. Everyone loved them, and I am now obligated to bring them to the next gathering.
The Thai green curry pot pie was out of this world, although I did make a few veggie substitutions. I found these recipes easy to alter to meet my wants, or the specifics of my pantry. They all seemed to couple beautifully with the fresh herbs from my garden, and I can't wait to try more.
Bonus – the kids love having less clean up!

I'm always swapping recipes with someone or have my nose in a cookbook looking for the next delicious meal to cook. What I like about this cookbook is that all the meals are quick and easy. Basically, all you need is a sheet pan and your off and cooking your way to a great meal. Of course, you may need a mixing bowl here or there and maybe a blender but everything is really very simple.
I think this book is a great way for people to introduce more veggies into their diet. The average person consumes way more meat than is needed. And for those who are already vegetarians or vegans, this book will add some new quick, easy, and healthy recipes.
I liked the idea and the recipes were good. But I personally would never choose a cook book that didn't have a picture for every recipe. I liked to be enticed by the picture and see what it is supposed to look like. As you can now get a recipe for anything on the internet and they always have a picture I wouldn't invest in a book that didn't have the same. Good idea and I well written. The structure of the book is good but if you could just add even a small picture or a page with several pictures on together that would be excellent. Thank you
I was pleasantly surprised by this book. I was intrigued by the sheet pan aspect but am not a vegetarian, so I didn't have the highest hopes that I would find a lot of recipes that would interest me. I could not have been more wrong. Many, many recipes that look just delicious! My only complaint is the lack of pictures. A great cookbook is full of pictures of every recipe.
I've been wanting to put more veggies into my diet, but didn't have a lot of recipes that were easy to do and tasty. Roasting seemed like an easy and good way to prepare them, but I wasn't sure how to season or enhance them. This book came at just the right time. Most of the recipes have few steps and aren't complicated. And, they're all created on a sheet pan (otherwise known as a cooky sheet to the common person). The photos are very enticing. I also like the little hints that can be found in the boxes every other page or so. Who would have guessed one could make a pasta dish on a sheet pan? I'm going to try the Orzo with Pan-Roasted Tomatoes, Lemon, and Mozzarella tonight! And one of these days, I'm going to try the Beetloaf, which looks just like a meatloaf in the photo! What a great book!
Original recipes and complimentary photography. I would have liked to see more photos of each of the recipes but the instructions are straightforward enough that a reader can use it as a guide without a visual aid.
My favorite section of this book was centered around breakfast, even though it was a "Supper" cookbook. Especially Eggs in Guajillo and Thai Granola. I'll eat those for supper any day.
The recipes reflect an attention to detail, a desire for the reader to successfully cook the dishes included. It should be noted that the author does not use sheet pans exclusively but their use is a part of each recipe.
Hi, I've been UNABLE to Download this book in order to read it. I contacted the Netgalley team and they said that this book can not be downloaded onto my kindle. That is the only way I'll be able to read this book. I'm very disappointed but understand. Because of that I will not be able to review this book. If the format changes please let me know. I'd be very interested.
For those looking to use different resources in the kitchen, this is the cookbook for you. A unique cookbook that focuses on using sheet pans to fix your meals. Many of these recipes look delicious, I love the colors and photos. A good book to add to any cookbook collection in a public library.
First there aren't that many cookbooks for Vegetarians or Vegans so I applaud this for existing. Secondly I've never heard of sheet pan recipes so I learned something new. And Thirdly there is a lot of variety in the cookbooks with a bunch of different sections which is helpful depending on what you want to cook or how much experience you have cooking you can easily start with the snacks/appetizers and slowly make your way through depending on how comfortable you are.
I love this book. It's packed full of refreshing and delectable recipes
