Lovely easy to follow recipes. I don't have many Instant Pot cookbooks but this one is really good. Think I am going to buy this as an actual book as it will be easier to read than on my kindle.
First let me say that I have not had the chance to try any of these recipes yet. So I cannot speak to the accuracy of the actual workings. I do feel there is great redundancy in recipes. I have earmarked a few recipes to try. Thanks to NetGalley for a complimentary copy of the book in exchange for my honest review.
This is a great cookbook for anyone who enjoys mediterranean food and I look forward to trying some of the recipes in my own instant pot.

This is definitely one of the best cookbooks I have read for the Instant Pot! I want to try so many recipes in this book and as a vegetarian it is nice to come across a cookbook that isn't just ingredient substitutions to make them vegetarian but the dishes that are made the way they are meant to be made!
The Everything Mediterranean Instant Pot Cookbook should be on everyone’s bookshelf. There is information at the beginning of the book explaining the benefits of the foods in the Mediterranean diet. Each recipe is simple to follow and does not require an extended list of ingredients. This would be a great book for someone who is learning to cook but also for anyone looking to simplify their week night meal routine. I am looking forward to making many of the recipes. I’ve already made the cardamom and apple steel cut oats twice. The oats were so creamy without any dairy added. I loved learning about and adding a new spice to my cooking!

THE EVERYTHING MEDITERRANEAN INSTANT POT COOKBOOK by Kelly Jaggers begins with an explanation of the Mediterranean diet and a guide to cooking in an Instant Pot. It contains 300 recipes for healthy meals that can be prepared in your Instant Pot. The chapters include recipes for breakfast, dips/appetizers, rice, grains, pasta, beans, lentils, vegetables, seafood, poultry, pork/lamb/beef, and fruits/desserts. Each recipe gives nutritional information broken down by serving. The instructions are clear and straightforward, so that even someone new to IP cooking can be successful.
I am enjoying this book because it combines my love of IP cooking with recipes that fit the Mediterranean diet. I'm not on a diet, but enjoy healthy eating and the tastes of the Mediterranean. If you enjoy the same things, give this cookbook a try.
My main take-aways:
✔: I will definitely try several of these recipes.
✔: A huge number of recipes! A big portion were the same ones you see everywhere but I spotted some new ones, too.
✔: Good instructions with nutrition facts.
✘/±s: I knew this was coming, because it's my constant complaint and it's a huge problem with the Everything series, but... where were the pictures, sob. (But they have improved a little?)
✘: Why so many freaking soups. (Also a frequent complaint I have with Instant Pot cookbook cookbooks.)
tl;dr: It's an easy purchase for my public library collection. I'll definitely put a hold on on the physical book when it arrives and try it out.

My doctor ordered the Mediterranean Diet for me to lower my cholesterol and I was very excited to receive this book. The recipes are yummy, I just wish there were more pictures. The Tomato Asparagus Fritatta is amazing.

The author takes you through the basics of the Mediterranean diet, the basics of the Instant pot, and maintenance and cleaning in the first chapter. The recipes look terrific and the presentation and descriptions were mouth-watering. I am not sure what to try first. So many dishes looked tempting and I am certainly excited to give the Instant Pot a try for these meals.
I love my instant pot and this book has provided lots of new and exciting recipes for me to experiment with. The recipes are easy to follow and include ingredients which are easy to source.

I have been wanting to try a Mediterranean diet but needed some recipes. This book was perfect for me. It had so many recipes to choose from.
The book starts with an explanation of the Mediterranean diet. It provides a food pyramid which even includes red wine. In moderation, of course.
All of the recipes are fast and easy since they are instant pot. I highly recommend this cookbook.

As a lover of the instant pot, this has been by far my favorite cookbook. The recipes are varied, and easy to follow, as well as inspirational.
Formatting was completely screwed up. You couldn’t read a recipe without getting a headache because nothing was lined up correctly. I tried clicking on links and they took you to the wrong place. It was so difficult to read the thing I didn’t try any recipes. I’m giving it 3 stars simply because I can’t really comment on the recipes and not sure format problems were author’s fault or not.
My husband has high blood pressure and we've had to change the way we cook at our house. Time and again we've heard about the mediterranean diet. This book was a great introduction to this and a big bonus was that it was based around using the Instant Pot. With two kids, evenings can be hectic without a lot of time to fix dinner. This has been such a relief in that I have healthy recipes to pull from that don't require tons of cooking time.
I am excited to see the final version of this book. The recipes look terrific and the presentation and descriptions were mouth-watering. I am not sure what to try first. I have read through several Mediterranean Cookbooks, some of which were for the Instant Pot, but this one deserves high praise.
There are several things that it does well for me as a lover of cookbooks in general.
1) Recipes! Wide variety with easy to follow instructions (including conversions for wherever in the world you are) and good pairings to make a complete meal.
2) Wide variety of selections with everything from breakfast ideas, oatmeal ideas and frittata that doesn't need micromanaging to appetizers that I often eat as a smaller meal, like varieties of make-at-home hummus and others. Then full meals and sides, such as chicken, rice, soups, pasta, meats and vegetarian options. There are desserts as well. Many of these were appealing and appetizing. I started to get bogged down in perusing this cookbook because my handwritten grocery list was consuming my time!
3) The aside commentary was a terrific addition. This included "tips" like "recipe versatility" suggestions or substitution tips and then how to properly cook the recipe with the sub. So, for instance, if subbing certain tougher, longer cooking veggies, the tip to dice into smaller sizes compared with the quicker cooking veggies in the recipe is very helpful to a home cook like myself. Another great tip was the "Quick Soaked Beans" to get your dried beans (way cheaper) ready for use faster than an overnight soak.
4) The history of various recipes or ingredients used certain recipes and either how it became associated or known as Mediterranean or pointing out if it actually originated elsewhere.I love this in a great cookbook. It really adds to the joy of going through one. You get a sense for the time, the culture and the atmosphere, as well as why the ingredients are what they are.
5) The photography. The photos appeared to be really well done and are always a huge part of a successful cookbook. I think the final version will be the best test of this aspect though.
6) I can say that I have now tried preparing several of these recipes and they are easy for a novice like me to follow and skillfully prepare with great tasting results.

The Mediterranean diet and the Dash Diet tied for first place, healthiest diet, on the U.S. News and World Report web site. I am thoroughly on board with this way of life, consuming lots of fresh vegetables and fruits along with a reduction in meat products. This is a workable way to live. Not only is it healthier, but I feel better when I consume foods like that.
This cookbook has a whopping 300 recipes. Each recipe has nutrition information, which in my opinion is a big bonus, as too many cookbooks don't offer that. The instant pot is an incredibly versatile way to cook; dinner can be made in no time. Since I am a working mom, I thoroughly appreciate spending less time in the kitchen.
The recipes are for things I enjoy eating; there is an incredible variety. If you plan to purchase only one cookbook for your instant--this is the one you need.
Excellent cookbook, great easy to follow recipes which have greatly expanded my instant pot repertoire.

One of my resolutions this year is to make more use of my Instant Pot. Combine that with recipes that align with the #1 diet for a healthy life to make this cookbook high interest to me. Before the recipes begin, the author gives a nice overview on the Mediterranean diet basics as well as a great primer on the Instant Pot functions. The recipes are preceded with a description of the dish, background of the recipe and/or ingredients and what you may want to serve it aside. Recipes are mostly plant based. There are entire sections dedicated to meat, poultry, etc., however, veggies and whole grains are the stars here, too. If you have a sweet tooth, there is a section for desserts, boasting whole grains and fruit. Chocolate rice pudding is high on my list to try!
