I think this is the best Instant Pot cookbook I have seen! I want to make all the recipes. The recipes are thoughtfully written out and five plenty of instruction. O see this being a staple resource in any household with an IP!
The Mediterranean diet is arguably one of the best- if not the actual best- diets in existence. There is a huge focus on vegetables and fresh ingredients. The best thing about the Mediterranean diet is the delicious meals you can make and still eat in a way that is good for your body. If you have been around this blog for a while you will know I adore my Instant Pot. It is one of my most frequently used kitchen tools and I have several cookbooks devoted to this awesome little cooker. I book marked so many recipes in this book that I absolutely can not wait to try. The dessert section at the end made me happy because there were several delicious sounding desserts that were fruit based and used natural sweeteners to make them more healthy. There are so many recipes included here that there is definitely something for everyone! My absolute favorite find in this book is a Greek lemon chicken soup called Avgolemono. My local Greek restaurant serves this soup and it is one of my favorite things on the menu and I am excited to be able to make it at home! I recommend this book to anyone who enjoys eating healthy!

In this great Instant pot cookbook so many. Mediterranean favorites are ready so much faster with the same great taste. In pretty much and cooking prep work is essential. Once you’ve shopped and verified you have everything in your pantry to start cooking this cookbook couldn’t be easier to fallow. Each recipe gives very specific instructions on how to use your insta pot and when fallowed correctly it comes out beautifully and delicious. I highly recommend this book the author did a great job.

This cookbook is fantastic for a health-focused, busy, driven mama! For someone that works outside the home, and strives for healthy meals, I knew this was a book I wanted to review.
The book has been divided like a typical cookbook, meals and types. I was really excited to see an easy to make recipe for Hummus! I also really enjoyed that there's a salsa recipe, since we grow a garden and will be able to easily make it in the IP.
The only negative is I wish there was a master table of contents at the beginning of the ebook, so that it is easier to navigate to various chapters/sections within the book. Hopefully this can be modified before final printing.
I feel as if this is the best IP focused Mediterranean cookbook I've found!

This book is crammed full of tantalising dishes that will definitely get your taste buds dancing!
The hardest part of this book is the prep, but once youve gotten that down pat the rest is pretty straight forward and breezy.
There are so many dishes in this book I just dont know what to try first. Definitely a book to have in your collection!
I have obviously not tried all the recipes because who has time for that! They are also not all to my taste, but the ones I tried were yummylicious!
The Lemon and Garlic Rice Pilaf was so good. I had it with grilled fish.
I also like some of the additional info eg about the Pasta Primavera. Who would have thought this dish originated in the US and Canada. It sounds so Italian!
The Heirloom Tomato Basil Soup was also really good and I loved the Burgundy Mushrooms. I will be making this a lot.
This instant pot Mediterranean cookbook is fantastic. It has a huge variety of recipes to choose from and they are delicious. This is one of the best Mediterranean cookbooks I’ve ever seen add in the convenient instant pot and it’s a home run. I love Mediterranean food so this will beat go too find for years to come. The Everything Mediterranean Instant Pot Cookbook is the exact type of cookbook I've been looking for! This book is perfect for anyone looking to eat healthy using whole foods while taking advantage of their Instant Pot. The recipes are broken down by food type. I was extremely impressed by the Grains section of the cookbook which has recipes for rice, farro, barley, quinoa and more. The 300 recipes are incredible and relatively easy to make. It will become a much used book in the kitchen!

This book helps you to cook healthy, delicious meals that don't take forever to make! In this book the Mediterranean diet and the Instant are joined to help you eat well and save time. The author takes you through the basics of the Mediterranean diet, the basics of the Instant pot, and maintenance and cleaning.in the first chapter. Then the book gets into the recipes. There are breakfast recipes, dips and appetizers, rice, grains, beans, lentils, seafood, pork, lamb, beef, fruit and deserts. The last part of the book has a section on measurements and conversions. Everyone will find something that they like in this book!

I really loved the variety of recipes in this cookbook! Definitely something for every taste. The cookbook is divided into many chapters including, breakfast, grains, rice, chicken, dessert and more which makes it easy to find a recipe based on need and ingredients. The recipes all seemed simple and the ingredients easily sourced so this would be perfect for anyone hoping to get more use out of their Instant Pot!
I chose to read this book as I live on the Mediterranean coast, and despite not having the actual Instant Pot multi-cooker with which this book is associated, the recipes were too tempting to resist!
Having moved here almost two decades ago, I found (happily) that there were very few fast foods places to eat, and local dishes were readily available, using fresh, healthy ingredients. Times have changed, and the burger restaurants have infiltrated the region, but not at the expense of local, family eateries offering proper food with typical Mediterranean panache.
Admittedly, at home, my go-to dishes stem back to food I ate back in the UK; you cannot deny the power of nostalgia. Eating out, however, is a different story, and I will choose a local, traditional Mediterranean dish over junk food any day.
I am glad to say I found plenty of inspiration in this book to expand my own repertoire and boost my diet with the Mediterranean vibe - lots of fish, olive oil, vegetables and herbs. Some of my favourites, and ones that I'm dying to try myself are:
Tomato & Asparagus Frittata
Baba Ghanoush (aubergine dip)
Skordalia (garlic dip)
Basil Cod Kebabs
Rosemary Salmon
Lemony Chicken Soup
Risotto Primavera
I could go on, there's so many to choose from!
Is your mouth watering? And none of these are difficult ... Easy to find ingredients. Simple to make. Tasty and healthy!
There's a recipe for dandelion greens that caught my eye, but having dogs, I know that the dandelions are "watered" way too frequently for me to ever be tempted to eat them!
The book is obviously intended for the US market, so terminology is occasionally "iffy" - I mean, what on earth is a SLIDER?, but in general the recipes are easy to follow and well laid out. The only downside is reading this on a Kindle doesn't lend itself to easy navigation. My copy is an uncorrected proof, and there's no links on the TOC, so that makes for a lot of scrolling through (I've bookmarked my favourites ;) hopefully that'll work) That said, the final version will no doubt include that option, although I think a print copy would be well worth the cost, if just for the scrummy pictures.

Up until I purchased my first Instant Pot, my experience with pressure cooking was confined to canning fruits and vegetables. My daughters were enjoying a whole new approach to feeding their families with the Instant Pot. We got to experience that excitement while our kitchen was being remodeled and they each treated us to home cooked dinners. It was amazing to see how this amazing appliance became an integral part of their kitchens. Needless to say, we purchased an Instant Pot too.
The Everything Mediterranean Instant Pot Cookbook by Kelly Jaggers is chock full of recipes that will please anyone who is striving to live the Mediterranean way, employing this game changing appliance. The recipes we have cooked using this cookbook have been easy to put together quickly, and resulted in tasty meals we're planning to fix again. Our favorites so far include Stuffed Acorn Squash, Almond Date Oatmeal, Creamy Thyme Polenta and Chicken Breasts stuffed with Feta and Spinach.
I am impressed with this cookbook. Like most cooks who are learning to cook with a a new appliance I was searching online for recipes and tips to make the most of my Instant Pot. This cookbook is good for beginners as it includes very good how-to information to start cooking right away. Within a few months of getting our 6 quart pot I ordered a 3 quart (mini) Instant Pot. I have used both pot sizes in preparing the recipes, sometimes simultaneously. This is a book I will use again and again because I like it that much.

I have only made a few recipes with this book; however, I give Kelly Jaggers five-stars just for her Balsamic Chicken Tights with Tomato and Basil recipe! That dish is GOLD! My family and I have used it for chicken thighs, roast chicken, and will try it in the crock-pot with chicken breasts soon! DELICIOUS!
As a lover of the instant pot, this has been by far my favorite cookbook. The recipes are varied, and easy to follow, as well as inspirational.
My husband has high blood pressure and we've had to change the way we cook at our house. Time and again we've heard about the mediterranean diet. This book was a great introduction to this and a big bonus was that it was based around using the Instant Pot. With two kids, evenings can be hectic without a lot of time to fix dinner. This has been such a relief in that I have healthy recipes to pull from that don't require tons of cooking time.
I am excited to see the final version of this book. The recipes look terrific and the presentation and descriptions were mouth-watering. I am not sure what to try first. So many dishes looked tempting and I am certainly excited to give the Instant Pot a try for these meals. I have read through several Mediterranean Cookbooks, some of which were for the Instant Pot, but this one deserves high praise.
There are several things that it does well for me as a lover of cookbooks in general.
1) Recipes! Wide variety with easy to follow instructions (including conversions for wherever in the world you are) and good pairings to make a complete meal.
2) Wide variety of selections with everything from breakfast ideas, oatmeal ideas and frittata that doesn't need micromanaging to appetizers that I often eat as a smaller meal, like varieties of make-at-home hummus and others. Then full meals and sides, such as chicken, rice, soups, pasta, meats and vegetarian options. There are desserts as well. Many of these were appealing and appetizing. I started to get bogged down in perusing this cookbook because my handwritten grocery list was consuming my time!
3) The aside commentary was a terrific addition. This included "tips" like "recipe versatility" suggestions or substitution tips and then how to properly cook the recipe with the sub. So, for instance, if subbing certain tougher, longer cooking veggies, the tip to dice into smaller sizes compared with the quicker cooking veggies in the recipe is very helpful to a home cook like myself. Another great tip was the "Quick Soaked Beans" to get your dried beans (way cheaper) ready for use faster than an overnight soak.
4) The history of various recipes or ingredients used certain recipes and either how it became associated or known as Mediterranean or pointing out if it actually originated elsewhere.I love this in a great cookbook. It really adds to the joy of going through one. You get a sense for the time, the culture and the atmosphere, as well as why the ingredients are what they are.
5) The photography. The photos appeared to be really well done and are always a huge part of a successful cookbook. I think the final version will be the best test of this aspect though.
6) I can say that I have now tried preparing several of these recipes and they are easy for a novice like me to follow and skillfully prepare with great tasting results.

The Mediterranean diet and the Dash Diet tied for first place, healthiest diet, on the U.S. News and World Report web site. I am thoroughly on board with this way of life, consuming lots of fresh vegetables and fruits along with a reduction in meat products. This is a workable way to live. Not only is it healthier, but I feel better when I consume foods like that.
This cookbook has a whopping 300 recipes. Each recipe has nutrition information, which in my opinion is a big bonus, as too many cookbooks don't offer that. The instant pot is an incredibly versatile way to cook; dinner can be made in no time. Since I am a working mom, I thoroughly appreciate spending less time in the kitchen.
The recipes are for things I enjoy eating; there is an incredible variety. If you plan to purchase only one cookbook for your instant--this is the one you need.
One of my resolutions this year is to make more use of my Instant Pot. Combine that with recipes that align with the #1 diet for a healthy life to make this cookbook high interest to me. Before the recipes begin, the author gives a nice overview on the Mediterranean diet basics as well as a great primer on the Instant Pot functions. The recipes are preceded with a description of the dish, background of the recipe and/or ingredients and what you may want to serve it aside. Recipes are mostly plant based. There are entire sections dedicated to meat, poultry, etc., however, veggies and whole grains are the stars here, too. If you have a sweet tooth, there is a section for desserts, boasting whole grains and fruit. Chocolate rice pudding is high on my list to try! I absolutely love this cookbook! My favorite recipes are healthy, full of plant foods and easy to prepare - this book has 300 such recipes! I love the simplicity, ease and speed of my Instant Pot and always look forward to recipes that use this appliance. I look forward to making so many of these recipes, especially the bean dishes, soups and desserts. I highly recommend this book - especially for those looking to eat healthier, save money on their food budget, and for meal prep.

Formatting for the eARC make this a little difficult to follow recipes, so I didn't make any. That being said, I liked that it had some colored pictures even in eformat. I looks like it will also be giving the nutritional values of the recipes (fat/protein etc.). I also liked how the chapters were broken down - breakfast/dips/rice/grains
/pasta/beans/lentils/vegetables/seafood/fish/poultry/pork, lamb, beef/fruits & desserts. Also, the ingredients seemed to be ones that would be easily bought. This will be one I recommend for the library and will also probably be the one that I buy for myself.

This book is loaded with wonderful and easy t9 make Mediterranean recipes for your Instant Pot. I usually like more pictures in a good recipe book, but this is still such a great resource. It is full of tips and tricks!

The Everything Mediterranean Instant Pot Cookbook should be on everyone’s bookshelf. There is information at the beginning of the book explaining the benefits of the foods in the Mediterranean diet. Each recipe is simple to follow and does not require an extended list of ingredients. This would be a great book for someone who is learning to cook but also for anyone looking to simplify their week night meal routine. I am looking forward to making many of the recipes. I’ve already made the cardamom and apple steel cut oats twice. The oats were so creamy without any dairy added. I loved learning about and adding a new spice to my cooking!

THE EVERYTHING MEDITERRANEAN INSTANT POT COOKBOOK by Kelly Jaggers begins with an explanation of the Mediterranean diet and a guide to cooking in an Instant Pot. It contains 300 recipes for healthy meals that can be prepared in your Instant Pot. The chapters include recipes for breakfast, dips/appetizers, rice, grains, pasta, beans, lentils, vegetables, seafood, poultry, pork/lamb/beef, and fruits/desserts. Each recipe gives nutritional information broken down by serving. The instructions are clear and straightforward, so that even someone new to IP cooking can be successful.
I am enjoying this book because it combines my love of IP cooking with recipes that fit the Mediterranean diet. I'm not on a diet, but enjoy healthy eating and the tastes of the Mediterranean. If you enjoy the same things, give this cookbook a try.

This is definitely one of the best cookbooks I have read for the Instant Pot! I want to try so many recipes in this book and as a vegetarian it is nice to come across a cookbook that isn't just ingredient substitutions to make them vegetarian but the dishes that are made the way they are meant to be made!
