Loved this book. So cool to get a backstage look at any industry, but especially restaurants, and especially in Paris. What a brutal lifestyle, but a wonderful book.
There is always a danger, when writing about Paris, of slipping into cliché. I worried at first that 'A Waiter in Paris' would suffer this fate but was glad to be proven wrong. Chisholm's genuine experience in a Paris restaurant gives him an excellent view of the inner workings and the way in which poorly paid workers, especially the unseen immigrants, work to the point of near exhaustion for the pleasure of complacent diners. Yet there is still somehow a touch of romance here, a sense of camaraderie and a pride in profession. Many books continue to be written about the city but this one offers an inside look that makes it stand out.
