What a marvelous cookbook! The recipes are well laid out and easy to follow, there are full color pictures for each recipe, and there are variations for multiple types of diets. Overgaard did an superb job at showing the versatility of æbleskiver.
Aebleskiver contains a collection of recipes for this traditional Danish pancake. From classic sweet pairings to creative savory favors, this has 70 unique recipes with aebleskiver as the centerpiece.
A couple of years ago my husband and I purchased an aebleskiver pan as an impulse buy. We have had so much fun trying to figure out how to make these little pancakes of yum ever since. The problem was, there wasn't a lot of recipe books out there for us to browse and work from. So, my excitement when I saw this cookbook is not an understatement!
This book offers a great introduction for the pans and various tools you will need to start your journey From there, you will find multiple easy to follow recipes....from basic to sweet, to savory to more fancy recipes. One of the best parts? The pictures! I always say the sign of a goodcookbook is if there is good photography and this book doesn't disappoint. I also appreciated the dietary restriction sections.
Great book and highly recommended!
This cookbook is a delight! With sweet selections such as Chocolate Truffle Aebleskiver and savory choices such as Cheddar and Chive Aebleskiver, there is something in here for everyone. One of the things that is most appealing about this book is the gorgeous pictures that accompany each recipe. I believe I have convinced myself to try Quail Egg Aebleskiver- they look scrumptious.
Thank you to NetGalley and The Collective Book Studio for the advance copy. All thoughts are my own.
Run to amazon and buy this book AND an aebleskiver pan immediately! Surprisingly easy to make and yummy to eat. There’s so many recipes and different ways to eat these balls of deliciousness.
Aebleskiver are spherical doughballs created by pushing and jiggling batter in a semi-spherical cavity in a special pan. If you don't want to buy a pan and don't want to learn how to push and jiggle, then you can't make aebleskiver. I'm not interested in that. I could see the book being used by a caterer, provided the aebleskiver can be made at speed, but otherwise it's a book for someone who has a special interest.
Nevertheless, if somehow you come across this book, take the time to look at the flavor and color combinations that Ms. Overgaard presents. She is an artist and creative designer for Williams Sonoma and, as we'd expect, she has a flair for presentation. Perhaps some of the recipes could be converted into very interesting and beautiful dollar pancakes.
Update: I just saw an iron Aebleskiver pan recommended for making gulab jamun and similar snacks that would normally be deep fried.
Aebleskiver....
Someone wrote a whole cookbook on aebleskivers.
Yeah. I'm down for these sweet, little pancake treats.
Though in this cookbook, they are both sweet and savory, little round pancakes.
Recommend.
I was so excited to see this book not long after returning from a trip to Denmark. Overgaard focuses on a single type of food, Aebleskiver, like pancakes, and the result is mouthwatering.
She is so methodical and thoughtful in her recipe development - there are many options for those with dietary restrictions or preferences. I loved the balance of sweet and savory, and the different sides she developed to complement in combination. There are so many varieties that will make this cookbook useful across seasons - making a comfort food simple or sophisticated... depending on what you are in the mood to make.
The photography is on point and brings the recipes to life!
Thank you to Netgalley and to The Collective Book Studio for an ARC.
Aebleskiver: A New Take on Traditional Danish Pancakes focuses on all things Danish Pancakes. There are basic, sweet, and savory aebleskiver plus the dipping sauces and glazes that accompany.
Each recipe has dietary restrictions, ingredients, directions, and a photo of the dish. There are so many great recipes and so many different options that there is something for everyone’s preferences.
Thank you to NetGalley for providing me with an ARC in exchange for an honest review.
This is a pretty phenomenal cookbook. I have a cast iron æbleskiver pan and have made gluten free æbleskivers for my family in the past. They are really fun (we especially like them stuffed with apples) and worth the work. This book goes over the top with so many recipes for sweet and savory æbleskivers. There are gorgeous photos for every recipe and recipes for all the glazes, dipping sauces, dressings, etc along with it. There are recipes for gluten free, vegan, keto and yeast æbleskivers too, which you can use in many of the recipes.
Ordinarily I would deduct a star for the lack of nutritional information but the book is so over the top beautiful, creative and fun that I had to give it five stars.
I read a temporary digital copy of this book for review.
I saw the cover of this book and couldn't resist! And yes, the pictures inside are just as mouthwateringly gorgeous as the cover. Everything looks so elegant and delectable.
And the recipes! Oh my. First, let me say that I was so very surprised by all the variations Overgaard offers readers. Of course there's the classic, but there are also gluten-free, vegan, paleo, keto, and yeast options, making this book widely adaptable to most dietary needs.
But where I got most excited was with the flavored options. I am not even kidding when I say that every one of them made me giddy with delight.
I dare say that this is a dangerous book for me. Because, in truth, I would gladly make and eat anything/everything in this book.
This book is a foodie's dream!
Pim Pauline Overgaard’s Æbleskiver: A New Take on Traditional Danish Pancakes is a gourmet take on a traditional Danish treat closely resembling American donut holes but cooked atop the stove in a cast iron pan containing several circular indentations. As a high school exchange student many years ago in Denmark, I was eager to receive and advance reader egalley of this new cookbook.
Beautifully illustrated with a photo of each completed recipe, Overgaard’s book is conveniently organized with a helpful introduction, a short section on the type pan and tools needed, and useful instructions for creating the “perfect sphere.” The basic recipe section includes the traditional Danish recipe, followed by vegetarian, vegan, and gluten-free options as well as an option made with yeast not used in the traditional recipes. Following those basic recipes, the majority of the book is divided into Sweet and Savory sections, each containing dozens of recipes to suit any taste.
For affluent cooks wishing to impress with unusual ingredients and a large variety of accompaniments, this cookbook could be a treasure. It includes sweet recipes using fillings such as roasted apricots, mascarpone and peach, coconut and pineapple, citrus and poppyseed, and some less readily available ingredients. such kumquats, passionfruit, hibiscus, and edible gold leaf. Most recipes include sauces, glazes, or more elaborate accompaniments such as the recipe for Coconut Pecan Aebleskiver with cream cheese custard and caramel drizzle. Savory recipes offer similar variety ranging from relatively simple and inexpensive Sweet Pea Aebleskiver with Fried Garlic Chips and pea shoots, leaves, and flowers for garnish to more time- consuming and costly recipes such as Purple Sweet Potato Aebleskiver with Parmesan Ice Cream and Parmesan Chips with micro green garnish, Cassava (Yucca Root) Aebleskiver stuffed with salmon, spinach, and Thyme, Buckwheat aebleskiver with Crème Fraiche and Cavier, Charcoal and Octopus Aebleskiver with Beet-Pickled Onions and Saffron Aioli with edible flower garnish, and Quail Egg Aebleskiver with Turmeric and Amaranth with Amaranth leaf garnish.
These might be the perfect and utterly delicious recipes to impress quests or prepare a gourmet family meal. The photos are mouthwatering. However, for working moms such as I was for many years, for a retiree who does little entertaining,, or for anyone with limited time and tight food budget, I recommend sticking to a traditional recipe with simple fillings such as jams or Nutella and maybe adding a light dusting of powdered sugar.
Thanks to NetGalley and the Collective Book Studio for and advance reader copy of what may be the right book for some cooks..
I absolutely love international cookbooks, I've always found them to be an insightful look into other cultures and incredibly education. That being said this one so simple and yet tells so much! It centers around one type of food but there are so many variations that it feels endless. I love that there is an option for everyone in the base aebleskiver; regular, gluten-free, vegan, and more! The options are endless with so many sweet and savory recipes. I would recommend this to anyone looking to try something new, because I know everyone will love this!
I first came across poffertjes many years ago on a trip to Amsterdam and enjoyed the cute little sugar-dusted pancake balls so much that the first purchase that I made upon returning home was an aebleskiver pan. I've made many sweet and savory pancakes before but I struggled with getting these perfectly round, gave up and pushed the pan to the back of the closet. But this book has step by step illustrated instructions for forming the perfect spheres. There are several basic recipes at the beginning, allowing for special diets like glutten-free and vegan and even a recipe for a yeasted version. There is a flavoring chart as well, to experiment if you want to go beyond the multitude of visually striking sweet and savory combinations presented in the book. There are some familiar flavor combos like pineapple and coconut and some flavors that I would like to try. Recipes indicate yield and special diet, ingredients, instructions and are all accompanied by beautiful photos of the finished dish. The recipes go beyond just the pancake batter, adding accompaniments like ice creams and sauces and the photos provide excellent presentation ideas to impress even the pickiest company. Several of the ideas struck my fancy and I'll be digging out my aebleskiver pan to try them out soon.
I received access to this ebook thru NetGalley (for which I want to thank NetGalley and the publisher, The Collective Book Studio) for an honest review. The opinion expressed here is my own.
My husband is the aebleskiver cook in the house, and he has used the same cookbook for years to make these treats for the family. I had never thought to look to any other cookbooks for this, because we have a few go tos and I pretty much assumed that we had the variety we needed and were done.. After picking up this book, I realized that there was an untapped wealth of options for this breakfast staple, including branching out to non-breakfast options.
The receipes are easy to follow, and, for the most part, easy to accomplish. The fact that this book starts with some of the basics is great, because the hardest thing about making aebleskivers is the finicky way that you have to flip them in the pan. The book starts with the basics, including the technique of using a skewer to flip and turn the aebleskivers in the pan, something that is probably the most finicky part of cooking these.
There is something for everyone, and while the basic aebleskiver recipe is not much different from recipe to recipe even in this book, there is enough variety in stuffing, toppings, dips and the like to give options for any meal. And there are definitely some different basic recipes including ones that use cornmeal and other types of flour. I am very excited to try the hush puppy recipe, but so far, everything we tested worked out really well and was very tasty.
The only thing that prevents me from giving this a 5 star is the fact that some of the ingredients are a little bit more challenging to get or not staples. I like a recipe book that I can pick up and, without having to stock things I will only use once or twice, can make most of the things in it.
Each recipe includes an ingredient list, directions, and a photo. I appreciate that the recipes include a photo because you can see what the final dish looks like and it helps you decide if you would like to make it. The recipes also include dietary restrictions such as if the recipe is gluten-free, nut-free, vegetarian, and vegan, which provides health details becoming more and more important.
Thank you NetGalley, the author and publisher.
What is there not to love about this book? Seriously, it is amazing!
Okay I might be partial because a few years ago while learning more about my Danish heritage I discovered Aebleskivers and this book has just stepped up my love for them (if that is even possible). Okay let me start of with one thing I adore about this book, the photographs. There is a photo for every single recipe, and they are beautiful well thought put photos! This is huge to me, way to many recipe books skimp on the pictures and this one did not at all.
Each recipe is displayed nicely with clear and easy to follow directions. They are also displayed on the pages nicely. I love that the book didn't just start at recipes. She spend some time telling us a little about herself, teaching us the important info about making a good aeblesiver and the tools that we will need to do so. The pictures tied into this again, making an aebleskiver is an art and she has a series of images that shows us how to do that! This is huge for anyone who is new to this! She even has the basic recipe to make a classic, gluten free, vegan, paleo, keto & yeast version!
Okay now the recipes themselves, there are so many in here. There is something for everyone from sweets to savory versions. I can't wait to try more of her amazing recipes.
Holy visuals! This book is gorgeous! The pictures really help you understand the recipes since most of these were brand new to me. I really enjoyed learning a new cuisine. My family liked the dishes I have made so far so I think that goes to show that this cookbook is a winner! I would love to have this in the physical version.
As an American expat living in Denmark, I am quite familiar with æbleskiver and even made them myself several times. I was intrigued by this cookbook because I wanted to know other ways to make æbleskiver. The cookbook starts with an introduction including the pans and tools you will need and how to make the æbleskiver in the pan. Next are the recipes for basic, sweet, and savory æbleskiver. Each recipe includes an ingredient list, directions, and a photo. I appreciate that the recipes include a photo because you can see what the final dish looks like and it helps you decide if you would like to make it. The recipes also include dietary restrictions such as if the recipe is gluten-free, nut-free, vegetarian, and vegan, which I appreciate. It is a great cookbook, and I am definitely curious to try the Rhubarb Crumble Æbleskiver, Wild Strawberry Æbleskiver, Cheddar and Chive Æbleskiver, and Hush Puppy Æbleskiver recipes.
Such a great and unique cookbook. The recipes are easy to follow and they pictures are gorgeous! Ive had and aebelskiver pan forever and this book finally made me break it out. It is a bit of a learning curve to figure out how to make them into perfect spears but even if they aren't pretty the flavors are amazing. I will definitely be purchasing this for my shelf
