I loved this one! The illustrations were so beautiful and I loved the handy tips that were mentioned along with various options. There was something for everyone with dozens of flavors and varieties with clear instructions. It also gave a lot of room for creativity which I know some folks like to have but also classic instructions that turn out well.
I tried the chocolate truffle one (a festival is actually going on at the moment where these are quite popular (which actually prompted me to try this book) so I already had the batter ready) and it came out great! It's actually quite a simply but tasty and filling snack or breakfast we can customize to our liking. Adding some berries and nuts complete the dish.

This was so interesting! Even though this is based around one essential dish, a Danish pancake (Aebleskiver), there's like a hundred recipes in here that are essentially all different meals! I think the chart in the beginning is great too because once someone makes all the recipes with the book they want to, or for someone who likes to experiment with recipes, they can create their own Aebleskiver recipes! Stunning photography, and I thought all of the placing were beautiful and in theme with the recipe!
Holy visuals! This book is gorgeous! The pictures really help you understand the recipes since most of these were brand new to me. I really enjoyed learning a new cuisine. My family liked the dishes I have made so far so I think that goes to show that this cookbook is a winner! I would love to have this in the physical version.
As an American expat living in Denmark, I am quite familiar with æbleskiver and even made them myself several times. I was intrigued by this cookbook because I wanted to know other ways to make æbleskiver. The cookbook starts with an introduction including the pans and tools you will need and how to make the æbleskiver in the pan. Next are the recipes for basic, sweet, and savory æbleskiver. Each recipe includes an ingredient list, directions, and a photo. I appreciate that the recipes include a photo because you can see what the final dish looks like and it helps you decide if you would like to make it. The recipes also include dietary restrictions such as if the recipe is gluten-free, nut-free, vegetarian, and vegan, which I appreciate. It is a great cookbook, and I am definitely curious to try the Rhubarb Crumble Æbleskiver, Wild Strawberry Æbleskiver, Cheddar and Chive Æbleskiver, and Hush Puppy Æbleskiver recipes.
Such a great and unique cookbook. The recipes are easy to follow and they pictures are gorgeous! Ive had and aebelskiver pan forever and this book finally made me break it out. It is a bit of a learning curve to figure out how to make them into perfect spears but even if they aren't pretty the flavors are amazing. I will definitely be purchasing this for my shelf
What is there not to love about this book? Seriously, it is amazing!
Okay I might be partial because a few years ago while learning more about my Danish heritage I discovered Aebleskivers and this book has just stepped up my love for them (if that is even possible). Okay let me start of with one thing I adore about this book, the photographs. There is a photo for every single recipe, and they are beautiful well thought put photos! This is huge to me, way to many recipe books skimp on the pictures and this one did not at all.
Each recipe is displayed nicely with clear and easy to follow directions. They are also displayed on the pages nicely. I love that the book didn't just start at recipes. She spend some time telling us a little about herself, teaching us the important info about making a good aeblesiver and the tools that we will need to do so. The pictures tied into this again, making an aebleskiver is an art and she has a series of images that shows us how to do that! This is huge for anyone who is new to this! She even has the basic recipe to make a classic, gluten free, vegan, paleo, keto & yeast version!
Okay now the recipes themselves, there are so many in here. There is something for everyone from sweets to savory versions. I can't wait to try more of her amazing recipes.
This is a pretty phenomenal cookbook. I have a cast iron æbleskiver pan and have made gluten free æbleskivers for my family in the past. They are really fun (we especially like them stuffed with apples) and worth the work. This book goes over the top with so many recipes for sweet and savory æbleskivers. There are gorgeous photos for every recipe and recipes for all the glazes, dipping sauces, dressings, etc along with it. There are recipes for gluten free, vegan, keto and yeast æbleskivers too, which you can use in many of the recipes.
Ordinarily I would deduct a star for the lack of nutritional information but the book is so over the top beautiful, creative and fun that I had to give it five stars.

I saw the cover of this book and couldn't resist! And yes, the pictures inside are just as mouthwateringly gorgeous as the cover. Everything looks so elegant and delectable.
And the recipes! Oh my. First, let me say that I was so very surprised by all the variations Overgaard offers readers. Of course there's the classic, but there are also gluten-free, vegan, paleo, keto, and yeast options, making this book widely adaptable to most dietary needs.
But where I got most excited was with the flavored options. I am not even kidding when I say that every one of them made me giddy with delight.
I dare say that this is a dangerous book for me. Because, in truth, I would gladly make and eat anything/everything in this book.

I absolutely love international cookbooks, I've always found them to be an insightful look into other cultures and incredibly education. That being said this one so simple and yet tells so much! It centers around one type of food but there are so many variations that it feels endless. I love that there is an option for everyone in the base aebleskiver; regular, gluten-free, vegan, and more! The options are endless with so many sweet and savory recipes. I would recommend this to anyone looking to try something new, because I know everyone will love this!
Pim Pauline Overgaard’s Æbleskiver: A New Take on Traditional Danish Pancakes is a gourmet take on a traditional Danish treat closely resembling American donut holes but cooked atop the stove in a cast iron pan containing several circular indentations. As a high school exchange student many years ago in Denmark, I was eager to receive and advance reader egalley of this new cookbook.
Beautifully illustrated with a photo of each completed recipe, Overgaard’s book is conveniently organized with a helpful introduction, a short section on the type pan and tools needed, and useful instructions for creating the “perfect sphere.” The basic recipe section includes the traditional Danish recipe, followed by vegetarian, vegan, and gluten-free options as well as an option made with yeast not used in the traditional recipes. Following those basic recipes, the majority of the book is divided into Sweet and Savory sections, each containing dozens of recipes to suit any taste.
For affluent cooks wishing to impress with unusual ingredients and a large variety of accompaniments, this cookbook could be a treasure. It includes sweet recipes using fillings such as roasted apricots, mascarpone and peach, coconut and pineapple, citrus and poppyseed, and some less readily available ingredients. such kumquats, passionfruit, hibiscus, and edible gold leaf. Most recipes include sauces, glazes, or more elaborate accompaniments such as the recipe for Coconut Pecan Aebleskiver with cream cheese custard and caramel drizzle. Savory recipes offer similar variety ranging from relatively simple and inexpensive Sweet Pea Aebleskiver with Fried Garlic Chips and pea shoots, leaves, and flowers for garnish to more time- consuming and costly recipes such as Purple Sweet Potato Aebleskiver with Parmesan Ice Cream and Parmesan Chips with micro green garnish, Cassava (Yucca Root) Aebleskiver stuffed with salmon, spinach, and Thyme, Buckwheat aebleskiver with Crème Fraiche and Cavier, Charcoal and Octopus Aebleskiver with Beet-Pickled Onions and Saffron Aioli with edible flower garnish, and Quail Egg Aebleskiver with Turmeric and Amaranth with Amaranth leaf garnish.
These might be the perfect and utterly delicious recipes to impress quests or prepare a gourmet family meal. The photos are mouthwatering. However, for working moms such as I was for many years, for a retiree who does little entertaining,, or for anyone with limited time and tight food budget, I recommend sticking to a traditional recipe with simple fillings such as jams or Nutella and maybe adding a light dusting of powdered sugar.

I was so excited to see this book not long after returning from a trip to Denmark. Overgaard focuses on a single type of food, Aebleskiver, like pancakes, and the result is mouthwatering.
She is so methodical and thoughtful in her recipe development - there are many options for those with dietary restrictions or preferences. I loved the balance of sweet and savory, and the different sides she developed to complement in combination. There are so many varieties that will make this cookbook useful across seasons - making a comfort food simple or sophisticated... depending on what you are in the mood to make.
The photography is on point and brings the recipes to life!
