Super Easy Tortilla and Taco Cookbook
Dotty Griffith
Author Dotty Griffith has divided her book into 2 parts. Part 1 is About Tortillas and How to Make Them. She begins by offering a bit of history surrounding the tortillas. Not all tortillas are made from corn, when Jews settled in northern Mexico they made tortillas from flour. Corn was not considered kosher. I must admit I have never eaten a homemade tortilla but I will soon remedy that. To make homemade tortillas you will need a press. The press can be manual or electric. I prefer the taste of corn tortillas and that will be my focus in this review. Step 1. Make Masa and from golf ball-size rounds. 2. Preheat the griddle. 3. Press a tortilla. 4. Cook the tortilla on a hot flat surface. 5. Keep warm in a tortilla warmer. 6. Repeat.
Part 2 of the book is “Now You’ve Got Tortillas: Let’s Roll”. Author Dotty Griffith shares recipes for filling the tortillas. Ground Beef Filling, Beef Brisket Filling and Broth, Fajita Beef or Chicken, Refried Beans, Grilled Vegetables, Sour Cream Enchilada Sauce, Queso, Pico de Gallo are just a few or her filling recipes. I love Nacho’s and look forward to trying her recipe for Loaded Nachos. There are recipes for Tacos, More Tacos, Breakfast Tacos, plus Burritos, Chimichangas, and Gorditas. I am very fond of Beef or Cheese Enchiladas the recipe in “Super Easy Tortilla and Taco Cookbook” sounds delicious. There are several recipes for seafood tacos and enchiladas. The author has also added many dessert recipes.
There is an index at the end of this book.
I want to thank Netgalley and the author for gifting me the ebook. Who doesn't love Mexican food? These recipes seem pretty easy and not a lot of fuss and time consuming. I love making my own tortilla's so I cannot wait to give this a go!
I received an advanced review copy of this book in exchange for an honest review
I really like to cook mexican food (or tex-mex) so it is refreshing to read the ideas that the book offers so you have more options when you're going to cook
I love tortillas but I have never made them from scratch so the recipes that book has seem easy to follow and delicious.
Also I love that the book offers so much detail in the recipe so people that make them won't be wondering if what they are doing is the right way, I really liked that offers gluten free alternatives
As a person obsessed with everything tacos this book is all I need and more I love it so much. I’ve already made a few things from the book and they haven’t disappointed me at all. I also love the easy instructions and how it’s great for making recipes in bulk as well.
The biggest takeaway from this cookbook is the accessibility for all age ranges. The recipes are simple and easy to follow along. The food options range from fajitas, tacos, tortillas, and EVEN DESSERTS. Very straightforward and cool!!
Having been raised in Southern California Mexican food is my favorite. So this book is perfect for me. It tells you all you need to know about different kinds of tortillas and taco. How to make different sauces, and finally different filling. I love this book.
Okay, who doesn’t love tacos? I know I do, but I also know that when it comes to making them at home, I’m in a rut- making the same basic recipe every time due to lack of creativity or know-how. I’m excited to have this recipe book now to remedy that. It gives a wide variety of options for every taste and skill level- even how to make homemade tortillas if you’re so inclined. And the photos are gorgeous and make me eager to get started.
Thank you Dotty Griffith, Quarto Publishing Group – Harvard Common Press, New Shoe Press, and NetGalley for providing this ARC for review consideration. All opinions expressed are my own.

My husband and I have been loving Mexican food lately so I was so excited to review this cookbook!
It does a great job of explaining the best tortilla press to purchase and why, offers gluten free suggestions; and has some nice history that is concise and interesting! But have no fear, if you’d prefer to buy your tortilla’s instead of making them you will still enjoy this cookbook! There are a ton of recipes for various vegetarian and meat filings, sauces, desserts and more! I cannot wait to make my own salsa and try the grilled fish recipe! The recipes are straightforward and sound delicious!
Thank you to NetGalley and Quarto Publishing Group- Harvard Common Press/New Shoe Press for the digital advanced readers copy!! I received a complimentary copy of this cookbook. This cookbook will be published September 12, 2023! Add it to your holiday wish list!
I was very excited to see this upcoming book, Super Easy Tortilla and Taco Cookbook. We eat a lot of tortillas in our house, and to be able to make my own healthier and natural tortillas thrills me.
One of my fondest memories of a trip to San Diego when I was 15 was visiting a Mission, and watching them make fresh tortillas. They were delicious! So I’m very much looking forward to making the recipes in this cookbook.
The recipes and instructions look very easy to follow. There are recipes for flour (my husband’s preference) and corn tortillas (my preference). And the flavor options! Plus recipes for all the fillings, from fajitas, to tacos, to sauces, to desserts!
There is also a section for making tortillas using a manual press vs. an electric press.
Thank you to NetGalley for letting me read an advanced copy.
More of a tortilla textbook then simple cookbook.
I like this book very much. It's good addition to everyone from Mexican food beginners to someone who is looking for new tortilla ideas.
At the beginning there is in detail overview of everything you need to know about making tortillas and tortilla dishes, from different types of flour, equipment, tips and tricks for all parts of tortilla dish. As someone who loves Mexican food but is not from Americas I never used some of the processes and appliances mentioned such as torrilla press or warmer so it was very useful to learn about it.
That being said the book has somewhat unusual layout so I would definitely recommend starting from the beginning and before jumping up to cooking reading through most of the book.
You will not find one complete recipe for tacos or enchiladas, there are recipes for dough, then for fillings, for sauces etc. and then you have ideas for how to combine them. Because there is some flipping back and forth while choosing what to make I would prefer a phisical copy.
I couldn't praise a cookbook without trying some recipes first. I tried 5 in total: Basic Flour Tortillas (great dough recipe, soo easy to roll out, I tried to freeze the leftovers as per instruction it remains to be seen how they are holding up), Fajita chicken (amazing! the marinade is excellent and can be used for regular barbaque), refried beans (for me there is no tortilla dish without beans and this simple yet tasty recipe is worth repeating), grilled vegetables (basic but you cannot bypass it), Tomato and Green Chile Sauce (ties everything together just perfectly and can be served as taco dip), everything was rolled in some delicious enchiladas.
Big thumbs up for this one!
