Cute, modern and straightforward, with tons of simple recipes.
This recent edition of PETA's Vegan College Cookbook features simple recipes for a wide variety of both healthy and indulgent meals that could be made on a student's budget, with a limited supply of kitchen utensils. The microwave is used in many different ways. Recipes tend to have fewer ingredients, which is always a plus when living in cramped spaces, with limited materials and even more limited time.
To add further insight on the playful and practical tone of the book, in addition to rather traditional cook book chapters like Breakfast, Soups, Salads, Dinners and Desserts, other chapters spotlight inexpensive staples like Ramen and Potatoes. I especially liked the idea of one recipe made from cooked rice, soy sauce and peanut butter. While not perfectly healthy, what an energy boost! That is taken from the spectacular "Spotlight on Peanut Butter" chapter.
Personally, I did not like how often fake meat items were used. That is my opinion, though using items such as fake chicken patties and fake meat crumbles does qualify under the vegan rule book. Just, personally, no thank you. This is because I find the idea of trying to realistically replicate meat, and the usually high sodium content in these products disagreeable.
Because of the wide variety I would recommend this very highly. Even non vegans could grab tons of ideas from the recipes inside. At present, there are cute facts about animals, nothing distressing or disturbing. I wish I had had this book when I was at university!
I was so happy to be chosen for this book , amazing ideas for healthy eating for vegan on a budget .. yes yes it is geared towards college aged kids but I am 38 and loved it. This will be purchased multi times for gift giving and graduations
I received a copy of this in exchange for my honest opinion.
This is a must buy for students and those on a tight budget, even if they aren't vegan as there is such a great variety of recipes which can be made cheaply and using a microwave.
The book itself is well written and fun.
