I highly recommend this book if you are interested in the vegan lifestyle. It is very easy to understand, the recipes are easy and use ingredients that can be found at the grocery store.
Additionally, there are many great recipes that can help you up your veggie count, which is something we can all use help with.
I'm a vegetarian, not a vegan, but I have found that when I want to buy cookbooks, I frequently purchase vegan cookbooks because they tend to have healthier versions of comfort foods that I grew up eating or dishes with unusual combinations that I wouldn't normally think to cook with.
The recipes in Easy. Whole. Vegan. by Melissa King are vegan and gluten-free. They are also slanted toward being healthier versions of familiar recipes so for the ubiquitous vegan lentil shepherd's pie with mashed potatoes, you have a cauliflower mash instead. In other places, sweet potatoes replace white potatoes. (Ever since the low carb craze, the poor white potato has taken a beating; cut it out folks! White potatoes are nutritious! and yummy!--oh, did I type that out loud? Sorry.)
Some of the recipes call for specialized gadgets like an ice cream maker or a vitamix-style blender (for smoothies and juicing) or a spiralizer. Personally, I'm considering the spiralizer as this cookbook has jumped on the current bandwagon of spiralizing veggies like zucchini to use in the place of pasta.
There are some yummy-sounding snack recipes, both sweet and savory, like Maple Vanilla Baked Oatmeal Squares, Chocolate Raspberry Brownies, and Cucumber Dill Humus.
A section on slow cooker recipes includes a variety of soups (Veggie Enchilada, Caramelized Onion to name a couple) as well as curry, chili, and risotto.
One thing I particularly liked is that King offers variations and/or helpful notes for almost every recipe, providing suggestions for alternative ingredients or storage, for instance.
The version I looked at has some photos in place and those looked enticing. I can't wait to see the pictures for some of the other recipes.
Obviously if you're a vegan or vegetarian looking to cut-back on processed-foods or healthier alternatives, this cookbook is for you. Also, I think it would be a great addition for those folks participating in Meatless Mondays as King has suggestions for the picky eaters in your family, whether they're adult or child.

A great vegan cookbook, especially useful for families with younger children, or for the family that wants to start including healthy, meat free dishes in their regular diet.
This is a very cheerful, colorful book, full of bright, tasty looking recipes. King divides the recipes into helpful sections like Quick (30 minutes or less to prepare), Easy (slow cooker), Make Ahead, and Entertain (for entertaining, of course).
The section with slow cooker recipes is packed with many recipes, most of which I will be trying out in my kitchen. The large amount of recipes is a nice change from other non-slow cooker cookbooks that include a handful to be able to feature slow cooking as a section.
Other helpful inclusions are sections with useful advice on how to handle picky eaters and tips to save time and money. A chart clearly explains how to make several vegan egg substitutes; another lists soaking and cooking times for beans.
Overall very cheerfully written, containing many great-looking recipes.
I am not vegan, and don't plan to be, but I do try to eat whole foods as often as possible, so I was attracted to this book's claim to provide quick, whole recipes for busy families. There are lots of great salads and quick-prep sides. While I generally don't eat soy products, there was still a lot in this book to love. And, unlike many vegan cook books I have perused, this book didn't usually fall into the trap of presenting a lot of recipes which are designed to recreate non-vegan foods (though I did see omelettes, made with chickpea flour). This is a plus for me because it signals that the recipes are actually what they claim to be - easy and whole (and vegan). Definitely a great resource for vegans and non-vegans alike.
Wonderful collection of recipes that center around the vegan diet. The book was very helpful in explaining the many benefits of a vegan lifestyle which I really appreciated. I have been trying to convert to veganism for several years now, but have only gone so far as removing all meat and some animal products from my diet and lifestyle. This cookbook has helped further the transition.
Melissa's recipes were quite easy to follow and fun to read. She is very knowledgable in the world of health and veganism.
I made a bunch of the recipes (Of course! How could I not?!) and found four that became my favorites:

My kids especially loved the hummus. It'll stick in our family for a long time ahead!
I’m kind of an accidental vegan. In summary, I’ve been vegetarian since college, and about eight months ago I discovered that I’m also lactose sensitive, hence I now survive on soy milk and substitutes since Wisconsin is the dairy and cheese state and I can only have a limited amount of each without repercussions to my health. Anyways, the area I live isn’t always the most vegan-friendly place and so whenever I find a vegan cookbook that has recipes that don’t require a bunch of specialized ingredients, I grab it! This is a perfect example. The recipes here are straight-forward and well explained and simply put: easy.
Being vegetarian in a very meat-and-potatoes household meant that I learned to cook for myself out of necessity, and in turn introduced my family to vegetarian options, some which they loved, and others not so much… I would not hesitate to make more of these dishes for my omnivorous friends and family. In fact, with the few recipes I have made from this book, more people have asked me for recipes than before. This is encouraging, and the most popular to ask for are slow-cooker recipes and smoothies. That’s not to say that the sweet potato pancakes aren’t delicious and may become a new staple for me, nor that I won’t have a container of the veggie enchilada soup in my fridge and freezer because it’s quick and easy to put into the slow cooker.
Understanding that the book has not yet been published, I was saddened that there weren’t more pictures because the ones that my ebook copy did have were BEAUTIFUL!!! I mean drool worthy that made my hungry, as any good cookbook should. Now I just need more mouths to feed to try out ALL OF THE FOOD!! I got excited…
I would highly recommend this book for anyone (vegan, vegetarian, or neither!) who want healthy, simple recipes that are quick to whip up. The information in the front about basic staples for a vegan-friendly kitchen and pantry were also very useful considering I’m still setting up my own kitchen (gotta love owning a place!) and am still learning what is needed verses not so much.
So I wanted to review this cookbook because I've recently become more interested in the vegan lifestyle and was looking for some recipes that I might be able to try that my family who is isn't interested in it might be able to enjoy as well. I however didn't realize they were also gluten free recipes as I am not gluten free but I realized that I could always make substitutions to the recipes to fit my liking. Some of the recipes actually sounded really delicious like the blueberry chia pudding, and the tomato basil soup as well as the stuffed mushrooms.
Also I found out about how some foods give off a gas which make other produce rippen quicker which I was unaware of so that was a very interesting thing to learn about. I think this is a good cookbook for anyone even if you aren't vegan but interested in it like myself for health reasons or just want a healthy meal that is quick and easy to make for your family or friends. Also if you are just looking to try something you have never tried before then this book is definitely for you.
Brilliant cookbook full of , easy , healthful recipes. I really loved the slow cooker section . I have already made several of the dishes in here twice especially the no bake almond butter cookies. Simple concise instructions and no overly complicated ingredients. Gluten free options,This is a great staple cook book if you are vegan, trying to go vegan or just want to try some delicious recipes
I absolutely loved this book! So many vegan cookbooks are overly complicated or have crazy ingredients, so this book was perfectly what I was looking for. The recipes were straightforward, and I tried a few out and quite enjoyed them!
